i t’s called the ionosphere. The part of the upper atmosphere that forms the inner edge of the magnetosphere and creates the almost supernatural
trick of transporting radio waves over improbable distances. One pre-dawn morning in Sydney several years ago, I even heard Red Symons’ ABC Melbourne breakfast program crackling over the airwaves as I negotiated the cross-city tunnel. One other morning, a morning that I can never forget, I heard the strangest broadcast ever, something that sounded as if it had bounced back to me from another century. It must have been because of the ionosphere.
The man’s high-toned tenor was urgent, hectoring. It was alarmed and alarming, and the man was warning of great danger. As I recall, this monologue went something like this. “And you know who they are; we all know who they are, don’t we? What’s the description we see here? Come on, say it with me: ‘Of Middle Eastern appearance’. That’s right, that’s right. ‘Of Middle Eastern appearance.’ And they’re the ones who cause the trouble. And they’re the ones who are coming this weekend.”
The rhetorical skills were familiar and accomplished. The call and response; the repetition; the urgent refrains. It was shrill and quite frightening. Who was this man?
Many mornings I heard this voice, warning that the government was not to be trusted, that public servants were not doing their jobs, that ethnic groups were running riot, that the streets were unsafe, that the system was letting you down. It would appear that the only man to trust in the dreadful, dark world that this voice conjured up, was this man himself. Alan Jones of radio station 2GB.
This was the week before the Cronulla riot and I had never heard an Alan Jones broadcast before.
I was of course listening with the ears of an outsider and initially I simply couldn’t take the semi-hysterical tirades seriously. It took me some time to realise, with awful foreboding, that this point of view defined the entire
outlook of a radio audience that politicians around the country took – and still take –
very seriously.This point of view had its most recent and toxic
flowering at last week’s anti carbon-tax rally, and no one who listens to such radio should have been even a little surprised by it. The discontent, the anger, the absolute lack of trust, have been long-nurtured by this kind of broadcast. It is almost anarchic in its distrust of any officialdom. In its worst form this view becomes an incipient bunker mentality: let me earn my own
money, do what I want with it and leave me alone. But these people have been scared, and this is how
frightened people lash out. As agent K bluntly observes in Men in Black, “A person is smart. People are dumb, panicky dangerous animals and you know it.” The mob is in all of us, and we can be easily frightened into a stampede. For this reason, it is dangerous to feed legitimate political discontent over broken promises or inadequate services with the inherently antisocial distrust of broader democratic institutions – parliaments, courts, bureaucracies.
When I interviewed former prime minister John Howard on News Breakfast last year about his autobiography, I asked him if he thought a Tea Party-type movement was possible in Australia. He did not, because, he said, Australia’s federation encouraged a commonality of purpose and sense of connection that the still-strong and very individualistic “states rights” doctrine of the US could not.
I thought that analysis was very sound, and still do. But the ties that bind us, that bind any society, are most easily unpicked by fear – something history has surely taught us well. \

Sam StyneS has struggled, as so many of us do, to live in the moment. As in, stop making plans for next
week or next year, just live right now. She read Eckhart Tolle’s The Power of Now, which she says helped. And she does regular meditation sessions. It’s been a slow journey, but she thinks she has found some sort of calm amid the upheaval of dealing with her husband Jim’s illness.
“If my mates were to read this they’d say ‘You’re so hard on yourself’ but I (used to be) quite childish in some ways,” Stynes says. “What dawned on me was I was always ‘I can stand on my own two feet, I’m independent, I studied feminism, rah rah rah …’ But then when it smacked me in the face ‘You may be alone if Jim doesn’t come out the other end’ it scared the shit out of me. Now I think I can cope. I’m not saying it would be easy, I just think I’ve grown up a lot and I appreciate things that I (once) probably would have taken for granted.
“I used to spend a fair bit of time … it’s a fairly common discourse for mums to sit round complaining (that) their husband said this or did this or my kid won’t do this, nah nah nah, I’ve got to go to the school play … And I know a lot of it is not really meant, it’s just how we all get by. Now, I wouldn’t waste a breath on any of those conversations because I appreciate all those moments.”
We’re talking in a café on Fitzroy Street, St Kilda, near where the Stynes live, and it’s a chance to meet the woman who has handled with such grace and dignity her husband’s very public battle with cancer. She’s down-to-earth, matter-of-fact, breezy and refuses to sugar coat the trauma the Stynes family has gone through since she noticed a large lump on Jim’s neck two years ago and suggested he get it checked out.
The diagnosis of cancer in June 2009 changed the family’s life. Jim stepped down as president of the Melbourne Football Club and went into endless rounds of tests and treatment; Sam held the home life together, making sure their children Matisse, now 9, and Tiernan, now 5, were OK.
“Ups and downs,” she says of how she’s coped. “I’ve definitely had moments. I’ve got a really dear friend who once said to me ‘Sam, I’m happy to put my hand down and help you out of that well, but I can’t get in there with you because it’s no good for anyone’.
“I just keep trudging along. Life goes on. I just deal with it day to day. It’s very hard to plan anything. That’s been tough. That goes for anything, from catching up with a friend to a holiday. One day you get a test result and it’s surgery in two days time. It’s like – OK. I might think I’m going to go to the movies with my girlfriends one night and then I have take Jim to the emergency ward. That sort of thing happens all the time.
“My dad died of prostate cancer after six years with it. Going through what I’m going through now, I don’t think I had any understanding of what he and his wife at the time were going through, even as his daughter. You’ve sort of got to be in it (to understand it).
“He was given quite a short life expectancy and he battled on for six years. (He died aged 61). I’ve done it in a similar way once before.”
Does Stynes feel stronger than she thought and was she surprised by this? “Now I’m surprised by it. Looking back, a lot of it was a blur, it’s like your world is sometimes closing in on you. Now I feel I’m coming out of that a bit, able to cope and keep going. I mean, what choice does anyone have? Life goes on. My immediate family have been just fantastic. Our friends have been amazing. Our business partners. The football club. Reach Foundation. I think the people in our lives is testament to the type of person Jim is.”
Stynes copes with awkwardness about the topic of cancer with humour. “I use humour a lot and I think it breaks the ice. Don McLardy (vice-president) and his
wife, Clare, were outside the hospital room and I walked up. They were both really worried. And I was halfway down the corridor and I said ‘Oh my God, he’s not dead is he?’ And they were horrified. Don said ‘Sam, your sense of humour needs some work’. A really close friend of mine, Trisha Broadbridge (whose husband Troy died in the south-east Asian tsunami in 2004), she was like that and I’d say ‘Trisha, you cannot say things like that, people won’t understand it’, but now I find I’m like that and I do it a lot. In some ways it makes people feel uncomfortable, in other ways it breaks the ice.”
Do they get sick of being asked about it? “Not really. I probably feel I’m always droning on about it. It must be horrible to listen to because there’s always the new chapter to the story.”
Sam Stynes was born in Port Moresby, Papua New Guinea, and her family moved to Melbourne when she was two. Her early years were spent in Glen Waverley and Wheelers Hill. Her parents divorced when Stynes was 15 and she lived at her father’s house in Mount Macedon, where there was a vineyard and horses, and at her mother’s in St Kilda. “I had the best of both worlds – city and country life,” she says.
She went to Wesley College in Prahran. “I was an introverted sort of kid. I ran with the popular wolves.” But as well as being in the cool set at school, she also had a passion for the more insular world of horse-riding. “I spent every second weekend with dad, so instead of going to the parties (in Melbourne) I went up there and rode the horses and pottered around the farm.”
Stynes said her parents’ separation was difficult. “Those were the years when (I was) doing VCE and things … I did find the travelling hard, packing bags to and from Mount Macedon to St Kilda … It was hard at the time. Then I watched them get on with their lives and be really happy, and they eventually both settled down with somebody else.”
A fter school she studied teaching and visual arts. “My dad was of that generation that ‘You won’t make it as an artist, you should have a back-up degree’. She made some extra money waitressing
in cafés in Acland Street. “I got into and enjoyed the whole St Kida lifestyle – lots of arty people, creative people.”
She taught at a primary school in Lower Plenty before moving to a school in North Carlton where there were many children from the Neill Street Housing Commission flats. “I loved that job,” she says of the Carlton primary. “ Lower Plenty was good to learn about teaching but it wasn’t very eclectic. By the time I got to Neil Street I loved those kids, migrant kids (many from) Africa.”
She met Jim Stynes when he was still playing football for the Demons, a big Irish ruckman with an amazing
capacity to play through injury and who won the Brownlow Medal in 1987 for the fairest and best in the AFL. Stynes is one of football’s greatest stories.
She was a long way from embracing the football culture. “The first game I ever watched him play he (had) asked me to go along and I asked my older brother to come and (Jim) said ‘Meet me at the change room door’. This was in the day when girlfriends waited outside the change room door. So I stood out there for 15, 20 minutes and found it such a bad … I thought ‘I’m not going to stand here and wait for this guy at a change room door’. I found it belittling and I went home.
“It was at the time that I was studying all those poststructuralist feminist subjects so I (had) all these ideals and beliefs. I didn’t embrace football when Jim played. It’s only in more recent times that I’ve thought ‘If you can’t beat it, join it’. So now I really

enjoy the football, all aspects of the game, the social side, that you’re in a club and a community. From my take (Jim) was one of the good guys. Of his peers at the time, it was Garry Lyon and Todd Viney. I always felt treated with the utmost respect in that scene.”
She married Stynes in 2000 and left her teaching position when she became pregnant with Matisse. “When I got married and we had children I hadn’t really sorted out what I was doing,” she says. “It was just sort of what you did. So when we had our first baby, Jim dropped me home from the hospital and went off to work and I had this little… it started to dawn on me quite quickly. I didn’t realise how much it changes your life having kids. It was like putting your life in a jar and shaking it up.”
Stynes is very honest about parenting Matisse and Tiernan. She wrote in the Herald Sun last May:
“Even today my role as a mum often sees me yelling at my eight-year-old daughter, Matisse, and my five-year-old son, Tiernan, to stop fighting in the back seat of the car, begrudgingly getting their bags packed for school every morning so they are on time, ranting and raving that I am not the family’s slave as I slam the washing machine door shut, and having to control my road rage on Fitzroy Street on the way to school for an 8.15am drop. At times Matisse thinks I am the meanest mum around and has asked me, ‘Do you even like being a mum, ’cause it seems like you hate it?’ ”
Stynes completed a masters of education, with her thesis on the work done by Reach, which Jim had established in 1994, “to try and get some academic framework on what they do in there”. For several years she worked as an education consultant for Reach but
moved on when work and family got too much. “I don’t really like working with Jim and being at home with him as well.”
She had a women’s apparel business for a couple of years before offering freelance articles, mainly “human-interest stories”, to the Sunday Herald Sun. She then for several years helped Jim with a childcare business, Pacific Early Learning, of which Jim is a director. “I run art sessions, advertising, marketing, colors for new centres, anything that’s creative.”
The journey has been scary at times. “It’s been tough. It’s exhausting. I’ve learnt to make the most of the good times. It’s hard work every day, whether Jim’s having treatment, which is ongoing. There’s never a time when there’s not some treatment happening.
“The kids have been doing quite well. Cracks started to appear at the end of last year, a combination of the end of the year, being tired, and the longevity of the journey. They’re kids. It’s like ‘When’s this going to end?’ For kids, it’s as simple as ‘Is dad going to live or is dad going to die? When’s the cancer going to go away? When are you going to be better, daddy?’ We made a decision last year that we’d need to pull him right back from the public as much as we can. Certain things might be said at school, quite innocently sometimes, but it can be quite upsetting. To protect them a little bit from it.”
S he has admired how well the kids have coped. “Amazing. Our five-year-old, he’s still quite small. How he makes sense of it, I’m not sure. With Matisse it’s been more difficult because she’s that
little bit older. She may hear snippets of conversations or phone calls and go away and make up her own understanding. We just try and stay open with it.”
Is she amazed at how well Jim has coped? “In 18 months he’s never had reactions that I would assume he should have. He’s never had a tantrum or started screaming or crying or ‘Why me?’ He’s been grumpy at different times through pain and certain drugs he’s had to take, but even so he recognises that and continues to work on it. It actually astounds me, really …
“There’s been times I’ve wanted to shake him and say ‘Aren’t you cross?’ I think Jim thinks that this is some sort of great life experience he’s getting to have.
“In the early days when he was diagnosed, he said ‘Look, if it ends up being my time, it’s my time’. He’s had an amazing life, he believes, a blessed life, and he’s loved every minute of it. He’s got a good attitude.”
But of course there is fear. “Completely. When you plan out your life and you think … things are always going to come in and surprise you along the way, but when something really serious comes in – we have no control now. It’s in the hands of the doctors and treatment and fate and possibly a miracle.” But, I say, no one has control. “But we think we do,” she says. “We feel we do. And it feels good.”
Stynes enjoys St Kilda. “I love it here. It’s eclectic. I love Norm, who lives in the boarding house round the corner. It sounds clichéd and stupid but there are a lot of real people.”
She would like to write a book. “That’s my ultimate dream. My friend teases me – you think too much, you over-analyse. Stop thinking. Live in the now.” \

it’s not a restaurant, let’s get that straight at the beginning. No, The Burger
Lounge is just what the name implies: a place to eat burgers and lounge around. Of course, you can also eat quickly, grab a takeaway burger or sip coffee while you check out the social scene. It’s smart, fun and funky, and it’s Gerry and Flora Mustafa’s baby. The couple brushed aside the naysayers – and there were plenty – and followed their gut feelings when they opened The Burger Lounge in Main Road, Eltham, last October.
Now a roaring success selling up to 350 burgers a day, it has plenty of class, loads of atmosphere and – most important – fantastic, fresh burgers made on the spot.
“We wanted to create something different, with a classy atmosphere that catered for all ages, not just 15- to 35-year-olds,” says Gerry.
“People said we would scare customers away by being too upmarket, but the opposite has happened. We wanted families and all age groups to feel comfortable here. We wanted to serve fresh, quality food on an ongoing basis, not just for the first couple of months.”
The formula appears to be working. On my first visit late one afternoon a family with four young children aged from about six months to 12 years made themselves comfortable at the communal table. Couples occupied smaller tables or sat at the banquette against the wall, while smart young things, mobile phones in hand, sipped coffee at the tables on the street.
A second, more serious visit was for Saturday lunch. This time the customers were a mixed group that included teenagers, families, couples and men in orange work vests. We sat at stools at the communal table in the centre of the restaurant. Retro-patterned wallpaper behind the banquette on one wall adds to the funky atmosphere. An antique mirror on the opposite wall carries a message from Flora and Gerry telling customers “we produce the best burgers using the finest, fresh ingredients”.
You can see into the kitchen from most seats in the house, a very encouraging sign for any customer.
The extensive menu includes nine beef burgers, five chicken burgers, lamb kofta and a Greek burger, fish burgers and vegetarian options. French fries or thick herb chips with several dipping sauces and salads are more dishes to tempt the taste buds.
Extras range from beetroot to chargrilled red capsicum, crumbed eggplant, feta, haloumi, caramelised pear, grilled olive salsa and avocado.
We opted for the Grande and the Salmon Burger, which had been recommended by a South Yarra hairdresser who is a regular.
Both got top marks. The Grande, like all the burgers, is made with a 100 per cent prime organic beef patty, a slice of crispy smoked beef, grilled caramelised pineapple, Swiss cheese, fresh avocado, lettuce, tomato, red onion, relish and herb aioli. I am salivating just thinking about it. Served in a sourdough panino and kept together with a bamboo skewer, the burger was served on a fashionable small wooden board.
The menu boasts that the burgers are handmade fresh daily, and ours certainly did have that melt-in-the-mouth freshness. Thick herb chips sprinkled with dried herbs on the side were equally
tantalising. So was the Salmon Burger. The combination of a freshly grilled salmon fillet, sweet chilli mayo, lettuce tomato, red onion and herb aioli gave what might be a bland dish a real zing.
The Signature Burger is, not surprisingly, the most popular, says Gerry. The organic beef patty is stuffed with havarti cheese, basted with a balsamic glaze and served with pickled cucumber, red onion, lettuce, tomato, relish and herb aioli.
A salad of beans, pumpkin and honeyed walnuts was a great final touch. The only regret was not seeing the Albanian doughnuts on the menu and then watching a waitress walk past with them piled high on a plate. Drizzled with a honey and pistachio topping, they looked sensational and will be on our plates next time.
If The Burger Lounge sounds like an instant success story, it isn’t. Gerry and Flora Mustafa have a long history in the food business. They own the chicken shop in Bolton Street, which is legendary among Eltham folk and has twice won the fresh food category in local business awards.
Gerry and Flora spent hours trialling new combinations of burgers and travelled overseas to research their burger business, but the couple claim no
similarity to a burger lounge in California. They also score top marks for choosing and training their staff. The wait staff are not like the surly teenagers you often meet in these places. They are just nice young kids with a smile who can answer questions about the food.
It’s called product knowledge, and they certainly have plenty of it. \
From its funky wallpaper and aged mirrors to its banquettes and communal table with plush round stools, The Burger Lounge is elegant and welcoming. Bi-fold doors open to the street, where five tables are shaded by black umbrellas. People eating alone are well-catered for at the communal table or the marble bar that overlooks the street. The counter, laden with Italian bonbons and biscuits, resembles the fit-out of a trendy café south of the river.

