THEVERY BEST ROASTEDVEGETABLESYou can choose to use one or a combination of several of thesevegetables together. One of a choice of 4 veggies will serve2 – 4 people, depending on size. Cut the vegetable mix thatyou select into 2” – 3” chunks.Unpeeled Vegetable Options: Carrots, Onions, Potato,Cauliflower, Parsnips, Sweet Potato, Fennel (cut in quartersor eighths, keep the core in), Brussels Sprouts (scored)PeeledVegetable Options:Turnips,Rutabaga,Celeriac, peeledAdditional Ingredients:1 bulb garlic, whole cloves, smashedHerbs d’ProvenceOlive OilSea SaltBalsamic Vinegar1 Orange, cut in halfPreheat the oven to 375º. Place the cut veggies on a bakingsheet. Add a bit of sea salt, oil and the herbs d’Provence anddousewithbalsamicvinegar.Stir these ingredients sovegetablesare well coated with oil, cut the orange in half and place inpan cut side up. Place the pan in the oven, either covered oruncovered. If the veggies are cut large (3”) I always coverthem. Leave smaller cut veggies uncovered.Give them about 10 minutes or so to heat up and then stirevery 10minutes or so to prevent them from burning. Smallsize veggies will be done in 20 – 30 minutes. Large, chunkyveggies can take up to an hour and a half. Even though thelarger veggies take longer, this iswhat I oftendo since the longercooking creates a sweeter more delicious flavor.When theveggies are tender remove from the oven and allow them tocool a bit. Then squeeze the juice from the cut orangesover the roasted vegetables and stir. Serve warm.

SIMPLY DELICIOUSBAKED WINTER SQUASHIt can be hard to tell sometimes if a squash will be rich andsweet. Regardless of the type of winter squash look for a richnessof color. The squash should feel very heavy for the size of itand have a brown stem. Wondering how to cut the thing? Iuse a cheap cleaver that I got at an Asian market and a smallrubber mallet. Place the squash on a cutting board and tap theknife with the mallet until it goes through and separates thesquash. Don’t use your good kitchen knife to cut the squash – itmight chip in the process. Use this same process to cut thesquash into smaller pieces if needed. Remove the seeds with alarge spoon. As long as the squash is organic, no need to peelit. Eat the skin! It’s full of nutrients!WinterSquashofyour choice:Kabocha,Hokkaido,Buttercup,Butternut, Carnival, Acorn, Delicata and Blue Hubbardare just a few tasty varieties to choose fromOlive OilCinnamonSea Salt to taste*Agave, Coconut or Rice Syrup

Pre-heat the oven to 375º. Depending on how big thesquash is and how many people you are serving you mightwant to use only half or a quarter of the squash. Slice thesquash into ½ inch thick wedges. Place the squash pieceson an unbleached parchment paper lined baking sheet.Douse with olive oil, cinnamon and a little sea salt. If youare familiar with winter squash you’ll be able to tell by thecolor and texture if it’s going to be sweet or not. If you knowit’s not sweet pour on a sweetener of your choice beforeyou start cooking it. If squash is new to you bake it till it’stender, taste it and if needed add a bit of sweetener to itand put it back in the oven to caramelize the syrup. Theparchment paper helps with the clean-up and prevents thesquash from sticking and burning on the baking pan.*Sometimes squash just isn’t as sweet as it should be, evenwhen the color, weight and dried stem are just right. If theweather conditions haven’t been perfect or if the squash waspicked before the first frost, it won’t be as sweet. I only use thesweetener when the squash is lacking. Good squash tastes likeyou poured sugar all over it when you haven’t. Mediocresquash tastes fantastic with a little help

CARROT, PARSNIP, CELERIACAND APPLE SALADEven when it’s chilly out it’s nice to balance a heavy meal witha light salad.This one is great since it uses delicious root veggiesfrom the fall harvest.

1 large carrot, shredded*1 large parsnip, peeled and shredded*1 small celeriac (celery root), peeled sliced and shredded1 large apple, sliced finely and doused with lemon juice¼ lb baby arugula (or any salad green)½ teaspoon orange zestSea SaltRice Vinegar or apple cider vinegar to tasteLemon juice and/or orange juice to tasteHandful of toasted walnuts, coarsely choppedHandful of organic raisins or currants1 teaspoon olive oilVegan mayo or mayonnaise to taste*use either a box grater or the grating plate of your food processor

Mix the shredded vegetables: carrot, parsnip, and apple andadd the orange zest. Add approximately ½ teaspoon of seasalt and 1 – 2 tablespoons vinegar and stir the vegetables(I use my hands.) Just a little vinegar will make the dish tastesweeter, not sour. Add the lemon and orange juice to taste.Put it all together - combine the vegetables with thearugula, raisins or currants and walnuts. Toss to stir. Adddesired amount of vegan mayo or mayonnaise.Optional additions: Spices such as cinnamon, nutmeg, clove,garam masala. Substitute almonds or pecans instead ofthe walnuts.

