Ingredients1kg pork belly Braised cabbage and speck½ savoy cabbage3 eschalots2 cloves garlic200g speck100g butter50g olive oilsalt Apple puree4 granny smith apples160g sugar50g water MethodPre-heat oven to 180 degrees.

Pork BellySalt pork skin, place pork (skin sidedown) onto baking paper and placeinto a roasting tray. Weight the porkdown by placing another tray (similarsize to bottom tray) on top of porkand fill the tray with water. Cook inoven for 2.5 hours. Braised cabbage and speck saladSlice cabbage and eschalots. Dicegarlic and speck (keep all ingredientsseparate). Heat oil in

frying pan, addspeck and cook till golden and all fatis rendered, then add eschalots andgarlic. Once the eschalots and garlicare sautéed add cabbage and cookuntil turning soft. Apple pureePeel, core and dice apples.Place apples, sugar andwater in a saucepan and cookon medium heat, stirring regularly(making sure it does not sticktogether). Once apples

q & AWhat do you leave out for Santa on Christmas Eve?My kids love putting out carrots for the reindeer and a bottle of beer for Santa, I have to make sure the beer doesn’t go to waste. What do you love most about Christmas?The best part of Christmas is catching up with friends and family throughout the festive month of December, and also reliving your childhood excitement and anticipation of Christmas day through your kids. What is the best gift you have ever received?A Tonka Truck when I was 7 years old.

What is your favourite Christmas Carol?The Australian version of ‘Jingle Bells’ which begins.....’Driving through the bush, in a clapped out Holden ute.....’

Who had the greatest influence on you during your childhood?My Dad played 1st grade Rugby League. He taught me you have to be self-disciplined and train harder than everyone else to get ahead. What was the happiest day of your childhood?Winning the under 13b Grand Final at Shark Park.

Who was your childhood hero?Sharks football player, Steve Rogers.

If you could be or do anything else, what would it be?My dream would to be a pro surfer
