    I am a people watcher. Everywhere I go, I have a strange com-pulsion to observe not only my surroundings, but also what is going on around me. Being with my family for Valentine, I had the opportunity to dine at an elegant buffets, which allowed for a fair amount of people watching. I made many observations that were startling, appall-ing, and downright baffling.

    There seems to be something about dining at an all-you-can-eat buffet that brings out the true colors of people.

    Here are a few tips on how to behave at a buffet:

    If at all possible, do a preliminary scouting of the buffet to plan your meal and make the best choices.Make a plan in your head on how you want to eat. As you go up to get food, talk to yourself (not out loud!) about what would be the healthy choices or convince yourself that some really bad choice doesn't look all that good.The most important part of the process - MINI TASTING POR-TIONS. Make a couple of trips to get your tasting portions. As you taste, decide if the item really merits getting more. If you get a tasting portion and hate the food, don't feel like you have to finish it.

    When you identify the really, really great items, go back and get a little bigger portion to enjoy it. When moving on to the dessert items, decide wisely!

    LOCAL RECIPE of The week - Pilau

    This is a series to provide the recipe of one local Tanzanian dish every week. For this week, we have my all-time favor-ite Pilau. Pilau is a dish in which rice is cooked in a sea-soned broth. In some cases, the rice may also attain its brown color by being stirred with pieces of cooked onion, as well as a mix of spices. Depending on the local cuisine, it may also con-tain meat, fish, vegetables, pasta, and dried fruits.

    Ingredients for two servings:1 cup Basmati rice, 2 tbsp olive oil, cup Onions, 1 tbsp Crushed garlic, 1 tbsp Crushed fresh ginger, 1 and 1/2 tbsp Pilau-masala, 2 to 3 cups Chicken broth (boiling) optional, 1/2 cup Coconut milk (canned) and salt.

    ProcedureIn a big pot, heat oil on medium heat. Then, add rice and onions. Stir until the translucent color of rice starts to turn white. Add garlic, ginger, and Pilau masala. Keep stirring until the garlic is cooked. In a separate bowl, mix the coconut milk with cup of chicken broth. Add the coconut mixture to the rice. Cover the pot and turn heat to the lowest settings. Adding chicken broth cup at a time to the rice until it is cooked.

    What to Wear Wherever You Go.

    Perfecting an outfit so that you get it right each time will require some forethought about comfort, suitability and what looks best on you. Once you've worked out these things, you'll be able to apply the method from this point on.

    A. Planning ahead

    Think about the event before the day or evening it happens. Consider your trusted con-fidantes such as friends, a spouse, your children, etc. Check the chosen clothes beforehand.

    B. Choosing the clothing

    Choose according to sea-son. If it is cold, wear warmer clothing, if it is hot, wear cooler clothing. Choose by style. It might be fashionable, but does it fit and look great on you? If not, don't force yourself into it. Make sure all of your clothing fits nicely. Consider comfort. Prefer simplicity over all else. Wear minimal make-up if you're going all out with the clothes and more attention-grabbing makeup if your cloth-ing is simpler (e.g.: red lipstick and eyeliner). Own it. If you show up in a place and realize you're dressed completely wrong, own it.

    The Tanzanian government has recently announced that approximately 5,900 out of 15,920 villages have been con-nected with electricity to the na-tional grid as part of the Rural Elec-trification Densification Program which seeks to stimulate economic growth, improve households in-come earnings and raise quality of life among the villages population.

    The announcement was done by Tanzanias Energy and Minerals Minister, Prof. Sospeter Muhongo, whom in a recent meeting with lawmakers explained that the proj-ect is being implemented in three phases with the first one 100% completed, the second one at a completion rate of 75% according to schedule and the third phase to take off soon.

    The second phase has not been implemented at a faster rate due to lack of funds since last year when it

    was undertook the countrys budget was reduced to address funds to the general election process.

    The project is aligned with Tanzanias government targets and REAs mission to promote and facilitate availability of affordable modern energy services in rural areas of Tanzania mainland through the con-cept of densification, which consists on the extension of connections in areas that are close to an existing grid. Tanzania expects to con-siderably raise the current 21% access to electricity in rural areas; however, a specific target percentage and due dates have not been released yet as the Rural Energy Master Plan is still in preparation phase.

    Total Energy Ventures (TEV), the venture capital fund of France-based Total S.A. (FP:EPA), has recently acquired stakes in California and Arusha based Off-Grid Electric (OGE) and California based Power hive to expand its renewable energy business line in Tanzania.

    The stakes acquisition seeks to boost OGEs development of solar home systems and battery storages to power LED lights, mobile chargers and small electronic appliances that are currently providing light to 10,000 new customers each month with the aim to reach the 1 million custom-ers by 2017. On the other hand, it also seeks to boost Power hives development of operation of solar micro-grids with battery storage and local distribution systems that supply electricity to hundreds of homes in off-grid rural communities in Tanzania and Kenya.

    Tanzania is closely working with international private investors and devel-op partners to boost its power capacity from the current installed 1,754 MW to 2,780 MW by end of 2016 with the usage of clean energy proj-ects according to the US Agency for International Development (USAID).

    This is why initiatives as the Off-Grid Energy Challenge are being promoted to encourage entrepreneurs in renewable energy to support access to power to rural communities by the implementation of solar-powered mini-grids and home solar systems. Total is planning to invest USD 500 million a year to expand its business line of biofuels and solar power generation to tap the fast growing renewable market in Tanzania and other coun-tries in East Africa.

    The Selous Game Reserve is Africa's largest game reserve and one of our favourite wildlife viewing ar-eas located in southern Tanzania and far from the madding crowds,.

    It really is a hidden gem! The rivers and lakes of the Selous are the lifeblood of a park that hosts some fabulous game, in-cluding elephant, wild dog, buffalo, hip-po, crocodile and fantastic prides of lion.

    Standard daytime game drives are just the beginning. The Selous also offers some of the finest boating safaris in Af-rica, along with some of the very best walking operations on the continent, including in particular at Siwandu, Beho Beho and Sand Rivers Selous.

    Selous is a classic dry season park, with the game getting progressively better the later in the season you travel.

    Lake Manyara is best used as a soft in-troduction to a safari. While the scenic beauty of this park certainly makes it worth a visit, the game viewing here pales into insig-nificance when compared with that on offer in Tarangire, the Ngorongoro and the Serengeti.

    Famous for its tree-climbing lions, flamingos, breathtaking scenery and the soda-ash lake in the centre, Manyara merits a day trip but not much longer. Lake Manyara is a lovely scenic park on the road from Arusha to the Ngorongoro Crater, famous for its tree climbing lions, good elephants and baboons. The lake itself takes up

    much of the park, leaving a strip of land running along its shores where game concentrates.

    According to the regional migration pattern, Manyara's official peak season is from July to October. However for such a small park this should not be a deciding factor; if you are in the area and have time, Lake Manyara is consistent-ly good as a soft game viewing park at any time of the year. The main activity for visitors to Lake Manyara is day time game driving, although the park has recently started to offer night safaris and the camps deep inside the park offer short walks.
