Cuban cuisine is a delicious combination of Native

American Taino, African, Spanish and Carribean

gastronomy. Most Cuban dishes involve the use of

African and Spanish spices and techniques while there

are also those that have Caribbean influences.

What is a mojo marinade? The mojo criollo sauce

supposedly came from the Canary Islands but has Cuban and Caribbean

versions, too.

Regardless of its varieties, it has one common attribute:

spiciness!

Typically, a mojo marinade is a combination of cumin,

water, salt, olive oil, paprika, garlic, coriander and local

peppers.

The Cuban version, on the other hand, involves the use of citric ingredients such as

lemons, lime, oranges or vinegar.

You should not worry about the versatility of the mojo

sauce. You can use it to flavor different kinds of food

items: vegetables, fish, poultry and meat.

Just a few tips when using your mojo

marinade:

Always use a meat injector to infuse the sauce into your pig’s meat. Make sure that the holes are created at uniform distances

from each other.

Inject the hams, loins and shoulders of the pig. Once done, apply the sauce all over the pig’s
