Increasing Holiday SalesHere are a few ideas for ways you can generate holiday sales this season:• Direct mail. Send a holiday card to all the contacts in your database.

Include an off er for a free appetizer or $20 off their next purchase. Small gestures help keep customers loyal and convert prospects into customers.

• Target offi ces nearby. Target the offi ce buildings in your area, and send them your catering menu along with your holiday specials.

• Give back to the community. Consider putt ing together a food drive. Off er a 10 percent discount or free appetizers to customers who bring in nonperishable items. Or donate a portion of sales to your favourite charity.

• Off er Internet deals. Use the Internet to off er discounts on Facebook and Twitt er. Th e fl uid nature of social media makes it the perfect vehicle for seasonal and holiday promotions.

Th is time of year brings people together for a helping of good cheer and holiday fun. Dining out is elevated from a simple social event to a celebration of the season, and expectations are high. Diners want great food with a sense of occasion. Th ey want familiar holiday favourites, dressed up in fanciful ways that only chefs can dream up.

Th e trick is to off er unique and festive dishes without reinventing your whole menu. Ideally, recipes can answer your needs for holiday specials, buff ets, brunch items, and party platt ers. If your seasonal dishes can inspire increased sales, it truly is the most wonderful time of the year.

Here are some ways that may help you generate holiday sales to ensure you start the New Year right and keep customers coming back throughout the year. We’ve concentrated on three key areas of your business: Specialty Cheese, Dessert Plating, and Catering. Use these tips and techniques to fi ne-tune your menu for the busy holiday season.

Selecting the Cheese • Try to include a variety of textures and fl avours. Most cheese

belongs to one of four basic categories: aged, soft , fi rm, or blue. For a good variety, choose at least one from each group. Some examples:

Aged: Cheddar, goat, or Gouda

Soft : Brie and Camembert, and any other cheeses that have a similar white, downy-like rind

Firm: Cheddar, gouda, or Gruyère

Blue: Gorgonzola, or Stilton

• You can also can try selecting cheeses by the type of milk used (cow, goat, sheep). Th is will ensure a range of diff erent fl avours on the plate.

• Serve at least one familiar cheese.

Accompaniments• Off er a selection of breads, including sliced baguett e, bread

sticks, and crackers in all diff erent shapes and sizes. It’s a good idea to vary taste and texture among the breads as well as the cheeses.

• Jarred condiments and vegetables are quick and fuss-free. Try sweet preserves or honey, tart chutneys, or spicy

mustards. You also can add artichoke hearts, roasted red peppers, or caponata.

• Various other sweet and salty items can work as well. Try cured meats, such as prosciutt o and salami, or candied nuts and pistachios. Assorted seasonal and dried fruits can include fi gs, cherries, apples, or pears.

• Hardware can include plates and platt ers (wood, slate, marble, or leaves), knives and spreaders, and cheese markers.

Serving Tips• Separate strong-smelling cheeses. Place them on a separate

plate so it doesn’t overpower more delicate ones. Four or fi ve choices are enough.

• Use a separate knife for each cheese, especially the soft varieties. Soft cheese spreads well with a butt er knife; fi rm cheese might require a paring knife; and aged cheese oft en requires a cheese plane.

• Remove the cheese from the refrigerator an hour before serving—cold mutes fl avour.

• Label each cheese so you won’t need to recite the names all evening. If you like, also jot down a few poetic adjectives describing its fl avour.

Master the Art of Dessert Plating

Five Tips for Beautiful Desserts� ere are no textbook rules for garnishing. And that’s good, because we don’t want to sti� e creativity. Follow these guidelines for beautiful dessert plating.

1Make garnishes edible.

Everything on the dessert plate should be edible and delicious.

2 Keep it clean and simple. Don’t crowd

the plate. If your dessert is beautiful, it shouldn’t need a lot of garnishes. And keep the rim of the plate clear, so the servers aren’t touching the food.

