HOW TO PRESERVE A SAND DOLLARIt's always special to find a Sand Dollar at low tide. Amelia Island's native tribes used Sand Dollars as ceremonial pieces. Here's a tip from our Naturalist on preserving a Sand Dollar:

Soak the shells overnight in a solution of one part bleach and three parts water. Carefully, rinse off the shell and place on a paper towel to dry. Protect the shell from moisture with three to four coats of spray varnish. A safe recipe for kids is to use a mixture of white liquid school glue, water and brush on. Kids: ask your parents for assistance.

PROTECTING NESTING SEA TURTLES Summer is nesting season for the endangered Loggerhead and Leatherback sea turtles on Amelia Island. Traversing the great oceans, these magnificent creatures return faithfully to nest within a few hundred yards of where they emerged as hatchlings years ago. After incubating for approximately two months, the nests erupt with hatchlings making their way to the water by moonlight.

To protect turtles and hatchlings, please be sure to smooth and fill all holes along the beach, avoid using bright lights at night, and never approach or disturb a sea turtle or turtle nest.

SKINCARE TIPS FROM THE SPA1. Spring clean your skin care shelf-When

in doubt, toss it out. Go through yourcosmetics, products, and sunscreens, andtoss the things that have been arounda little too long. Remember this rule ofthumb: Anything you apply near the lipsor eyes should be tossed after a year. Also, throw your dingy makeup bag in the washer. If it can’t be laundered, clean with anantibacterial cleanser.

2. Lighten Up-Springtime generally meanslighter make-up. Switching to lightercleansers will lightly grab away make-up andhydrate spring skin, without clogging poresor leaving a sticky residue, which can lead tounwanted breakouts.

3. Buff away winter skin - Bring out its brightnessby exfoliating a little more in the spring. Inthe winter, when your skin is drier and moresensitive, it’s best to exfoliate just once a week. But in the spring, exfoliation removes oldlayers of skin and helps topical treatmentsabsorb into the skin better.

4. Trade in the cream for a lotion - Moisturizeris crucial to any skincare routine, but usingheavy creams in the spring can actually causeannoying breakouts. In the spring, switchfrom very heavy, hydrating moisturizer andoil-based products to lighter formulations, like a hydrating serum.

5. Time to up your SPF-Apply every morning, and reapply every two hours. If you get wet, apply every hour. The season’s only justbeginning, but UVA and UVB filters canaffect your skin through glass and clouds too.

BOURBON LEGENDS AT THE LOBBY BARA tempting array of legendary experiences awaits guests at The Lobby Bar. Let mixologists and chefs guide you on an exploration of fine spirits and cocktail culture from First Call to the last drop of a rare and coveted bourbon legend.

FIRST CALL*Gather with us in The Lobby Bar at 5:45 p.m. each day for First Call, the presentation of a house-infused small batch bourbon. Crafted of whiskey drawn from our own aging barrels, the spirit is steeped in a unique daily recipe of fruits, spices and aromatics for a minimum of six hours before being decanted for our guests. The infusion is available only until that day's spirit is sold out.

TABLESIDE INFUSION**Watch as our mixologists craft a personal infused bourbon at your table, tailored to your individual tastes, using a variety of fruits, nuts, chocolate and fragrances - all married to create a distinctive spirit especially for you. Serves two guests.

THE SMOKED OLD FASHIONED*The signature cocktail of The Lobby Bar is a classic recipe elevated to new heights. Made with Hickory Smoked Belle Meade Bourbon from our own private-label barrel, St Germain liqueur, a Luxardo Cherry, Orange Garnish and a dash of Orange Bitters, the cocktail is presented to you with a flourish, under a cloche of hickory smoke.

THE SUSHI BARAmid the exciting energy of The Lobby Bar is the cool and elegant Sushi Bar. There, you'll find a menu that pays homage to local flavor. Taste delicate tempura shrimp, spicy tuna, avocado, cucumber, scallions and wasabi mayo of the Fernandina Roll – a tribute to Amelia Island's status as birthplace of the shrimping industry. YA selection of fine sake is the perfect complement to your sushi.

INSPIRED BY AMELIA ISLAND’S SPANISH HERITAGESet to a backdrop of ocean breezes, the newly-launched Coquina restaurant offers guests access to an innovative, oceanfront restaurant with a culinary presentation focused on seafood and coastal dishes inspired by the island’s Eight Flags heritage. Gorgeously casual, this al-fresco restaurant delights the senses with lunch served poolside and dinner served beneath incredibly lit palapas as it embraces the bold, free-spirits of Amelia Island lore. Overlooking the resort’s dune-lined beaches, the Coquina menu features dynamic flavors inspired by the island’s time as a Spanish territory, including a signature ceviche from freshly-caught fish and sharable seafood tapas. A full-bar overlooking the ocean features signature cocktails and flavorful sangrias.

INTRODUCING THE NEW DESTINATION FOR OCEANFRONT AL-FRESCO DINING

THE HISTORY OF COQUINACoquina is the Spanish word for the rock formed by combining salt water, sea shells, and dune sand. During Amelia Island’s Spanish Colonial period, settlers used coquina to form walls and roads in settlements along Florida's Atlantic Coast. Even today, coquina-walled homes host neighbors and friends for festive nights spent under the stars. Coquina blends the classic elements of Amelia Island: the sand, the sea, and our unique heritage.

SUMMER SIZZLES AT

SALTExperience fine dining on the water's edge in our AAA Five-Diamond signature restaurant under the direction of Chef de Cuisine Rick Laughlin.

SALT AWARDS AND HONORS AAA Five Diamond Award Florida Trend’s Golden Spoon Hall of Fame Host, James Beard House Dinner Forbes Travel Guide Top Ten Kitchen Tables in the United States

FINE DINING ON THE OCEAN’S EDGEFamiliar ingredients are elevated to new heights as Chef Rick’s goal is for guests to involve all the senses, be it the perfect wine pairing, an artful plating or the gentle wisp of hardwood smoke from a plate of shrimp and grits. A name inspired by its remarkable natural setting and as tribute to cooking’s most valuable seasoning, Salt delivers a feast for the senses. Steak and Eggs is a signature dish, served sizzling on a 250-million year old Himalayan salt block that has been hand-cut by Chef Rick. Humble yet elemental, the dish started a trend that has been imitated but never duplicated, owing to Salt’s unique sense of place. Overseeing every detail is Chef de Cuisine Rick Laughlin. His philosophy of “keeping flavors familiar, and most importantly, keeping the integrity of the ingredients” shines through in his approach to Contemporary American Cuisine.Among 31,000 restaurants vying for AAA’s highest award, Salt has earned best-of-the-best Five Diamond status for the last nine years in a row. Salt is one of only three such honored restaurants in the state of Florida. Chef Rick has also earned the praise of his peers, having been selected to cook at the celebrated James Beard House. In addition, Salt also holds the esteemed Golden Spoon award from Florida Trend, the most sought-after award for Florida restaurants.
