6 c. apples-peeled and sliced2 tbsp. flour1/2 c. brown sugardash of salt
1 c. white sugar2 tsp. cinnamon
TOPPING:1 c. flour1/2 c. brown sugar2/3 c. margarine
1/2 c. white sugar1 c. oatmeal1/2 tsp. baking powder
Mix together and pour in 9” x13” pan. Sprinkle cinnamon and salt on top ofapples.
Crumble over top. Bake at 350º for 45 minutes.

CHICKEN ENCHILADAS10 to 12 flour tortillas (6”)1 lb. diced, cooked chicken1 (4 oz.) can green chilies, chopped2 c. sour cream1 can cream of chicken soup
1 1/2 lb. Colby Jack cheese1 bunch green onions, chopped1/2 tsp. cumin1/4 tsp. garlic powder
Combine soup, sour cream, chives, onions and 3/4 of the cheese; set aside. Mixchicken, spices and 3/4 of soup mixture together. Lay out tortillas and addheaping spoonful of chicken mixture. Roll and lay, seam-side down, in 9x13inch pan. Spread remaining soup mixture over rolled tortillas. Top with remain-ing cheese. Bake, covered, 30 minutes at 350º, then uncovered, an additional30 minutes. Note: Can be made the day before and refrigerated.

Looking for HelpDear Looking,Unfortunately, there are nearly 2 million Americans,
like your wife, living with macular degenerationtoday, making everyday tasks like cooking dinner,reading the newspaper or watching televisionextremely challenging. Here are some resources thatcan help.
Vision RehabilitationThe best place to get help living and coping with
macular degeneration is at a vision rehabilitationagency. Typically run by state or nonprofit organiza-tions, there are around 1,500 of these agencies scat-tered across the country that provide free or low-cost services to help seniors and their families whoare living with all types of incurable vision impair-ments.
While vision rehabilitation does not restore lostsight, it does help people maximize their existingsight, or, if they have no vision, it can equip themwith techniques and tools to help them maintain anindependent lifestyle.
Services include counseling, along with training onhow to perform daily living tasks with low vision, andhow to use visual and adaptive devices and assistivetechnologies that can help improve quality of life.
They also offer guidance for adapting your homethat will make it safer and easier for your wife tomaneuver, and can help her locate low-vision sup-port groups in your area which is very helpful. Someagencies will even send their specialist out to workwith her in the comfort of your own home.
To find a vision rehabilitation agency in your area,call the American Foundation for the Blind referralline at 800-232-5463.
If, however, you don’t live near a vision rehabilita-tion agency, you can also get help from an occupa-tional therapist, or OT, who can provide low visiontraining in your home. When Corey Carstensen started his small engine and light automotiverepair business a year-and-a-half ago his wife Mary thought he shouldhave a catchy name people would remember. She came up withCrankeeze, a unique name people will remember.
Your auto or small engine will probably crank more easily when CoreyCarstensen gets done working on it. Corey can repair lawnmowers, snow-blowers, trimmers and just about anything with a small engine. In the lightautomotive aspect of the business Corey can do oil changes, brakes, fuelpumps, minus anything that has to be hooked up to a computer to bediagnosed.
Corey Carstensen has always tinkered with small engines. Quite oftenson Mason is out in the garage watching and helping him, which is whatCorey would do when his father Dan worked in the garage.
Corey worked construction for 10 years for his father. The instability ofthe construction field made him look to employment where there wasmore stability. He was hired full time by the K-M School district as custo-dial staff where a majority of job includes mowing some 57 acres ofgrass on district property, snow removal in the winter and other similarduties. He has been with the school four years and decided he neededsomething else. That something else is Crankeeze.
When not sitting on a mower Corey enjoys fixing them. He said 80% ofthe mower problems he deals with are gas related. If a rider sets over thewinter with no stabilizer in it that can cause problems or even if an enginesets for 30 days with no use that can cause issues.
What Corey enjoys most about the work is the fact that he likes thechallenge of often times not knowing what he is getting in to, what theproblem is. No two mowers are alike and Corey said, "There is alwayssomething different to diagnose.
Corey and Mary Carstensen have four children, 11, 8, 5 and ninemonths. Mary does day care out of their home so it's a little more man-ageable for Corey to have two jobs. Corey believes he has the best of bothworlds; a steady job and one that allows him to be his own boss and workon equipment he uses in his school job during the day.

