1 T. vegetable oil1 c. chopped onion1 c. chopped green pepper1 (28 oz.) can crushed tomatoes or use

fresh cooked tomatoes1 can red kidney beans1 T. chili powder1 (15 oz.) can whole kernel corn

Mix egg, oil and sugars. Mix baking soda into milk. Add flour, salt, nutmeg andmilk. Pour into greased cake pan. Mix topping and put on cake before baking.Bake at 340º for 40 minutes.

Heat oil in 2-3 quart saucepan. Add onion and green pepper. Cook and stir 10 min-utes, until onion is translucent. Stir in remaining ingredients. Bring to a boil.Reduce heat and simmer, stirring occasionally, for 30 minutes to blend flavors.Yield: 8 cups.

Talk about fast,Cindy Erickson is liv-ing it. Last Januaryshe signed on withTank Goodness tostart a cookie deliv-ery business inRochester. InFebruary she and herhusband Rick took amonth long vacationto Texas. During thatmonth Cindy thoughtabout the business.She set some goalsand made plans andpreparations. By May1st she was ready togo. Thank, rather,tank goodness, shetook the time to

recharge her batteries because business is hot.Just like cookies out of the oven.

In 2004 Tank Goodness was born in Minneapolisfrom Dennis and Anne Tank's desire to break fromtheir routine jobs and do something somewhatunconventional with the delicious cookies familyand friends came to expect whenever Anne andDennis showed up. The business began out of aSouth Minneapolis pizzeria kitchen and was soondelivering cookies to customers, both at home andat business.

"That is what makes this more than a cookiedelivery business," says Cindy. "Businesses cansend brochures, messages and business cardsalong with the cookieswhich makes for aninviting introduction tonew client or business.It is a nice way of com-municating a warm,personal message",Cindy smiles.

Personal is what it is all about forCindy. She likes the connectionsshe makes when she delivers thecookies. Cookies she has justbaked and loaded in an insulat-ed container to insure theyarrive warm from the oven.Currently Cindy is bakingcookies at Jimmy's Pizza inKasson. "It is wonderfulto be able to use thekitchen there. It is a good loca-tion and the owners, (Roger andMona Draheim and Nicole Lambright)have been great", says Cindy.

Cindy came into this business with a back-ground in retail. "I was looking and waiting for theright opportunity," Cindy shares. She first becameacquainted with Tank Goodness as a customerordering cookies for her son in the Twin Cities torecognize a business achievement. "It was obviousto me this business was something more. This was

more than just a sale. This was providing an expe-rience. It is also a way to partner with businessesand help them network and market their compa-ny", she continues.

At this time Cindy and Rick are putting the fin-ishing touches on a former restaurant kitchen ren-ovation in NE Minneapolis. Their daughter Meganwas contemplating a career change and she willnow be part of the Tank Goodness enterprise bak-ing cookies at this location. "Dennis wants to growthis business nationally," says Cindy. "Rick and Iwill be helping with other aspects of the businessso he can focus on offering business opportunitiesto people across the country", she continues. TankGoodness has locations in Omaha, Madison, SanDiego and Atlanta with Mankato, Naperville, ILand Detroit Lakes, MN opening soon. TankGoodness licenses locations to people who haveaccess to a commercial kitchen. Packaging is pur-chased through Tank. The locations are licensedrather than franchised as Tank did not want thebusiness to be cost-prohibitive for someone start-ing.

Cindy offers chocolate chip oatmeal or raspber-ry white chocolate chip cookies and they may bepurchased in a variety of ways. People may calland place a onetime order (minimum two dozen).When Cindy delivers the cookies she will ask per-mission to take a photo which she will post onFacebook allowing the giver to view the cookieexperience. Individuals or businesses can alsoopen a cookie jar account that allows singledozens to be ordered whenever they desire. Milkcan also be delivered to complete the cookie expe-rience. Businesses can also arrange for a cookie

break having cookiesdelivered on a regularbasis. She can takeorders within a 20 mileradius of Rochester.

Cindy also takes timeonce a month to donate

eight dozen cookies to theGift of Life House and Ronald

McDonald House both located inRochester. "When I walk out with

a tear on my cheek after deliveringthose cookies, it makes it all worth-

while", says Cindy. "This is not justabout selling cookies; it's being able to

provide someone with a warm-fuzzy,feel good experience. A throwback to a

good memory", she explains.Is there more in the cookie jar? "Of

course with the holidays approaching thereis always more", Cindy says with knowing

look. Customers placing two or more holidayorders that are pre-booked with a two week

Atthis time 30-40 buseswere passing throughAlexandria daily and the travel agency outgrewthe restaurant and bus depot. Pete and Audrey'sgroup tours to Hawaii, Europe and Scandinavia,formed the backbone of the business. In 1960 abranch office opened in St. Cloud and now servesas headquarters for the company. In 1963 Pete andAudrey sold the cafe to focus on travel. Fred tookover company operations in 1977 and purchasedthe business in 1986. Even though the companygrew under Fred's guidance he makes it knownthat the real credit belongs to his father. Fred says"My father was the true entrepreneur."

Tammy grew up in Iowa and has a degree insocial work. Why then is she working in travel?"My mom worked for an agency in Rochester andfifteen years ago I started there. It just workedout", she shares with a shrug of the shoulders.
