  1. 1. CLEANING PROCEDURE AUTHOR: DELFIN OYAO CHIEF STEWARD
  2. 2. After the training the trainee will enable to know of the proper cleaning of each different kinds of Kitchen Equipment and usage.
  3. 3. CANOPY HOOD AND FILTERS 1. Prepare protective equipments, cleaning tools and chemicals. 2. Pullout first the Grease filters and soak in the sink with degreasing solutions and wash later. 3. Prepare degreasing solution in a plastic sprayer and spray underneath the hood and let stand for 5 minutes to have chemical reaction takes place. 4. Get a scotch brite sponge and scrub the underneath and outside surface of the hood to loosen oil and carbon deposit. 5. Rinse with running water using high pressure hose to loosen dirt and detergent. 6 Clean oil dripping bowl and return after cleaning. 8. Wash and clean filters and install it in the canopy hood 9. Wipe all surfaces until dry.
  4. 4. DEEP FRYER 1. Prepare PPEs , cleaning chemicals and supplies. 2. Pre-heat Deep fryer into 180 F . 3. Turn off electric and gas supplies of the Deep fryer machine. 4. Drain the use oil in the pan or stock pot for later use. 5. Scrape oil residue and other food particles and throw it in the wet garbage bin. 6. Apply Degreaser by spraying all inside surface and let it stand for at least 5 minutes for chemical reaction to takes place. 7. Scrub all surface with scotch brite with detergent to loosen oil and dirt. 8. Rinse with lukewarm water to loosen dirt. 9. Wash dripping pan and dry, install back to the deep dryer. 10. Wipe all surfaces until dry.
  5. 5. ELECTRIC/GAS FLAT GRIDDLE 1. Prepare PPEs, cleaning chemicals and supplies. 2. Pre-heat the griddle up to 180 F . 3. Turn off the electric / Gas supplies. 4. Pour the Flat griddle with water to cool down and apply a degreaser and let it stand for 10 minutes for chemical reaction. 5. Using scotch brite scrub all surface to loosen carbon deposits.Hard carbon deposit will be scrape using spatula. 6. Rinse with water to loosen dirt and detergent. 7. Wipe using clean rags. 8. Apply vegetable oil to prevent rust or corrosion.
  6. 6. HOW TO CLEAN WALLING 1. Prepare Cleaning chemical, tools and cleaning supplies. 2. Cover all electrical outlet with electrical tape to prevent electrical shock while cleaning. 3. Scrub wall tiles using scotch brite sponge with detergent to loosen dirt. 4. Hose down the wall tiles with high pressure hose to loosen dirt. 5. Wipe wall tiles using clean rags until dry.
  7. 7. HOW TO CLEAN FLOORING? 1. Prepare cleaning chemicals, Tools and cleaning supplies. 2. Sweep floors using soft broom to prevent flickering of dust from anywhere. 3. Using All purpose floor cleaner, sanitizer and deodorizer solution soak the floor up to 10 minutes to allow chemical reaction 4. Scrub floor using floor polisher or scrub manually using push brush to loosen dirt. 5. Hose down flooring using high pressure hose pay attention to underneath floor which cant be seen to our naked eyes where dirt stock up,. 6. Mop floors using clean mop head until dry. 7. Wipe wall tiles near the floor to loosen dirt cause during wash out of flooring until dry.
  8. 8. HOW TO CLEAN 4 BURNER RANGE STOVE? 1. Prepare Cleaning Chemical, tools and cleaning supplies. 2. Pre-heat burner and range up to 180 F. 3. Turn off gas supplies and spray Degreaser solution inside Oven and burners let it stand for 5 minutes for chemical reaction takes place.. 4. Scrub burners and range using scotch brite to loosen dirt. 5. Rinse burners and oven with lukewarm water to loosen dirt. 6. Install burners stove. 7. Wipe all surfaces until dry.
  9. 9. HOW TO CLEAN GREASE TRAP? 1. Prepare Cleaning Chemicals, PPEs, Cleaning tools and supplies. 2. Open the cover of grease trap. 3. Pull out the basket strainer and divider, scrape oil residue. 4. Scrape food particles and water. 5. Empty grease trap and scrub all over surfaces using scotch brite and detergent with antibac solution to loosen dirt. 6. Rinse with running water to loosen dirt and detergent. 7. Wash basket strainer and divider and install back inside the strainer and cover. 8. Wipe all surfaces with clean rags until dry.
