    While the stylish new Ubud Adventure Centre only openedits doors in July 2013, the real story begins back in the 1980swhen an English man named Nigel Mason fell in love with theisland, and a Balinese woman named Yanie. The couple soonopened Yanies, a buzzing, much loved restaurant in Kuta,before going on to set up Bali Adventure tours in 1989 andthe Elephant Safari Park in 1997. The original Yanies closedsometime ago, but has been reborn as a semi ne diningrestaurant at the new centre.

    A: I think 2014 will be a challengingyear. The global economy remains quiteweak and Indonesia is not immunefrom this, though it is still much betterpositioned than many other economiesto deliver growth. 2014 may turn outto be a bit of a transitional grind. Chefsand their restaurants will need to bemore creative in terms of the productthey serve and the costs within theirbusiness. My experience through other

    crises, and my best advice is: Whentimes are tough, dont look for cheaperingredients. Compromising the qualityof your dish is a killer. Look elsewhere ttrim costs if you need to, or raise prices

The food scene is great.My favourite Indonesian food isPadang and I love eating it forlunch; Beef Rendang, Perkedel,etc. The Jakarta food scene hasalso changed dramatically andis slowly catching up with otherbig cities around the world interms of diversity.     Pork leg/ baconSalted water 400 grams butter 7 eggs200 ml white wine

    1 lemon10 white pepper corns10 coriander seedsCloves, star anisShallots & garlicPotatoesParsleyAsparagus

    Set the pork leg/ bacon in saltwater (30 grams per litre ofwater) sprinkle with cloves, staranis, chopped shallots and garlicand leave for two nights. Remove

    the brine, cover in foil and cookat 90 degrees Celcius for 11hours. Increase the temperaturefor one further hour to crispen.Peel the potatoes and boil untilsoft. Strain, add butter andparsley,keep warm. Cook eggsfor seven minutes in boilingwater, peel and keep warm.Cook the asparagus for veminutes in salted boiling water.Finally prepare the hollandaise

    sauce by reducing whitewine with juice of onelemon, shallots, whitepepper corns andcoriander seeds until

    remaining liquid is onethird. Strain and cool. Addsix egg yolks and whisk until thesauce starts to thicken. Place ona low heat and keep whiskinguntil soft peaks start to form.Slowly add 300 gram of softenedbutter.Now relax and enjoy a specialhomemade dinner with the mostspecial people in your life
