Beetroot Tartare with Papaya Dressings(serves 4)

MethodPreheat the oven to 180 °C. Sprinkle sea salt onto a baking tray, place the beetroot on top and cook it in the oven for 45

minutes. Allow it to cool, then peel and cut it into very fine cubes.

Place the cubed beetroot in a bowl and add the shallots, thyme, Dijon mustard, lime juice, and salt and pepper. Add a

tablespoon of each dressing and mix it well.

To serve, place the cucumber slices in a circle on your plates. Use a circular mould to place the tartare in the middle of the

cucumber slices, garnish with the basil leaves and drizzle the remainder of both dressings around the cucumber.

• 500g beetroot, whole

• 10g shallot, chopped

• 15g thyme, chopped

• 4 tsp. Dijon mustard

• 4 tsp. lime juice

• 250g sea salt (for beetroot bed)

• A pinch of sea salt

Ingredients

• Carrots: 3

• Brown rice: 200gr

• Tajin: 100gr

• Azukis: 300gr

• Onions: 100gr

• Pumpkin: 200gr

• Kombu seaweed

Method:Soak the Azukis the day before. Peel the carrots and boil for 20 minutes. Strain them and add 100 grams of Tajin. Grind the cooked carrots and set aside. Put the rice in a saucepan (use half of a unit of rice for every unit of water). Cook on a low flame and cover. Remove from the heat when there is no water left. Set aside. Cut the pumpkin into medium pieces. Boil the pumpkin with the azukis and seaweed. Cook for 1 hour and fifteen minutes, it should end up being a bit dry. Assemble the dish, the carrots and Tajin first, add a timbale of rice on it, decorate with two dice of azukis and some sprouts.

Ingredients• 4 large floury potatoes

• A pinch of salt

• Caraway seeds

• 4 eggs

• Pepper

• Grated nutmeg

• 20ml olive oil

MethodBoil the potatoes with salt and caraway seeds until tender, drain and allow the steam to evaporate – never rinse

with cold water! Peel the potatoes and cut away a thin slice from the bottom of each – this will prevent them from

rolling around. Cut another 2-3 thin slices from the top and reserve, then carefully scoop out the potatoes and

press the scooped potato through a ricer into a separate bowl. Separate the eggs. Whisk the egg whites and a

pinch of salt until stiff and fold into the mashed potatoes. Season with salt, pepper, nutmeg and olive oil. Fill the

hollowed out potatoes with this mixture. Layer the potato slices over the top and brush with egg yolk mixed with a

little water. Bake in the oven at 180˚C for about 15-20 minutes.

Tucked away in the Tyrolean Mountains is the 30-room Ayurveda Resort Sonnhof, a perfect family-run hidden gem. We came across this jewel a few years back and were bowled over by their take on Ayurveda, which also offers exceptional value for money, and is only a couple of hours from London. Dr Alaettin Sinop leads the Ayurveda team along with Dr Guarav Sharma and a team of 13. They offer a huge range of programmes, from shirodhara to the full-on traditional Panchakarma detox, as well as acupuncture, and the best oil massages you will ever have. You have daily yoga, breathing exercises and mediation by the lake. The daily programme is comprehensive and there are lots to keep you fully occupied. The food is Vegetarian Ayurvedic, which may sound odd, but a meticulous amount of care and attention is put into both the foods presentation: colourful and enticing to the taste as well as being delicious and healthy.

Ingredients• 1 pear

• The seeds of 1 pomegranate

• 100ml pomegranate juice

• 100ml whipping cream

• 2 tbsp. soya sauce

• 1 tsp. of cinnamon

• A pinch of aniseed

MethodPeel and halve the pear then place in a saucepan. Pour pomegranate juice over the pear. Add half the cinnamon

and the aniseed, and bring to a simmer over a medium-high heat. Cover, reduce heat to low and poach gently for 10

minutes. Turn very gently during cooking to make sure they cook and colour evenly. Using a slotted spoon, transfer the

pear halves to shallow bowls and set aside. Boil the poaching liquid until it is reduced to around 30ml. Add the soya

and the remaining cinnamon to the cream. Whip the cream until light and fluffy. To serve, place a generous dollop of

soya cream next to each halved pear and serve with pomegranate seeds and the reduced poaching liquid.

MethodPeel the peppers and cut it into thin slices. Blanch it in slightly salted water, take it out and let it cool off. Cut the liscio into thin

slices. Season the beef strips with salt and pepper. Heat the olive oil in a fry pan, add the beef strips and roast them sharply

until they reach the right cooking point. Please note that this takes about max. 1-2 minutes. The meat should remain slightly raw/

saignant. Take it from the pan and let it drop off on a paper towel. Put the peppers slices into the same pan and roast them for

about 2-3 minutes at medium heat. Add the liscio and beef strips and mix it well. Arrange it on the plate. Heat the pepperoni

sauce and put it over the meat. Garnish with some crème fraîche and herbs bouquets. Mix the sweet corn and potato mash

with milk, cream, and butter and heat it well. Season it with salt, pepper and nutmeg. Cook the mini corncobs in salt water and

then roast them slightly in butter, then season them.

Sauté the minced onions and garlic in the olive oil. Add the washed and small cut peppers and steam them shortly. Add the

vegetable stock and water and cook it for 10 minutes. Season with salt and pepper. Mix the sauce mixen and put it through a

thin strainer. Boil up the sauce before serving, refine it with cream and mix it until it’s foamy with a hand blender

Ingredients• 300 g pumpkin red

• 50 g whole-wheat flour

• 2 egg yolks

• 10 gm parmesan cheese, freshly grated

• 1 sprig rosemary

• 5 g garlic, chopped

• 10 g onion, chopped

• 5 g salt

• 5 ml olive oil

• 5 g garlic, chopped

• 30 g zucchini green and yellow, diced

• 20 g green peas, blanched

• 15 g shallots, roasted and peeled

• 30 g tomato, diced

MethodCut the pumpkin into even- sized pieces (remove the skin). Add some rosemary, salt, pepper and bake

on a tray in a pre-heated oven at 160*C for 15 to 20 minutes. Mash the cooked pumpkin. In a sauce pan,

add 1tsp of olive oil, add chopped garlic and onions and sauté. Add the mashed pumpkin and cook on

a low heat. Take the pumpkin puree (still warm) in a mixing bowl, add parmesan cheese, egg yolks and

whole wheat flour and seasoning. Make sure the dough is firm. Now shape the pumpkin dough into small

dumplings. Shift in corn flour and store.

Simmer the gnocci in water until done. Add olive oil, chopped garlic, onions and sauté in a pan.

Add diced tomato and cook for a while. Now add zucchini, shallots and green peas. Next add tomato

concasse and blanched pumpkin gnocchi. Season with salt, pepper and parmesan cheese.

MethodGrind all the paste ingredients (except shrimp paste and cooking oil) together and sauté with the shrimp

paste and a little bit of oil. Add the chicken pieces and sauté in the paste for 3 to 5 minutes, then add the

chicken stock. Allow to simmer for 10 minutes. Add the vegetables and, lastly, pour in the coconut milk.

MethodPeel and cut the pumpkin into cubes. Melt butter in a large pan, add the onion and saute for a few

minutes. Add the flour and cook without colouring. Add pumpkin, mix well add 1 litre of water and

cook until done. When the pumpkin is cooked, add the remaining litre of water and let it boil. Remove

from the heat, keep it warm, and then blend it well. Correct the seasoning and add roasted almonds

to the soup. Heat it a little before serving.
