BRIGHT CHEESE AND BUTTERTastings, tours & shopThe beginning of Bright Cheese and Butter dates back to 1874 when a group of local farmers decided to establish a cheese factory to turn surplus milk into cheddar. By the 20th century, Bright Cheese had grown, along with the demand for Canadian cheddar – making it the country’s no. 2 export. This success sparked the establishment of 1,242 cheddar factories in Ontario.Over 140 years later, they are still producing award-winning cheese at their 1800’s factory in Bright, Ontario, including: aged cheddars, Asiago, Colby, Monterey jack, feta, havarti, specialty avours and, of course, curds. All available at their shops.

GUNN’S HILL ARTISAN CHEESETastings, tours & shop Shep Ysselstein grew up on Gunn’s Hill Road, site of his family’s dairy farm. After getting a business degree, he studied cheesemaking in the United States, British Columbia and Switzerland. He had found his passion and decided to bring it home. This artisan cheese factory specializes in farmstead cheese using milk from his parents’ farm next door. Today, Gunn’s Hill creates several Swiss-style, washed-rind varieties, including Oxford’s Harvest (also available in beer and wine soaked/washed); 5 Brothers, Handeck and cheddar curds along with many others. Visit the retail shop and factory to watch the cheesemaking process through the viewing window. Or call ahead and book a tour. 445172 Gunn’s Hill Rd., Woodstock, ON.519-424-4024gunnshillcheese.ca @GunnsHillCheese @GunnsHillArtisanCheese
LOCAL DAIRY PRODUCTSPurchase at Tremblett’s Independent Grocer For over two decades, Amarjit Singh and his family have been producing high quality, artisanal, local and all natural dairy products out of a historic cheese factory. Though it is located in Ingersoll, the unique products created on site have been inspired by a varied and international world of cheeses. Amarjit rst learned to make Indian style cheese from his mother at home. The family tradition served him well as he created more than 20 vegetarian products including yogurt (also bu alo milk), cultured butter, paneer, Oaxaca, Chihuahua, crème fraîche , ghee, koch käse, dulce de leche, and cajeta caramel, produced under its Asli, La Vaquita and Perth County brands. Sample their products along the Cheese Trail and stop by Tremblett’s Independent Grocer, Ingersoll Foodland, Woodstock Sobey’s & Sundown Farms, to purchase your own. ASIAGOBright’s Asiago is a rm bodied cheese. Smooth of texture, the colour is white to light straw. This cheese starts on the palate mild but nishes with a robust avour reminiscent of Parmesan. The avour enhances with age.
EXTRA OLD CHEDDARA rm structured cheese, smooth and buttery with nutty notes throughout, and a hint of salt with a slight crystallization.
ASIAGOASIAGOASIAGO
Bright Cheese & Butter
HANDECKThis rm, washed rind cheese is made in a similar method to typical Swiss mountain style cheeses. Handeck, aged 16 months, is rm, rich with complex avours and a nutty aroma.
5 BROTHERS5 Brothers, named for the cheese maker & his 4 brothers, combines traits from Gouda and a Swiss variety called Appenzeller. It has a rm yet creamy texture and rich diverse avours with sweeter overtones.
Gunn’s Hill Artisan Cheese
FARMSTEAD PREMIUM GOLD GOUDAStarting o with fresh, raw milk that is thermalized, creates the full, rich avour in this cheese, which is slightly sweet and nutty. Aged 15 to 18 months, the hints of butterscotch and caramel on the nish, is characteristic of aged goudas.
WILD NETTLE GOUDAWild Nettle provides an herbal, earthy avour. When combined with the creamy farmstead gouda, these combinations create an exceptional taste experience.
Mountainoak Cheese
OAXACA Similar to mozzarella, Oaxaca (pronounced oh-hock-ah), is a hand stretched curd cheese, kneaded and gently wound in balls. Oaxaca has a savoury mellow buttery avour and is an excellent melting cheese. A little salty and mild avour makes it one of the most popular cheeses for preparing quesadillas, tacos and other dishes calling for mozzarella.
PANEER Paneer is a soft unripened cheese made only from milk and vinegar that has a very mild and fresh avour. Both soft and rm paneers are available and can easily be infused with avours from spices & herbs when cooking. Firm paneer is wonderful pan fried, alone or with spices.

DAIRY CAPITALOxford County produces
the most milk in Ontario... 286,000,000 litres.
In 1866 James Harris produced a 7300 lb wheel of cheese that went on tour to the New York World Fair and Great Britain. This marketing ploy resulted in Oxford shipping 300,000 boxes of cheese to Great Britain every year.