  10. 10. HOW TO CLEAN 3 DECK OVEN? 1. Prepare cleaning chemicals, PPEs, cleaning tools and supplies. 2. Pre-heat oven to 180 F . 3. Turn off power supply. 4. Cool down inside oven by spraying water when heat is reduce spray inside oven surface with degreaser let it stand to 5-10 minutes for chemical reaction takes place. 5. Using scouring pad or metal spatula scrape the carbon deposit until loosen. 6. Rinse with water to loosen dirt. 7. Dismantle the glass door and degrease, wash, rinse and dry. 8. Install back the glass door carefully. 9. Wipe using clean rags until dry. 10. Turn on power supply.
  11. 11. HOW TO CLEAN REACH IN CHILLER/FRIDGE/CHEST TYPE FREEZER UPRIGHT FRIDGE? 1. Prepare cleaning detergent, anti bacterial solution and Cleaning tools and supplies. 2. Turn off power supply. 3. Coordinate with kitchen staff to pull out the food stuff inside the chiller and fridge. 4. After pull out of all food stuff inside the reach In chiller and Fridge Dismantle the Shelves and set aside for later wash. 5. Using Sponge with antibac detergent solution scrub all inside surface to loosen dirt. 6. Rinse with lukewarm water to loosen detergent. 7. Apply anti Bacterial solution. 8. Wipe until dry. 9. Assemble the shelves and return all food stuff inside the chiller and freezer with the help of Kitchen personnel. 10. Turn on power supply.
  12. 12. HOW TO BREAKDOWN DISHWASHING MACHINE? 1. Turn off Dishwashing Machine. 2. Dismantle the Curtain, Wash arm and rinse arm set aside for later wash. 3. Drain wash tank by dismantling the foot valve. 4. Prepare Discaling solution and spray all over surfaces inside the machine let it stand for 5-10 minute for chemical reaction takes place. 5. Wash curtain, foot valve, wash arm and rinse arm ensure that no foreign object remain inside wash arm and rinse arm. 6. Scrub the inside surface of the machine using scouring pad or sponge to loosen scale deposit and dirt. 7. Rinse with running water to loosen dirt. 8. Assemble wash arm and rinse arm including curtains. 9. Put back the foot valve inside the wash tank. 10. Turn on Machine and refill wash tank with water up to drain level. 11. Pre-heat wash tank up to required temperature of 180 F to 190 F . 12. Check chemical reservoir if full or empty. 13. Turn on chemical dispenser. 14. Wipe all outside surface until dry.
  13. 13. HOW TO SET UP DISHWASHING MACHINE? 1. Check the Dishwashing machine wash tank water level. 2. Check wash arm and rinse arm from foreign object stock in the nozzle. 3. Check Chemical reservoir if full or empty, turn on dispenser. 4. Turn on Dishwashing machine power supply.
  14. 14. HOW TO CLEAN TILTING PAN AND TILTING KETTLE? 1. Pre-heat tilting pan up to 180 F. 2. Turn of Power supply. 3. Scrape harden food particle with metal spatula/scraper to loosen dirt. pull out food particles and dispose it in the wet garbage bin. 4. Scrub inside tilting pan with scouring pad and detergent to loosen dirt. 5. Tilt the pan up to 45 degree or slant position. 6. Rinse with lukewarm running water until dirt is loosen. 7. Pull back the tilting pan to flat position. 8. Wipe all surface with clean dry rags until dry. 9. Close the tilting pan cover. 10. Turn on power supply.
  15. 15. HOW TO CLEAN HIGH PRESSURE BURNER STOVE 1. Pre-heat burners. 2. Dismantle burners and soak with degreasing solution to loosen carbon deposit wash and rinse. 3. Spray high pressure burner stove with degreasing solution.let it stand for 5 minutes for chemical reactions take place. 4. Scrub all surfaces with scouring pan/sponge to loosen dirt. 5. Rinse with lukewarm running water to loosen dirt and detergent. 6. Dismantle burners and ensure fittings is properly install. 7. Wipe all surfaces with clean rags until dry.
  16. 16. HOW TO CLEAN BONESAW MACHINE? 1. Turn off power supply. 2. Open the Bone saw cover. 3. Dismantle the Bone saw blade. 4. Dismantle the plastic stopper. 5. Scrape the food residue using metal spatula to loosen food particles. 6. Scrub inside surface with use of sponge or scouring pad with detergent . 7. Rinse with lukewarm water until clean. 8. Wash remaining parts the door, plastic stopper and blade until clean. 9. Assemble the remaining parts and ensure blade is tight enough in order not to loosen. 10. Close the door cover . 11. Wipe all surface until dry. 12. Turn on power supply.