have done and with the life they have lived. If your aim in lifeis happiness, then non-attachment is surely one of the keyelements you should aspire to include in your arsenal. Theidea is rooted in the fact that the material world is alwayschanging. The only thing that does not change is the Self. Ifyou are rooted in oneness, then happiness, bliss and ecstasyare yours; but if you are rooted in the ever-changing world,then brief spouts of enjoyment are eventually followed withpain in relation to the degree of attachment you haveformed with your object of attachment. Non-attachment isoften misunderstood as not caring about the world. Nothingcould be further from the truth. Through the true practice ofnon-attachment people become like an actors on a stage,playing their role to the total amazement of their audience,but always aware that they are not the characters they play.We practice by developing the attitude of non-attachmenttowards everything that we do in life.

Embracing Love and Empathy

Emotional unrest is the cause of a great many problems, bothin our society and our personal lives. It was the reason I cameto yoga in the first place. Base emotions like fear, greed,anger, resentment, hatred, lust, and irritability to name a few,have devalued and even destroyed quite a few lives throughthe years. Yoga philosophy emphasizes two approaches, oneis controlling these emotions (which is very hard to do); theother is elevating the emotional energy and transforming itinto higher states of positive emotions. The philosophy ofBhakti Yoga is essentially about the second approach, andhow we can achieve personal growth through thetransmutation of lower energy states into love and empathy.A well-known yogic greeting says: “I honor the divine sparkwithin you.” It simply acknowledges that besides the differencesbetween our material shells and mental modifications, ouressence is the same. We are all drops of water in the universalocean of consciousness. This idea rhymes perfectly withmodern physics, the idea that everything is basically madeup of the same energy, that we are all part of one cosmicocean. Another yogic phrase says: “Lift the veil and beholdme everywhere.” It refers to the idea that the materialuniverse is indeed an illusion, a dance of light and shadows,and that the true essence of things is always the same, eventhough it goes bymany names, such as the Divine, SupremeConsciousness, God, or the One without a Second. If youstart practicing this idea, seeing the divine spark in everyoneand everything, you will feel more love and empathy. Youwill experience the interconnectedness of the universe (oneverse) and realize that you are an integral part of it; that ifyou harm another, you are basically harming yourself; thatthe material world is continually flowing in and out ofexistence, but only the One without a Second, the Divine,remains constant, and that your innermost essence, your

Self, is part of that universal and never ending consciousness.

Evolving from Relaxation to Concentration to Meditation

Relaxation and concentration are necessary preparations formeditation. A person that cannot relax cannot meditate. Aperson that cannot concentrate cannot meditate. That is whyI always teach my students a progression from relaxationmethods, to concentration practices, to meditation techniques.It’s like learning how towalk before learning how to run, or likelearning the alphabet first, then words, then sentences andso on. While there are hundreds of relaxation, concentration,and meditation techniques available there is only one keyto success and that is practice! Decide to use your chosenmethod often, preferably every day to reap the benefits,including more energy, increased focus, better sleep,balanced physical functions and less stress. Scientific studieshave confirmed that regular relaxation, concentration, andmeditation practices can promote restful sleep, stabilizeblood pressure, relax and open arteries and blood vessels,decrease anxiety, and stimulate the body’s regenerativefaculties. But the main reason to practice this evolutiontowards meditation is to reveal the unchanging andeverlasting spirit (Atman), which is said to be the source ofunconditional happiness.

Aim for Progress – Not Perfection

One of my favorite quotes is by Dr. David D. Burns. He says:“Aim for success, not perfection. Never give up your right tobe wrong, because then you will lose the ability to learn newthings and move forward with your life. Remember that fearalways lurks behind perfectionism. Confronting your fearsand allowing yourself the right to be human can, paradoxically,make yourself a happier and more productive person.” Thedevelopment of the relative self should never be aboutreaching perfection, it should be about progress. The onlyway that I know that my self-developmental efforts havebeen fruitful in the past twenty years is that I have personallyprogressed and have been blessed with glimpses of theUltimate Self. Whenever I get bogged down in ideas aboutperfection, telling myself that “I should be doing better”, mywife reminds me to compare my current state to that of afew years ago. Fortunately I seem to be progressing most ofthe time. Being human is the same as being fallible andimperfect, so the only way to find perfection is to imagine itand project it onto a person that has passed away. Livingpeople are not perfect, but we can develop ourselves andprogress. An acquaintance of mine said it well: “There areno obstacles in your path, because the obstacles areyour path.” �
