1 Flor de Sal d’Es Trenc- the aroma of the Mediterranean Flor de Sal is the purest and most precious of sea salts. Highly specific meteorological conditions are required for this aromatic and mineral-rich salt to crystallize upon the waterʼs surface: a lot of sunshine, a soft breeze and low air moisture. Gourmets all over the world appreciate its balanced and smooth aroma. In the southeastern coast of the Balearic island of Majorca, along the natural beach of Es Trenc, the conditions are ideal for the production of a truly natural product of its category. The water is crystal clear and a soft wind blows inland from the sea in summer. Since 2003 Flor de Sal has been harvested in the salt flats of Es Trenc, a place with a longstanding tradition of salt extraction. When the wind and the sun jointly help to form a fine layer of flower-shaped crystals on the water surface, these are then collected with small rakes, hand-harvesting the crystals in the tradition of the French Atlantic coast, then leaving them to dry in the sun. Flor de Sal d’Es Trenc is one hundred per cent natural: nothing is extracted, nothing is added. As a result, each grain carries with it the full aroma of the Mediterranean; each crystal contains the healing power of seawater. As a tribute to this noble marine product and i in collaboration with British chef Marc Fosh, we have created five exclusive blends of herbs and spices with the idea to enrich any dish with one simple final touch; aside from Flor de Sal dʼEs Trenc Natural, we now also produce Flor de Sal Olivas (with Kalamata black olives from Greece), Flor de Sal Mediterránea (with Mediterranean herbs), Flor de Sal Hibiscus (with dried hibiscus flowers), Flor de Sal Sri Lanka (with a curry blend of ten exotic spices) and Flor de Sal Rosa (with Gallic Rose petals,

Szechuan pepper and Sarawak black pepper). The high content of herbs and spices, which often reach as up to thirty per cent, make the five blends different from any other aromatic salts on the market. Summer 2008 saw the presentation of the “Limited Edition” range, a product line developed specifically for lovers of fusion cuisine. The key to this collection is the unusual blend of intensely fragrant fresh seasonal produce. The “Limited Edition” began with Flor de Sal Lemon & Lavender (with lemons from the Son Barrina farm in Majorca) and Flor de Sal Orange & Chili (with oranges from the Ca’s Sant farm in Majorca). In the summer of 2009 the first Special Edition “Flor de Sal Son Brull Scent” (with local ‘ramallet’ tomatoes and sea fennel from the Binifela farm in Cala Ratjada) was introduced; this time Flor de Sal dʼEs Trenc working in collaboration with the Majorcan chef Joan Marc Garcías.

Flor de Sal d’Es Trenc A natural product

Flor de Sal d’Es Trenc is the end result of a unique natural phenomenon: the interaction of the sea, the sun and the wind. Unlike common sea salts, nothing is extracted nor added to Flor de Sal d’Es Trenc during the entire creation

process. It is hand-harvested from the surface of the salt pools and is dried under the Mediterranean sun. It is thus a first class natural product. As it has been obtained through a careful process, Flor de Sal d’Es Trenc not only retains all the aroma of the Mediterranean, but also more than 80 minerals and trace elements. Its sodium chloride content, which is the main component of common salt, is however relatively low. When the sun and the wind hit the salt flats, the magnesium contained in sea water is one of the first minerals to surface. This is why Flor de Sal d’Es Trenc contains between 16 and 20 times more magnesium than common sea salt. It also contains double the amount of minerals such as calcium and potassium and even higher amounts of various trace elements. This unique mineral composition makes Flor de Sal an ideal ingredient for those concerned with their health; the magnesium acts as a natural flavor enhancer, thus only needing small amounts to flavor the food. This frugal use of Flor de Sal d’Es Trenc helps to reduce the intake of sodium chloride, thus fitting in with nutritionistsʼ recommendations.Gourmets value its balanced aroma and the smooth texture of its crystals. The salt flats of Es TrencIn ancient times the Romans and Phoenicians collected sea salt from Es Trenc beach. The location was not chosen at random: this 3.5 km. long natural beach running along the southeastern coast of Majorca is one of the most beautiful natural spots in the Balearic Islands. A gentle breeze sways the pine trees along the shore, the water is crystal clear, very pure and of a deep turquoise hue. The seawater runs towards the salt flats through the waterways, until it reaches wide shallow pools. This is where the sun and the wind form the flower-shaped crystals on the surface on the waterʼs surface. Nothing disrupts this unique interplay of sun, wind and water: Es Trenc is located in a protected area which is a haven for more than one hundred and fifty protected birds such as flamingos and avocets. Furthermore, Flor de Sal dʼEs Trenc is the only flor de sal harvested on the Es Trenc salt flats in Majorca.