  18. 18. CLEANING OF SS WORK TABLE,SINK TABLE,HAND WASH SINK,PREPARATION TABLE AND SS UTILITY RACKS 1. Wash, clean and scrub surface and underneath with detergents and Lime away solution. 2. Rinse with running water to loosen dirt and detergent. 3. Sanitize table with bacfree sanitizer solution. 3. Wipe and dry.
  19. 19. 1. Shut off electric supply. 2. Pull out transfer food stocks. 3. Sweep chiller floors. 4. Scrub, wash and clean from ceiling, walling and Rack shelving. 5. Scrub floors with push brush to loosen stubborn dirt. 6. Rinse and sanitize with sanitizing solution. 7. Return food stock on shelves.
  20. 20. 1. Pull out grates and spray with Lime away solution to loosen scales. 2. Scrub, wash and clean trench drain canal with lime away solution to loosen dirt. 3. Rinse and sanitize. 4. Return grates and air dry.
  21. 21. 1. Clear all wares and stock in the shelves. 2. Scrub shelves with detergent from all surface. 3. Rinse with running water. 4. Wipe and dry.

  24. 24. 1. Pull up Hose reel until the end and lock. 2. Scrub hose Reel housing with detergent and rinse with running water. 3. Scrub Hose with detergent to loosen dirt and rinse. 4. Pull back hose reel and lock. 5. Wipe and dry.

Rinse with running water to loosen dirt and detergent. 8. Wash removable spare parts and install.
  28. 28. 1. Pre-heat Salamander heater to 80 degrees Celsius 2. Turn off gas supply/ power supply. 3. Spray with degreaser solution on dirty portion of the unit. 4. Let it stand for 5 minutes for chemical reaction takes place. 5. Scrub with sponge and detergent to loosen dirt. 6. Rinse with water and sanitize. 7. Wipe and Dry.

Dismantle back filters and dripping pan, wash and apply lime away solution. 5. Scrub and wash inside and outside surface and removable spare parts 6. Rinse and Sanitize 7. Assemble spare parts and set again ice maker to wash mode for rinsing. 8. Set back ice machine to Ice make mode. 9. Wipe and dry.
  39. 39. 1. Remove weighing scale pan. 2. Wash with detergent and rinse. 3. Apply sanitizer solution to sanitize the pan. 4. Scrub weighing scale stand and body then rinse. 5. Wipe and Dry
  40. 40. 1. Unplug power supply. 2. Remove the insert and wash. 3. Rinse insert pan and return to Rice cooker. 4. Wipe outside surface of the rice cooker 5. Ensure the electrical wire is not wet.
  41. 41. 1. Shut off electric supply. 2. Drain water. 3. Scrape food particles, wash and clean all over surface. 4. Apply Lime away solution in the element heater, wash and rinse. 5. Closed drain valve. 6. Refill water to submerge element heater. 7. Turn on electric supply.

Shut on machine and refill wash tank. 6. Run machine for rinsing and drain wash tank. 7. Refill water in wash tank and return glass racks. 8. Wipe outside surface and dry.