I’M AS BIG a fan as anyone of a bit of good-natured
Melbourne-Sydney rivalry, but the Harbour City put on a good show earlier this month with the power one-two of my brother-in-law Daniel’s wedding plus the Sydney Cellar Door.
I won’t go into details of the wedding, other than to say what a good job the happy couple did of showing us their adopted city, how much wine the two combined families managed to consume, and that I was surprised and impressed by the quality of the wines served at the reception.
Feeling somewhat worse for wear the next morning, I sped into the city to where the cream of NSW’s winemaking talent was pouring its wines in the one spot. I had hoped to meet a few winemakers that I’d
lemon and grapefruit – and the best of them showed that the � avours could handle a bit of oak. � ey were pretty good value, too.
It’s always hard to get a good handle on a wine’s charms at a big tasting, especially when you’re chatting away, so I was onto my contact who works promoting Orange wines the following day asking for samples of a few of the region’s chards.
Orange is an interesting wine region. Part of the NSW Central Tablelands, it’s a four-hour drive west of Sydney and its grapes are grown at high altitude in the shadow of Mount Canobolas – an extinct volcano – and are able to build complex � avours as they ripen slowly.
Grapes were � rst grown in Orange in the 1880s when the railway to Sydney arrived, but these were table grapes. It wasn’t until the early 1980s that vineyards were planted and winemaking got serious in Orange.
Orange might be in the middle of hot NSW, but it’s a cool-climate wine region. � ere are two types of cool climates when it comes to growing wine grapes: latidudinal and altitudinal. Regions such as the Yarra Valley and Tasmania are cool because their southerly latitude has fairly cool summers, and then there are those such as Orange and the King Valley that have an altitude that provides cool days and nights throughout the growing season.
In fact, to be classi� ed as a wine from Orange, the vineyard must be at least 600 metres above sea level. � e highest grapes in the region are grown at a lo� y altitude of 1050 metres.
While fewer than half of Orange’s vineyards are planted with white grape varieties, the majority is chardonnay. Keep an eye out for Orange sauvignon blanc – they’re doing a great job with that, too. \

Brangayne is named after the character who prepares the love potion for Isolde in Wagner’s opera Tristan and Isolde. This is easy to fall in love with. It’s all citrus, white stonefruits, cantaloupe, apple, cashews and hint of � ne French oak on the nose, with these � avours replicated on the palate. It’s well balanced, with nice texture and a bright line of citrus acid that drives on the � avoursome � nish.

Grown at an altitude of 750 metres, this was whole-bunch fermented using wild yeasts. It’s the sort of wine you just want to keep snif� ng, with its bouquet of nectarine, cantaloupe, quince, nuts and buttered toast. With � avours of white stonefruits, melon and cashews, there is quality, well-integrated oak that adds to the wine’s complexity. It’s relatively soft on the palate but is well-structured and has a nice creamy texture. Flavours build and build on the lovely � nish. Best not spend too long snif� ng after all.

Printhie is one of Orange’s leading wineries and its standard chardonnay is good value at nearly half the price of this. Its elegant, complex aromas of white peach, cantaloupe rind, almond meal and spicy oak also have a faint hint of exotic tropical fruits. On the palate, delicious lemon, grapefruit, mineral, nuts and stonefruit � avours are balanced nicely with a taut cool-climate structure, creamy texture and a persistent nuts-and-minerals � nish.

