Cooking with LavenderBy Sarah Richards

Lavender doesn’t turn your food purple, but it can make your food more interesting and delicious. Using lavender in the kitchen is an up-and-coming art enjoyed by many professional chefs and home cooks. It brings a flavor that varies with the ingredients that are being used–sometimes floral, a bit of mint, or a musky herby flavor.

Lavender combines differently with different foods and that is part of the art of learning to use it. If used correctly, it will augment the food’s flavors and not stand out screaming “Hey! I’m Lavender!” Like any herb, lavender should blend into the food, connecting and bringing out the flavors of the dish.

The best lavender to use for cooking

is Lavendula Angustifolia (any of the varieties of that species). The other com-mon species in North America such as Lavendula Stoechas (commonly known as Spanish Lavender), and Lavendula x-intermedia are not good to use in food. There is one exception, Lavendula x-intermedia “Provence” is fine to use for cooking. Use it dried (whole or ground) or fresh. It is not a good idea to use the essential oil for cooking, it is contro-versial as to whether it’s OK to take internally.

In cooking with lavender keep one thing in mind: be sparing. Most people use the flowers, but some use the leaves, too. To prepare lavender flowers for culinary use you want to have flowers from plants that you know have not been subjected to herbicides or pesticides. Lavender is a natural anti-microbial, most bugs don’t like it at all, so there is really no reason to use anything toxic in grow-ing it. You can use it fresh, but, since it is only available for a small portion of the summer, it’s easier to use it dried.

Cook with lavender whole or ground. Grind it using a coffee grinder because it’s better to cut it rather than smash it in a mortar and pestle (unless you are mud-dling the lavender for a mojito). Whole lavender is good for infusing into milk or cream for dishes such as crème brulée, ice cream or flan. Ground lavender is good for easy dispersal into a recipe such

as cookies, cakes or shortbread. Using it in desserts is more common, but lavender is also used for savory dishes, such as in rubs for steaks, chicken, or fish. Whole lavender is also good for using in infu-sions and teas. For a good cup of tea, it’s best combined with other herbs or teas. Make a strong infusion of lavender to use in making lavender lemonade (substitute that infusion for one of the cans of water when you use frozen lemonade).

In our kitchen at Lavender Wind, we make cookies, cupcakes, candies, jams, granola, shortbread, French Macarons, Mustard Sauce, Quiches, Pies and more. Sadly, I have to admit that after having made hundreds of Lavender Chocolate Chip Cookies I can no longer eat them without lavender– they just don’t taste as good!