3Make your garnishes relate to the

dessert on the plate. Th e only time you should garnish with fresh mint is if you’re serving mint ice cream! Don’t put it on there just because you think the dessert needs color. Add a drizzle of caramel, or a simple fl ourish of whipped cream. But a well-executed, eye-pleasing dessert can sometimes stand alone.

4Layer fl avours and textures in your

dessert. Textures and fl avours hit the palate at diff erent times. Ask yourself, “How can I make this bett er?” If the answer is a litt le lemon zest, then add it as a garnish. All the components on the plate should build on the dessert, making it bett er.

5Put thought into actual plates. Try

diff erent plates—various sizes and shapes. Th e right plate can add drama or enhance the theme.

Desserts should turn heads in the dining room. Garnishing and plating desserts shouldn’t be an a� erthought. It should be an integral part of how you build your recipe.

But not all restaurants boast a designated pastry chef, itching to build delicate sugar cages or mold fondant into petite � owers. So, how do you deliver a wow factor without slowing down the line or requiring too much intricate detail?

Holiday events may be the biggest exposure your catering program enjoys all year. Th e gatherings tend to be large and elaborate, so they are a great opportunity to promote your capabilities for year-round events. To be successful, of course, requires planning appropriately for your event.

Step one is to let potential customers know you are open for business at the holidays. Promote your service using whatever vehicles are available. Spell out the extent of your service: hors d’oeuvres, buff ets, sit-down dinners, on-site, off -site, all of the above.

Here are some tips for successful holiday catering:

Holidays Meals. If your dining room isn’t open on Th anksgiving or Christmas, consider selling a ready-to-go holiday meal. Use table tents, signs, and fl iers to get the word out to your customers. You have two options: main course only, or a full meal that includes sides, bread, and dessert.

Home-Based Holiday Parties. From spinach and artichoke dip to shrimp cocktail, you’re already making specialties your customers would love to buy. Make up menus and sell them at bulk prices, by the piece, kilogram, or pan.

Party Room Rental. Get your customers to book early. Start by calling last years’ parties and off ering them advance pick of dates. Th ey’ll appreciate the fact you’re looking out for their best interests. Another option is to throw an open house to get your party book fi lled. Invite your best

customers for an aft ernoon or evening of your chef ’s best holiday creations.

O� -Premise Catered Events. From sit-down dinners to offi ce cocktail parties, direct mail is the most cost-eff ective tool to get your dates booked. Th e profi t advantages are great in off -premise catering, but you want to make sure you can execute it well. Make sure your staff is prepared to execute the menu.

Drop-O� Catering. If catering is new to your restaurant, you might consider drop-off meals. Add an entrée or two, choice of side dishes, bread, dessert, and drink, and you have an entire meal ready to go. With the variety in aluminum pans and disposable plastic trays, you can be up and running inexpensively.

Utilize direct mail, onsite promotion to existing customers, table tents, and � iers to get the word out about your catering opportunities. Whatever foods you o� er, you need to present them with great style. Focus on the food and use colourful, � esh vegetables as functional garnishes for pans, trays, and pla� ers. Make your holiday event a treat for the eyes and the palate, and you’ll give your catering business a jump-start for the next year.

INGREDIENTS AMOUNT

Certifi ed Angus Beef® Top Sirloin 4 un

Fresh Rosemary Sprigs 3 un

Gordon Signature® Modena Balsamic Vinaigrette 250 ml (8 oz)

Cooking Oil as needed

Minced Shallots 15 ml (½ oz)

Smoked Duck Sausage, casing removed 3 un

Orange Zest 15 ml (½ oz)

Celery Leaves, chopped 15 ml (½ oz)

Italian Breadcrumbs 15 ml (½ oz)

Salt to taste

Pepper to taste

Portobello Mushrooms, without stalk 4 un

Grated Parmesan Cheese 90 ml (3½ oz)

Butter as needed

Fresh Rosemary, chopped 5 ml (1 tsp)

Port Wine 125 ml (4 oz)

Demi-glace Sauce, prepared 250 ml (8 oz)

Cooking Cream, 15% 30 ml (1 oz)