Army National Guard Spec. William A. Wallin has gradu-ated from basic combat training at Fort Jackson, Columbia,S.C.
During the nine weeks of training, the soldier studied theArmy mission, history, tradition and core values, physicalfitness, and received instruction and practice in basic com-bat skills, military weapons, chemical warfare and bayonettraining, drill and ceremony, marching, rifle marksmanship,armed and unarmed combat, map reading, field tactics, mili-tary courtesy, military justice system, basic first aid, footmarches, and field training exercises.
Wallin is the son of Evie Wallin of Bakersfield Court,Henderson, Nev.

Highway 14 traffic switch between Byron and Rochester
Motorists can expect lane closures on eastbound Highway14 in Olmsted County between Byron and Rochester begin-ning Monday, Aug. 13, as crews resurface the road.
Prior to this switch, traffic was reduced to a single lane onwestbound Highway 14 while crews resurfaced the west-bound lanes.
The Minnesota Department of Transportation anticipatesstop-and-go traffic and delays on eastbound Highway 14 dueto heavy traffic volumes, especially on weekday morningsand evenings. Motorists should find alternate routes and avoidthe area during peak travel times, if possible.
When the project is complete, motorists will experience asmoother ride surface and a safer highway, including extend-ed turn lanes.
Rochester Sand and Gravel, a division of MathyConstruction, is the prime contractor for the $8.2 million pro-ject, expected to be completed in early September.
MnDOT urges motorists to always drive with caution, slowdown in work zones and never enter a road blocked with bar-riers or cones.

Mobile dental clinic serves South Country members
South Country HealthAlliance (SCHA) nowaccepts Open Door HealthCenter mobile dental ser-vices, allowing SCHA mem-bers to receive Open Door’smobile dental servicesthrough the health plan.
The two organizationscontracted in June in a jointeffort to improve the accessi-bility and affordability ofquality dental care in south-ern Minnesota and bettermeet the needs of ruralpatients.

“South Country membershave quite a presence in theareas that we serve, and OpenDoor continuously tries to findways to serve more people andserve them better,” said JenTheneman, director of MobileHealth Services at Open Door.“Even though we haven’t beenon the road that long, there arealready waiting lists, so theneed and the demand are defi-nitely there.”
On March 13, the healthcenter began seeing patientson both its mobile medical andmobile dental clinics, provid-ing family practice medicalcare and dental care to every-one, applying no restrictionsbased on age, gender, location,ethnicity, language, citizen-ship, or economic factors.
The mobile clinics acceptpeople with or without insur-ance and offer sliding fee dis-counts to patients and theirfamilies based on householdsize and income, saidTheneman.
Both mobile medical anddental clinics travel togetheracross southern Minnesotaevery week, stopping to visitpatients in Dodge Center,Gaylord, Marshall andSlayton.
Patients may scheduleappointments by calling OpenDoor at the number below, butthe mobile clinics also acceptwalk-ins. Patients do not haveto be city or county residentsin order to receive services.
“A lot of our patients comefrom the communities wherewe park, but many still travelfrom different counties—any-one can use this as their prima-ry care clinic,” said OpenDoor’s Amy Brennan, D.D.S.
The mobile services are provided by Open Door healthcare professionals and include many of the services offeredby typical medical or dental clinics. The mobile medicalclinic provides check-ups, physical exams, immunizations,screenings and disease management programs, among otherservices. The mobile dental clinic provides comprehensivedental care including cleanings, fluoride treatments,sealants, fillings, crowns, bridges and simple extractions.Other more extensive treatments are referred to the OpenDoor clinic in Mankato, and staff members help patientsschedule additional appointments.
Though the mobile clinics have been operating for only afew months, Theneman said they are already well-receivedby the public.
County directors in Dodge and Sibley Counties agree thatthe mobile clinics have made a positive impact since thevans have begun serving their communities.
“These units add another resource to our communi-ty,” said Peggy Espey, director of Public Health in DodgeCounty. “They are able to do more than what we offeredbefore and complement what we already have withreferrals.”
Vicki Stock, director of Public Health and HumanServices in Sibley County, added that people have called herseveral times to express their satisfaction with the mobileclinics in Gaylord. “I think demand for these services willincrease the longer they are here,” said Stock. “People willspread the word and more people will start to come.”
Theneman said that within the next several months, OpenDoor plans to expand its mobile operation by seeing patientsmore days per week at current locations, as well servicingadditional locations.
