Fisherman’s Tale – Scallops We have a very special arrival at this week’s market – gorgeous SCALLOPS!

While a little more pricey than the fish that usually make their way to the farmers

market, scallops are a delightful complement to your favorite seasonal vegetables.

Their soft fleshy texture and delicately mild sweet flavor are enjoyed by even those

who are not particularly fond of fish or other shellfish.

Scallops are found in many waters throughout the world. The great scallop isabundant in the Mediterranean, while the sea and bay scallop are found

concentrated in the Atlantic Ocean off North America.

Scallops are a very good source of a very important nutrient for cardiovascular

health, vitamin B12. I n addition to their B12, scallops are a very good source of 

omega-3 fatty acids and a good source of magnesium and potassium which also

play a part in maintaining a healthy heart. Come enjoy this magnificent protein!

Nutritionist Notes – Collard Greens Collards are leafy green vegetables that belong to the same family that includes

cabbage, kale, and broccoli. While they share the same botanical name as kale,

Brassica oleracea, and some resemblance, they have their own distinctive

qualities. Collards' unique appearance features dark blue green leaves that are

smooth in texture and relatively broad. They lack the frilled edges that are so

distinctive to their cousin kale.

Look for collard greens that have firm, unwilted leaves that are vividly deep green

in color with no signs of yellowing or browning. Leaves that are smaller in size will

be more tender and have a milder flavor. They should be displayed in a chilled

section in the refrigerator case to prevent them from wilting and becoming bitter.

Place collard greens in a plastic bag, removing as much of the air from the bag as

possible. Store in the refrigerator where they should keep fresh for about three to

five days.

Collard greens are an excellent source of vitamin K, vitamin A (in the form of beta-

carotene), vitamin C, manganese, folate, calcium, and dietary fiber. In addition,

collard greens are a very good source of magnesium, iron, vitamin B2 and vitamin

B6. They are a good source of vitamin E, protein, omega-3 fatty acids, potassium,

vitamin B1, vitamin B5, niacin, zinc, and phosphorus,