Preparation InstructionsPut the sirloin in a zip-top bag; add rosemary and vinaigrette. Marinate in the refrigerator for a minimum of 3 hours. In a sauté pan, add the cooking oil and shallots and sauté for a short time. Add the duck sausage, orange zest, and celery leaves and let cook until the sausage is no longer pink. Add breadcrumbs, salt, and pepper and let meat come to room temperature. Cook the Portobello mushrooms over a hot grill for 3 to 4 minutes. Stuff the mushrooms with the duck sausage mixture and sprinkle with Parmesan cheese. Grill in oven until cheese turns light brown. In a sauté pan, melt the butter and add the shallots. Add chopped rosemary and port wine and allow to reduce by half. Add the demi-glace sauce and bring to a boil. Simmer for about 10 minutes. Add the cooking cream and stir. Grill the top sirloin over high heat until desired doneness.

To serve, place the beef on a vegetable purée of your choice, add the mushrooms on top, and pour the sauce around the meat.

Sea Salt 250 g (8 oz)

Fresh Oregano, chopped 50 g (1½ oz)

Bay Leaves 10 un

Chopped Garlic 50 g (1½ oz)

Mustard Seed 75 g (2½ oz)

White Stripe Lamb Shanks 20 un

Duck Fat 10 L (2½ gal)

Preparation InstructionsMix together salt and spices. Macerate the lamb shanks in the mixture for 12 hours. In a large stockpot, melt the duck fat. Remove the shanks from the brine and place in the fat. Lightly simmer, covered, for about 5 hours or until the lamb separates easily from the bone. Remove the meat from the fat and serve as is or with sautéed vegetables.

You can prepare this dish many days in advance, but it is important to keep refrigerated in the fat.

INGREDIENTS AMOUNT

Apricots in Light Syrup 240 g (8 oz)

Sweet Onion, diced 120 g (¼ cup)

Ground Veal 454 g (1 lb)

French Baguette, diced small 240 g (1 cup)

Ground Sage 30 g (2 Tbsp)

Poultry Seasoning 15 g (1 Tbsp)

Ground Thyme 2 ml (½ tsp)

Egg 1 un

Skin-On Chicken Breast, 6–7 oz 4 un

Salt to taste

Pepper to taste

Chicken Stock 120 ml (½ cup)

Preparation InstructionsPass the apricots through a grinder on fi ne or use a food processor to chop fi nely and then do the same with the onion. Mix with the ground veal. Add the baguette cubes and spices and mix thoroughly. Add the egg and mix again. Place the chicken breasts skin side-down on a work surface and season with salt and pepper. Stuff with ¼ cup of veal stuffi ng. Fold chicken over the stuffi ng and secure with toothpicks. Place skin side up in a roasting pan and season with salt and pepper. Roast at 325°F for 30–45 minutes or until skin is golden brown. Remove from roasting pan and keep warm. Reserve all pan juices and strain into a pot. Bring up to temperature and add 1 or 2 Tbsp of quick-blending fl our to thicken and to make a pan jus. Season the jus with salt and pepper, if needed. Place the chicken breast on a serving plate and top with jus. Can be served with roasted fi ngerling potatoes.

Bone-In Center-Cut Pork Chops 4 un

Reduced-Sodium Soy Sauce 45 ml (3 Tbsp)

Dry Sherry 30 ml (2 Tbsp)

Garlic Cloves, crushed 2 un

Brown Sugar 5 ml (1 tsp)

Crushed Red Pepper 1 ml (¼ tsp)

Fresh Blueberries, chopped 240 g (1 cup)

Shallot, chopped 1 un

Serrano Chile, seeded and minced 1 un

Fresh Cilantro, chopped 15 ml (1 Tbsp)

Lime Juice 15 ml (1 Tbsp)

Fresh Ginger, minced 5 ml (1 tsp)

Salt 1 ml (¼ tsp)

Preparation InstructionsPlace the pork chops in a large sealable plastic bag. Whisk soy sauce, sherry, garlic, brown sugar, and red pepper in a small bowl. Add the marinade to the bag, seal, and turn to coat. Marinate in the refrigerator for at least 2 hours, or overnight. In a small bowl, combine the blueberries, shallot, chile, cilantro, lime juice, ginger, and salt. Set aside. Preheat grill to high. Remove the pork chops from the marinade and grill 3 to 5 minutes per side. Let rest for 5 minutes before serving with the blueberry-ginger relish.

