Start your culinary journey with the North Cape Coastal Drive and taste what happens when land meets sea! Home for two of Prince Edward Island's original industries - agriculture and fishing. Experiencing the flavours of PEI can include stopping at a potato stand set up at the end of a farmer's lane or dropping in at the local wharf to pick up the catch of the day. Want to try the bread of the Island's first inhabitants, the Mi'kmaq, called "lusgnign"? Care to taste a part of the rich Acadian culture called "râpure"? Feel brave enough to savour "seaweed pie" or “potato fudge”? The sources of good food are varied and sometimes unexpected when your culinary journey takes you to an area locals refer to as "Up West".

[1] Concerts in the GardenThe historic garden of Wyatt Heritage Properties in Summerside comes alive on Wednesday evenings throughout July and August with the sounds of local musicians in concert. Well, the esteemed Island shellf ish doesn't actually wear socks.

But as they grow, they are suspended in socks (mesh sleeves) in

the water. This process keeps them far away from the bottom

dwelling predators, allows them to have greater access to food,

and ensures cleaner shells. The result is a high quality mussel,

internationally renowned for its superior f lavour.

INGREDIENTS¼ cup (60 mL) finely diced onion3 tbsp (45 mL) diced celery3 tbsp (45 mL) minced garlic 2 tbsp (30 mL) olive oil

½ cup (125 mL) dry white wine4 lb (1.8 kg) Island Gold mussels2 tbsp (30 mL) chopped fresh parsley, tarragon and/or chives2 tbsp (30 mL) unsalted butter (softened) salt and pepper

DIRECTIONSHeat a medium-sized pot to medium heat. Sauté the onion, celery, and garlic in the olive oil until translucent, about 2 minutes. Increase the heat to high, add the white wine and bring to a boil.Add the mussels, cover and cook for another 6 minutes. Remove the mussels from the pot, transfer them to a warmed serving dish and set aside. Reduce the liquid by half to concentrate the flavours. Add the herbs, then whisk in the butter and season to taste with salt and pepper. Pour the sauce overtop the mussels to serve.

VARIATIONSOnce the sauce is reduced by half, add 2 cups (500 mL) small diced tomatoes (canned are fine) before you add the herbs. Whisk in the butter and season to taste with salt and pepper.

- OR -

Once the sauce is reduced by half, add ½ cup (125 mL) whipping cream. Return to a simmer and then add the herbs, whisk in the butter and season to taste with salt and pepper.

Whichever option you choose, serve with lots of crusty French bread for dipping.

INGREDIENTSMARINADE1 cup (250 mL) balsamic vinegar ½ cup (125 mL) brown sugar (packed) salt and pepper ¼ cup (60 mL) maple syrup3 tbsp (45 mL) chopped fresh oregano1 bay leaf2 tbsp (30 mL) minced garlic dash of Tabasco sauce

STEAKfour 12 oz (375 g) rib eye steaks (bone-in)

POTATO SALAD3 lb (1.5 kg) baby red potatoes (parboiled, cooled, cut into wedges)1 medium red onion (quartered, sliced)1 bunch chives (snipped) 1 red bell pepper (sliced thinly)1 green bell pepper (sliced thinly)2 tbsp (30 mL) Dijon mustard 2 cups (500 mL) sour cream salt and pepper1 cup (250 mL) bacon bits (optional)

DIRECTIONSPlace all the marinade ingredients in a large bowl. Whisk until they are well combined and season to taste.

Place the 4 steaks in the marinade for 1 hour while you assemble the potato salad. When the potato salad is ready, the steaks should be cooked to order on a preheated grill for best results.

For the potato salad, make sure the potatoes have cooled completely before you begin. This allows the starches to relax so the potatoes will not be as sticky or difficult to handle. Fold the potatoes, onion, chives and bell peppers together in a large mixing bowl. Add the Dijon, sour cream and Tabasco and gently fold together to coat everything evenly. Season to taste and add the bacon bits (if desired).

DIRECTIONSPreheat the oven to 350°F (180°C). Spray a deep 9- x 13-inch (3.5 L) baking pan with cooking spray, or grease and flour.

For the cake, place the mashed potatoes in a medium bowl and gradually whisk in the water to form a smooth mixture. You may not need all the water. Do not over mix. Let cool to room temperature.

Sift together the flour, cocoa powder, baking powder, coffee granules, baking soda and salt. Set aside.

Using the paddle attachment of a mixer, combine the butter, sugar and vanilla. Beat at a low speed to blend, and then beat for 1 minute at medium speed, scraping down the bowl and paddle with a rubber spatula once or twice. Add the eggs one at a time, beating in at a low speed after each addition until blended. Scrape down the bowl and paddle with a rubber spatula again. Increase the mixer speed to medium and beat for 1 more minute.

Using the lowest speed, add the sifted dry ingredients in 3 additions and the mashed potato-water mixture in 2 additions, beginning and ending with the dry ingredients, beating just until blended after each addition. Scrape down the bowl and paddle occasionally with a rubber spatula. Turn the batter into the prepared pan. Spread it level, making sure the batter is pushed right into the corners, and then run the batter slightly higher along the pan edges and in the corners.

Bake on the centre rack of the over for about 30 minutes. The cake is done when a toothpick inserted near the centre emerges with a few moist crumbs still clinging to it. Do not over bake! Remove to a cooling rack, let cool in the pan for 5 to 6 minutes then turn out to cool completely.

For the sauce, combine all the sauce ingredients in a small saucepan and mix well. Bring the mixture to a boil then reduce the heat and simmer for about 5 minutes, stirring occasionally. The sauce is finished cooking when it has a smooth, viscous texture. Remove from the heat and strain out the seeds through a small sieve. Set aside to cool.

To serve, sprinkle icing sugar over the entire surface of the cake. Cut the cake into the desired shape and size. Using a large spoon, form pools of raspberry sauce on large dinner plates. Place a piece of cake on each plate and garnish with a few fresh raspberries.

INGREDIENTS1 medium red onion (small dice) 1 clove garlic (minced) 3 tbsp (45 mL) olive oil 2 pinches saffronfour 1 lb (500 g) fresh lobsters

¼ cup (60 mL) dry white wine1 cup (250 mL) fish stock1 lb (500 g) unsalted butter (cold, small cubes) salt

DIRECTIONSOver medium heat, sauté the onion and garlic in the olive oil until translucent, 2 to 3 minutes. Add the saffron, stir and deglaze the pan with the white wine. Add the fish broth and bring to a simmer. Allow to cool slightly, and then transfer to a blender and purée until smooth. Strain through a fine mesh sieve. Return the puréed liquid to the pot and, using minimal heat, begin adding the cubes of butter while whisking to create an emulsion. Reserve and keep warm.

Bring a large pot—large enough to hold all 4 lobsters at one time—of water to boil, adding salt to taste. Place the lobsters in the boiling water and cook for 5 minutes. Begin timing once the water has returned to a boil. Remove the claws from the lobster, let cool and place the remainder of the lobster back into the boiling water for an additional 5 minutes. Remove the lobster from the pot. Remove the meat from shells, keeping the tails and claws intact. This is an art in itself. The tail can be removed from the shell with a fork quite easily but the claws require a bit more finesse to remove them fully intact. It is best to remove the claws while they are still hot as you can handle.

To serve, warm the poaching liquid gently, just until you see bubbles gradually breaking the surface (about 175°F/80°C). Place the tail and claw meat in the poaching liquid and cook for 4 to 5 minutes to warm through. Serve the poaching liquid as the sauce.