Philip Shaw No.11 Chardonnay 2009 (Orange) $35; 13%★★★★ ½
From one of Australia’s highest vineyards – at 900 metres above sea level and planted in the late ’80s – comes this lovely, effortless wine. Layered, complex aromas of cantaloupe, white stonefruit, earth, nuts, spicy French oak and minerals set the tone for this wonderful chardonnay. Clean, crisp � avours of white peach, grapefruit and mealy notes lead on to a lovely soft texture. Bright acid balances the wine out well and a lingering � nish really impresses.

May� eld Single Vineyard Chardonnay 2009 (Orange) $26; 12.5% ★★★★
I really liked the mineral style of this, but it took a day to reveal all its charms. Decant the wine into a jug and then back into the bottle to help it open up. This smells and tastes of citrus, melon rind, Granny Smith apples, slate, minerals and nuts. This complexity, matched with dry, chalky acid and a nice texture makes, it a pretty good drop at a nice price.

� ere has been a bit of hype about the remote, cool-climate Orange region in wine-industry circles lately – especially its chardonnay – so I made a beeline for their stands. And here they all were, in one area of the park in the middle of Sydney with winemakers ready, and most certainly able, to talk for hours about their wines and why Orange can produce top-level chardonnay.
It’s well known that you only have to mention the word chardonnay for my ears to prick up, and as I tasted and talked my way around the stands, one thing became clear – we should believe the hype.

food for thoughtfood security is the “new black mini-dress” in the mix of charity organisations, according to Katy Barfield, executive director of SecondBite. Its principal goal, in one word? Extinction, writes AndrEw McutchEn.
S econdBite does more than just aim to collect surplus food and supply it to Australia’s most vulnerable and marginalised. Its mission is also to provide that food in the form of fresh
and nutritious raw ingredients, suitable for a whole range of meals, depending on the recipient’s culture or cooking ability.
“Our immediate point of difference as a food-security organisation is that we’ve only ever focused on the raw ingredients,” says charismatic executive director Katy Barfield. “We’ve given people and agencies the dignity to make the meals that they want to create, that are culturally appropriate for their clients as opposed to saying, ‘This is what you’re eating’. Empowering the community to cook together and eat together is a part of our mission, I think that that’s very powerful. There’s a social-inclusion value that comes from eating a meal together and the preparation that goes into it.”
Much like any other corporate venture, Barfield is intent on avoiding duplication with other players in the space. The efforts to hone a point of difference are just as critical for not-for-profit organisations, as in many cases they are competing for the same grants and aiming to serve the same clients.
From SecondBite’s humble beginnings in 2005, when founders Simone and Ian Carson would collect surplus fruit and vegetables from Prahran Market and then drop it at local charities themselves from the boot of their car, the focus has remained fixedly on fresh, raw ingredients.
“We haven’t changed; we haven’t started cooking like FareShare (previously One Umbrella) or storing loads of non-perishables like the VicRelief Foodbank. I’m really anti-duplication in this space. I think there are limited funds and we’re all trying to serve the same end. You’re trying to help people get access to healthy, nutritious food. We’ve got much more power by doing that together in this space than if we compete with each other.”
The “light-bulb moment” for British citizen Barfield, who joined the fledgling organisation four years ago after establishing popular bar Bar Humbug in the city and before that completing a long stint in event management for Children in Crisis in Britain, came when she discovered the quality and quantity of the food being ploughed into landfill by large supermarket chains.

waste and the amount of people that couldn’t afford to put food on the table,” says Barfield, who admits a “flair” for raising money and awareness.
“I found that abhorrent, really; it’s just crazy. That’s how it started and then it’s developed because now it’s about looking at how we need to help people before they actually access those other community food programs; what we can do as an organisation to really bring about that kind of systemic change.”
Falling under the umbrella term of “food security”, which refers to the availability of food and a person’s access to it, SecondBite operates out of a nondescript warehouse in a Kensington business park and delivers daily to more than 50 agencies around Melbourne.
“Food security is the new black mini-dress in a way, which is fine because it means there’s more focus going on it,” Barfield says. Recently she’s had prime spots on mainstream current-affairs programs such as A Current Affair.
“We talk as much as possible with FareShare and the VicRelief Foodbank in particular to ensure we support the working relationship, and it works well.”
On site at SecondBite there is a small cold store, salvaged from a supermarket and repaired, one floor of offices furnished with chairs and desks that had been headed for landfill and a donated forklift as well as several donated delivery vans. Many of the day-to-day roles within the company are filled by volunteers (to join its ranks, visit www.secondbite.org.au) but there is a core team of drivers and workers alongside Barfield and her skeleton office staff to ensure that all food received at SecondBite is sorted, stored and then delivered.
Any spoilage is binned and picked up by pig farmers such as Robert Thoolan, who drive many kilometres to take home upwards of eight tonnes of nutritious animal feed a week.
SecondBite FirSt to Help Victorian Flood VictimSSecondBite’s developing regional network – where its Community Connect program is matching food donors with people in need – means that when natural disasters strike, the organisation is ready and able to meet increased demand for services. After the recent floods in parts of country Victoria, SecondBite was able to provide much-needed emergency food to a major relief centre in Calivil.
“SecondBite is rallying its food donors to provide food for flood-affected Victorians,” Barfield said, in a follow up email to this interview.
“In partnership with the Australian Red Cross and VRFB, SecondBite is collecting food throughout Melbourne and surrounding districts and distributing it by van to a relief centre in Calivil. The food distributed includes fresh fruit, vegetables and salads, non-perishables and ready-to-eat meals, bearing in mind that some areas have limited ability to reheat meals.”
“The pigs love it,” Thoolan says. “I used to feed them pellets, but that’d be like eatin’ corn flakes every day. Boring!”
Food security may be in fashion but, unlike a black mini or skinny jeans, it’s unlikely to be out of vogue, or out of people’s minds in a year from now. While Barfield quips that the goal of SecondBite is its own extinction – “because if we’re not here, then there’s no food being wasted and there’s no people going hungry” – she has her mind on more realistic obstacles in the meantime.
While there are “no policy roadblocks” in the way of the redistribution of discarded food, especially with the introduction of the recent Good Samaritan Act across the country (and an amendment to the Civil Liability Act in Tasmania) that allows people to donate food safe for human consumption free from common-law liability, there is an ongoing issue of low awareness of SecondBite’s mission in the food industry.