Butter 10 ml (2 tsp)

Cream, 18% 120 ml (½ cup)

Lemon Juice 5 ml (1 tsp)

White Wine 10 ml (2 tsp)

Olive Oil 30 ml (2 Tbsp)

Lobster Ravioli 7 un

Whole Prawns, 20–24 ct 6 un

Markon Green Onions 10 ml (2 tsp)

Preparation InstructionsIn a sauce pan, add the butter, cream, lemon juice, white wine, olive oil, salt, and pepper. Boil the ravioli, strain, and toss in the cream sauce. Prepare the prawns per package instructions and keep warm. Place the ravioli in a serving plate and top with prawns. Garnish with green onion.

Unsalted Butter, softened 100 g (4 oz)

Icing Sugar 225 g (8 oz)

Brandy or Cognac 45–90 ml (3–5 Tbsp)

Plum Pudding, Yield: 20 servings

INGREDIENTS AMOUNT

Shredded Shortening 120 g (4 oz)

Dark Brown Sugar 120 g (4 oz)

Eggs, beaten 3 un

Small Carrot, grated 1 un

Apple, peeled, cored, and shredded 1 un

Almonds, chopped and blanched 120 g (4 oz)

Preserved Stem Ginger in Syrup, chopped 60 g (2 oz)

Walnuts, chopped 120 g (4 oz)

Dried Cranberries 90 g (3 oz)

Raisins 75 g (2 ½ oz )

Dried Currants 90 g (3 oz)

Golden Raisins 90 g (3 oz)

Candied Mixed Fruit Peel, chopped 120 g (4 oz)

Plums, pitted and chopped 4 un

Lemon, juiced and zested 1 un

Whole Wheat Flour 140 g (1 cup)

Fresh Breadcrumbs 350 g (2½ cups)

Mixed Spice 7 ml (1½ tsp)

Baking Powder 3 ml (¾ tsp)

Almonds, ground 30 g (1 oz)

Brandy 120 g (4 oz)

lum Pudding with Brandy Bu� erPreparation Instructions—Plum PuddingIn a mixing bowl, cream together the shortening and brown sugar and then gently fold in beaten eggs. Set aside. In a large bowl, combine carrot, apple, almonds, stem ginger, walnuts, dried cranberries, raisins, dried currants, golden raisins, mixed fruit peel, plums, lemon juice and zest. In another bowl, mix together the fl our, breadcrumbs, mixed spice, baking powder, and ground almonds. Add the dry mix to the large bowl containing the fruit mix and rub together. Now add reserved shortening mix and combine. Add the brandy and mix gently.

Grease 2 large or 4 small pudding basins. Fill with pudding mixture about 7/8 full. Cover tightly with greased waxed paper, then foil, and secure with string. Stand pudding on a wire rack in a large pot of boiling water that reaches halfway up the sides of the pudding basin. Steam puddings over medium-low heat in boiling water (5 hours for large puddings, 2½ hours for small puddings), topping off water regularly until quite fi rm and set.

If not serving immediately, let cool completely, then replace covers with fresh waxed paper and foil and store in a cool, dry place, basting from time to time with rum or brandy, for up to 3 months. To serve, reheat by steaming 2 to 3 hours.

Serve with Brandy Butter.

Preparation Instructions—Brandy Bu� erPlace the soft butter into a large baking bowl. Beat with an electric hand whisk until light and creamy. Add the icing sugar and beat again until blended. Add the brandy or cognac to taste and stir well. (If you add too much brandy, the mixture may curdle. If it does, just add more icing sugar until the mixture binds back together.) Spoon the butter into a serving dish, cover and store in the refrigerator until required.