The harvestVery specific weather conditions are necessary for the crystallization of the “salt

flowers” to take place on the Es Trenc salt flats: a lot of sunshine, low air moisture and a gentle south-southeasterly breeze. This is when the crystals begin to form, like a fine layer of ice shining brilliant white or in soft hues of pale pink. Given this is a natural process, the colour and texture of the crystals are never the same and change according to the weather.At dusk and before the air becomes moist once again and melts the crystals, the salt flowers must be harvested. With the traditional lousses- rakes originally from the south of France- the surface harvest is carefully collected. This work requires sensitivity and patience, as it is only the upper surface that contains all the minerals and aromas that make Flor de Sal d’Es Trenc the most exquisite of salts. Subsequently, Flor de Sal d’Es Trenc is slowly dried under the Majorcan sun. Once dried, the salt is taken to a small plant where it is enriched with Mediterranean herbs, spices, hibiscus, roses or black olives, and then packaged and sent to gourmet shops and restaurants all over the world.

The project was started in 2003 with the idea to harvest flor de sal by hand for the first time on the island of Majorca, and then package it for commercialization in specialized points of sale and restaurants. When the idea to harvest Flor de Sal dʼEs Trenc was presented to the islands most well known chefs, they did not doubt in giving their support. They were delighted with the idea of being able to count on an authentic Majorcan product to refine their dishes. Once the company GUSTO MUNDIAL BALEÁRIDES, S.L. was founded the very first crystals were harvested that same summer in Es Trenc. For its business concept the company was awarded the “Innovative project” award in 2003 by the Municipality of Calvià in Majorca. From this moment on work began to compose the first varieties and to raise awareness about Flor de Sal dʼEs Trenc on and off the island.Since 2003 Gusto Mundial Baleárides S.L is the only company with exclusive rights to harvest flor de sal on the Es Trenc salt flats. In 2009 the expansion process began into Europe and the Middle East. In February 2010, FLOR DE SAL DʼES TRENC DE LUXE was awarded two prizes at the international gastronomy fair GULFOOD:

Flor de Sal d’Es Trenc is warmly received at many international fairs and events, such as One to One Business, Seoul (January 2009), Spain Gourmet Fair, Tokyo (September 2009), Anuga Köln (October 2009), and Gulfood (Dubai, February 2010), Salón Gourmets Madrid (April 2010), Sial Paris (October 2010). The company is currently undergoing an expansion in terms of its distribution channels, points of sale and new product ranges. The company’s team of professionals adds a daily dose of expertise and enthusiasm to the harvesting, production, distribution and sale process of Flor de Sal d’Es Trenc. The manufacturing plant (processing and packing) and company offices are located in an old converted 600 m2 wheat silo in Santanyi, in the southeast of the island, close to the salt flats.In June of 2010 the recently constructed salt pools made specifically for harvesting flor de sal were inaugurated, as well as the salt pools which are later used for common salt production. The 200 new salt pools are located in the 154 hectare large Natural Area of salt flats, hand made with mud, clay and wood. With these salt pools the specific conditions can be optimized to create an even better harvest.

In the summer of 2010 “La Tienda” was inaugurated next to the salt flats, close to the Es Trenc beach and where flor de sal is harvested in season. With this new

expansion which also includes new products and a very personal point of sale, you can enjoy the marvelous views and have at your disposal a wide range of the best local products available. You can witness the harvest, the white salt mountains and the serene flight of protected bird species from the patio outside The Shop while enjoying the many different varieties of Flor de Sal dʼEs Trenc.

Flor de Sal d’Es Trenc – The different varieties

Flor de Sal d’Es Trenc Natural (200 gram tin)Flor de Sal boasts a harmonious flavor and a high mineral content. Given that Flor de Sal d’Es Trenc is a totally natural product, the colour and consistency of the crystals can experience a slight variation. In order for Flor de Sal to develop its full aroma, we recommend it is used after cooking.

Flor de Sal d’Es Trenc Mediterránea (150 gram tin).Flor de Sal with Mediterranean herbs is a blend of the true Mediterranean flavors thanks to emblematic herbs such as rosemary, savory, marjoram, thyme and oregano. All herbs have been air-dried and some have been organically grown. Flor de Sal Mediterránea is the ideal condiment for salads, fish and meat dishes.

Flor de Sal d’Es Trenc Olivas (150 gram tin).Flor de Sal with Black Olives After toasting the Kalamata black olives, we gently crush them and mix them" i n w i t h t h e salt." The characteristic flavor of black olives enhances the flavors of meat and all Mediterranean specialties such as mozzarella and tomato salad, pa amb oli (bread with olive oil) and crostini.

Flor de Sal d’Es Trenc Sri Lanka (150 gram tin). Flor de Sal with typical Sri Lankan spices is a balanced blend of ten exotic top quality spices. Coriander seed, turmeric, fenugreek and cardamom give it an exotic oriental aroma; chili, black pepper and cayenne provide the required touch of heat; cinnamon and clove caress the palate. In order for the aromas and ethereal oils to fully develop, we follow an ancient Sri Lankan tradition and weheat all the ingredients in an oven before the blending process.