“A big challenge for us is letting the larger food donors know about us,” Barfield says. “We need to access the growers because we know that about half of the waste, and that’s 3.2 million tonnes per year, is happening at that point in the food production process. And this food is often rejected by the major food retailers because it’s imperfect. Imperfection can be anything from wrong labelling to pink ladies that aren’t pink enough or bananas that are too small. Rather than find another outlet, it’s actually cheaper for the farmer to plough it back in or get rid of it. That’s really what we need to target.
“We’d like to see food redistribution embedded into local government policy,” Barfield continues, passion colouring her voice. “There are policy improvements that could be made; it’s not currently actively encouraged. If businesses and grocers etcetera and independent retailers were given the opportunity to – and educated about how to – donate their food, I believe more people would.” \

Our largest organ – the skin – loses about a cup of water a day before it’s exposed to “suckers” such as air-conditioning, heating and hot water. When skin is regularly subjected to these rigorous “workouts”, it can dry out faster than normal, especially the legs and arms, as they generally have lower concentrations of oil glands compared to the face.
What you need to look for in a body moisturiser is something that is quick to absorb, pleasant smelling so that it will not overpower your perfume and strong enough to target dry spots such as elbows and knees.

The brand has an extensive range and it is dedicated in nurturing a better and more holistic environment. For me it is simple; if I could bathe in this moisturiser, I would merrily do so.
Phyt’s Crème Corps Nourrissante (200ml, $75) This French brand has a complete and extensive skin-care range and is used and promoted by the world’s most exclusive spas. The range is certi� ed organic but, most importantly, it delivers excellent results. This body cream is thick and best suited to those who have dry skin and want something not only to combat the dryness but also keep their skin supple. Go buy.
Kiehl’s Crème de Corps (250ml, $52) is an institution. This is what word of mouth can do for a product. The New York outlet cannot keep enough stock of this luxurious body moisturiser. It is a bit thick but it goes on ever so beautifully. People who have tried it swear by it and say their skin has never looked better. Squalane, a rich antioxidant, is what makes this such a hit.

T here are no hard and fast rules when it comes to fashion; in fact, ask any designer what inspires their collection from one season to the next and chances are their ideas come from the simplest of gestures
stumbled across in everyday life. For Melbourne designer Dhini Pararajasingham, it was
all about the exotic costume from a faraway place that got her thinking about a theme for her autumn/winter 2011 collection.
Titled Uzbek, the glamorous collection might nod to all things 1980s with its pointed shoulders and baggy pants, but there’s a more traditional birthplace that her idea came from.
Inspired by the traditional Uzbek costume, the motif can be found in dresses and pants for a touch of something exotic, faraway and yes, certainly original.
While the emphasis is on a motif that conjures all things traditional, Pararajasingham’s collection is anything but simple or conformist. It’s edgy, dramatic and is reinterpreted with a gusty yet feminine core.
Fresh from showing her collection at this year’s L’Oréal Melbourne Fashion Festival, through her label Dhini, the young starlet is certainly turning heads with her stretched leather-look cut-out dresses and pants and shiny gold zip range (from Switzerland, we hear) that brings a playful tone to her tailoring.
It was an exhibition at the National Gallery of Victoria that provided the source of inspiration for Uzbek, Pararajasingham telling Daily Gloss: “Embroidery from the costumes, and in particular amulet motifs which decorated these costumes, were reinterpreted and formed the print as well as the embroidery in this collection.”
Located in central Asia, Uzbekistan sits just north of Afghanistan and Turkmenistan and gained independence from the Soviet Union in 1991. With a population of about 28 million, the country is big on traditional costume. In fact, in this part of the world, embroidered textiles are a huge part of every day life. Pararajasingham was drawn to this region’s exotic mannerisms and applied it to her fashion world, which only adds to the intrigue of her label.
One can’t help but fall in love with her delicate embroidery that � nds its way onto necklines, down the arms of dress seams and the abundance of silk-draped pants and sheer, � nely spun kimono blouses. Pararajasingham’s Uzbek collection is focused on the harem pant, � uid jackets and the contrast of sheer and opaque runs throughout the range.
Pararajasingham studied fashion in Japan and Melbourne and launched her label Dhini at London Fashion Week in 2005. She has since premiered her collections in Australia and has o� en been described as the next big thing to watch.
She says her inspiration can come from architecture, a movement in art or music. At last year’s Rosemount Australian Fashion Week, Dhini was critically acclaimed for its spring/summer ’10-’11 collection, which takes its theme from India’s Mughal period. � e young designer went to India to explore the Mughal style in buildings such as the Taj Mahal, Qutub Minar and Humayun’s Tomb.
For winter 2011, Dhini is all about body-con (short for body conscious) dresses with asymmetrical sleeves that are delicately decorated with embroidery that appears to � oat on the fabric. � e Uzbek collection is certainly one to look out for. We love Dhini’s prophetic approach to fashion, one that explores beyond the self and embarks on a new world order by trekking back in time.

