The fact that Basel has such in-credible highlights on o�er this summer season – among them three concurrent art exhibitions showing works by Pablo Picasso –is a great pleasure and shows once more how exceptional the range of cultural events here in the tri-border area is. But it is not just the artistic and cultural highlights that makea visit to Basel and the GrandHotel Les Trois Rois worthwhile.
When I look back over my two decades of working in our venerable Grand Hotel, it is the encounters with people from the most varied
cultures that have left the most lasting impression: for example, the visitof the Japanese Empress Michiko to the Les Trois Rois or the quartering ofa football team, for whom I had to arrange a delivery of the highly prized Manuka honey from New Zealand. But in terms of change too, the recent years have been exciting and intense, especially during the total renovation and reopening of our hotel in 2006, following which the Les Trois Rois quickly made its way back into the “Champions League” of the best city hotels in Europe.

My work as a purchaser for our Grand Hotel means that I have to jugglea wide variety of tasks – and it is just that that makes the job so exciting.The schedule for the year is marked out by the organization for major events like the Basel Fasnacht, important international trade fairs in Basel and in-house events. But smaller projects such as acquiring new laundry or snacks for our minibar can rouse my enthusiasm too, because they mean I have to immerse myself in new topics and materials, visit fairs in Switzer-land and abroad, to ensure that I have completely up-to-date information on the latest trends and products. Dealing with beautiful tableware, ¡ne glasses and exquisite cutlery is one of the most fascinating aspects of my profession. Because I enjoy the company of other people, the daily collabo-ration with my colleagues, from so many di�erent cultural backgrounds, is always a very enriching experience.
I do this far too rarely – but in peaceful moments my favourite destination for a short break is our beautiful terrace where I can enjoy the tranquillityof the Rhine ¢owing below – or I treat myself to a swim in its cool waters and drift through the city in the river’s tow. Highly recommendable!

Salmon tartar with cucumber and avocadofrom Pablo Löhle, Executive Chef
Salmon tartar320 g Scottish salmon 1 tsp each radish and diced shallots ½ tsp grated ginger 1 tsp each chives, coriander and sesame oil 1 tbsp each soya and sweet chili sauce 1 tsp salt and pepper Tabasco, olive oil Cucumber yoghurt brew2 cucumbers 100 gr each Greek and plain yoghurt 1 bunch each dill and fresh coriander A pinch salt and cayenne pepper Tabasco, white balsamic vinegar, Xantana (to bind)
Guacamole2 ripe avocados ½ lime juice 1 tsp each mustard, plain yoghurt, ¡nely diced shallots, coriander and chives 1 tbsp olive oil1 pinch salt sambal oelek, Tabasco to taste Cucumber ice450 ml fresh cucumber juice 135 g glucose syrup 20 g rice vinegar 25 g each invert sugar and passion- fruit pulp ½ sheet of gelatin 13 g each champagne vinegar and gin 5 g sugar salt, cayenne pepper
Salmon tartarSprinkle the salmon ¡let with salt and sugar and leave it to draw for 30 minutes. Pat it dry. Cut it into small cubes, add all the other ingre-dients and mix. Season to taste.
Cucumber yoghurt brewPass the cucumbers, dill and coriander through the centrifuge. Mix the resulting cucumber juice with the two yoghurts. Then season to taste with the other ingredients and ¡nally bind it with Xantana.
GuacamoleMix all the ingredients together and smash with a fork. Season to taste.
Cucumber iceBring the fresh cucumber juice, glucose syrup, rice vinegar, invert sugar and passion fruit pulp to the boil. Dissolve the soaked gelatin in the mixture. Mix in the champagne vinegar, gin and sugar. Season with salt and cayenne pepper. Turn into sorbet using an ice-cream maker.
To serveServe the salmon tartar in 4 deep plates and smooth it out carefully using a ring. Place a dollop of cucumber sorbet and a dollop ofguacamole on the top. Decorate with coriander and petals. If desired, garnish with a bread crisp. Pour the ice-cold cucumber decoction round the tartar and serve.
Christoph Kokemoor “Sommelier Award 2019” recommends: a lightly herbaceous white wine such as for example the Château Souaillon, Viri-dis Sauvignon Blanc, to accompany this salmon tartar. Bon appétit!