TALENT ON TAP
Leotards, sequins and tap shoes return to Melbourne this week for the farewell tour of Riverdance. FRANCESCA CARTER catches up with Melbourne-born Liam Ayres, graceful on stage and gracious in conversation.
B ehind the stage it’s empty. Dancers wait nervously in the wings. Girls � ddle with their hair extensions, the lead dancer binds microphones to his shoes.
Lights down. � e curtain rises and 20 shadows, silhouetted against a moonlit backdrop, emerge from smoke.
In a staggered line, each of the dancers rolls their head. Quickly they spin around, staring intently ahead. Arms glued to their sides. With the introduction of the Irish � ddle, a synchronised step to the right begins Riverdance – an internationally acclaimed two-hour performance that has changed little since its opening night in Dublin in 1995.
While it looks corny, this tightly choreographed performance has secured a place in showbiz history. Created by composer Bill Whelan, producer Moya Doherty and director John McColgan, Riverdance has played more then 10,000 performances in 40 countries. � e estimated live audience tops 22 million. Figures in the television version escalated to 2 billion and it has grossed an estimated $1.6 billion.
Irish dancer Liam Ayres, now 26, was just 10 years old when he � rst saw Riverdance. His aunt, Christine Ayres, a professional dancer herself, brought over a video version and the whole family watched it in the living room. Ayres, who had been studying Irish dance since he was � ve, was enthralled.
“I remember watching it and I knew that this is all I wanted to do,” he says. “To see this line of dancers doing something we usually do, but in such a di� erent capacity, was amazing. It made me want to continue Irish dancing to aspire to get into the show.”
It’s a beautiful Perth morning on the day that we meet and although it’s only nine o’clock, the sun is strong. Ayres appears nonchalant about the heat – he is relaxed, comfortable.
“We just came from touring in South Africa, and that was hot,” he says. “It was such an amazing experience
because the show had never been there before. It was like being back in the original times of show, when we were performing in front of audiences who had never seen it before.”
Wearing black jeans and a tight-� tting T-shirt, Ayres has the basic frame of what people go to the gym for – a trim torso and muscular arms. He attributes his physique not to genetics but rather to a rigorous dance program of eight performances a week plus rehearsals and gym sessions.
“� at is one of the best things about Irish dancing, it keeps you in really good shape,” says Ayres. “You o� en come back from a break and you’re on stage and you think ‘I can’t get through this’. But a� er a couple of days you build up your � tness, and the best part is you don’t even know it’s happening.”
Ayres has been an esteemed member of the Riverdance company for seven years. For Irish dancers, being welcomed into the Riverdance fold is the pinnacle of their career. While many dancers are scouted, others have to endure a laborious process of sending o� videos and awaiting phone calls.
“I never actually auditioned for Riverdance. Or at least I didn’t know I was,” he says. “At the time, I was performing for a show called Dance of Desire in Dublin. One morning I woke up to a phone call from Riverdance saying the dance director had been in the audience and they wanted to o� er me a place in the company. It was one of those cases of being in the right place at the right time.”
As Ayres talks about his extraordinary rise in Irish dancing, there is a shyness about him. He is contemplative and unpretentious, appearing entirely una� ected by the attention he receives as one of Australia’s greatest dancers.
He also seems young for his age. Sentences are � nished with an in� ection and, at times, followed by a boyish giggle.
� is is an entirely di� erent Ayres to the one on stage
the night before. Performing in the troupe line in Perth’s Burswood � eatre, Ayres was con� dent and focused. With enormous discipline, he appeared to � oat across the stage at great speed, all the while engaging in fast foot-entangling steps.
A yres was just 19 when he was o� ered the principal dancing role in Riverdance. It’s a moment he will never forget.
“We were in the middle of rehearsal and the dance director came out and said she wanted to talk to me,” he says. “She said ‘Julian (the executive producer) wants to o� er you a lead position, would you be interested?’ Of course, I was through the roof. I was 19 and had been in the show for four months, it was so exciting.”
Becoming a principal dancer with the Riverdance company is no easy feat and Ayres is not the � rst to admit the di� culty of learning the complex steps.
“We would always rehearse between shows, whenever we could get access to the stage,” he says. “I had to be reviewed three times before I was ready to go. In the Irish summer of 2005, I had two weeks of intensive training with the new dance director. � en it was just perfect timing. One of the leads for the company le� , so I started doing the lead in Dublin, before going on to Japan.”
It comes as little surprise that Ayres would achieve success at a young age. Born into one of Australia’s biggest dancing dynasties, his late grandmother, Mary Mae, danced as a young girl in Ireland. In 1950 she migrated to Australia with her husband, Bill Ayres, and together they had 11 children, seven of whom continued the link to Irish dancing.
Raymond Ayres, Liam’s uncle, opened the Ayres School in the early 1980s. It quickly established itself as one of the country’s most respected dance schools, winning many national and state solo and team titles. Ray was admired for his skilful team choreography and

became a leading exponent of Irish dance in Australia. In 1995, Raymond’s sister, Christine, took over as
owner and teacher of the school. Ray gave up the school so he could concentrate on the Australian Irish Dance Company – a corporate event show-group. Based in Essendon, the Christine Ayres School is one of the largest Irish dancing schools in Australia, with more than 120 students.
“I de� nitely got rhythm from my family,” says Ayres. “And, having good rhythm is essential to Irish dancing.”
Despite being surrounded by a family of Irish dancers, Ayres says that he was never pushed into the art.
“I hated it at the beginning. I couldn’t get the � rst basic movement. I didn’t go back the next week, I just refused. I eventually did go back to classes and, a� er a few lessons, I got it.”
Before Riverdance, Irish dancing in Australia revolved around competitions. Parents would sign their children up for endless rounds of championships with meticulous rules and regulations.
Ayres’s rise in traditional Irish dancing is quite extraordinary. At the age of eight, he entered his � rst competition and came third. By the time he had � nished school, Ayres had won seven Victorian and two Australian titles.
“Irish dancing competitions are very entertaining, to say the least. It’s always in your age groups and you do three dances. One in heavy shoes, one in light shoes and if you have enough points, you do one last dance on your own ... people take it very seriously.”
Ayres, who also went on to grab a bronze in the world championships in 2003, believes nothing will ever come close to the thrill of performing.
He can vividly recall all his high-school performances. “I went to drama school when I was very young and particularly enjoyed musicals like Rent. I sometimes wish there was more acting in the show.”
When re� ecting on his light-bulb moment, the decision to pursue a career in Irish dancing, Ayres credits his � rst Riverdance performance in France.
“I did my � rst step on the stage and it was just so surreal. I was performing in this big arena, in front of a huge crowd. I remember actually doing the Riverdance number and the audience just erupted. I thought ‘this is it, I’m good to stay here’. I had gone from a crowd of a few hundred to thousands. And, even though we had rehearsed and done tech checks, it still didn’t compare to when the lights went down backstage and everyone’s lining up in what we call the teepees (the stage entrance, so called because they are triangular in shape) to go out for � rst number. It was so scary.”
I n his seven years at Riverdance, Ayres has endured everything from falling � at on stage to costume malfunctions. He has performed in Europe, Scandinavia, Russia and Taiwan. He has travelled
around North America by bus and has been harassed by screaming Japanese fans.
“� e highlight of my career, actually, of my life has been dancing the lead in Radio City Music Hall. I think it’s every performer’s dream to get to Broadway in New York. And performing in one of the world’s most famous theatres, you can’t get much closer to that.”
Ayres says that what made the experience even more special was that his parents, who are always “looking for an excuse to come overseas”, � ew over.
“Towards the end, I spotted them in the crowd, which was just so special.”
While this was an exciting chapter in his life, Ayres believes nothing will compare to performing in his home city this week.
“I am performing in the lead role on the performance on Sunday and the entire dance school is coming. It’s a 125 group booking,”he says. “Ten out of my 11 uncles and aunties will be there and a lot of my old school friends. My friends have never seen me perform before. Now they � nally get to see what I have been up to,” he says enthusiastically. “It’s going to be the best day, and because it’s only an a� ernoon performance, I am going to make a real Irish night of it.”
Ayres expects to remain with Riverdance until its � nal performance in Hong Kong. A� erwards, he will return home and begin a new life as an Irish dance instructor.
“Just before I le� , my aunt made me business cards, which was such a cute little surprise. Being in the show, I have never had a one before,” he says. “Even though I will no longer be touring with Riverdance, Irish dancing is still going to be a major component of my life.”
And if his commitment to a successful career transfers to his teaching, then there is little doubt there will be many more Liam Ayres to come. \

i t might be the enormous front verandah or the extensive use of timber, but arriving at Greythorn is like stepping back to a more
genteel past.The two-storey triple-brick house,
with its red terracotta tiled roof and central-detailed stucco façade, also has an upper-level verandah trimmed with painted shingles.
Greythorn was designed in 1921 for one D.N. Davies Esq. Its strong lines, attention to detail and heavy use of timber owe much to the Arts and Crafts movement.
Framed plans of the house hang on the wall of the entry hall. If it had been designed by an architect, the architect’s name would have been on the plans, but instead they bear the the City of Heidelberg stamp with the signature of A. G. Howard, a local official. The upstairs rooms were part of the original plans and not a late-20th century addition.
Greythorn has three bedrooms, two bathrooms, a study and a suite of formal and informal living rooms. The sheer character of the place and the abundance of original details make it stand out from the crowd.
The owners of the house have not messed about with it. Sure, it is up to date and features a contemporary kitchen, large family room overlooking the back garden and stylish bathrooms – but character can’t be bought and Greythorn has it in abundance. It comes from the entry hall, original timber architraves, skirting boards, panelled doors and timber window frames as well as the proportions of the rooms. Chances are that beneath the carpet there are original hardwood floorboards. In the entrance hall, timber panelling reaches above head height. The timber staircase has a tiny “cubby-style” landing that looks like something from the pages of a child’s picture book. The staircase would have been built on site by a craftsman, not manufactured in a factory. It is easy to imagine small children of the house peeping from behind the railing as they wait for visitors to arrive or for Father Christmas on Christmas Eve.
