iNGrEdiENTs

400g free range chicken breast (buttery) 120g PizzaExpress green pesto1 potato (julienne)1 large carrot (julienne)1 courgette ( julienne)10/15 santos tomatoes (cut in half)Salt & pepper1 Basil leaf 10ml extra virgin olive oil

mEThOd

1. Pan fry the chicken breast in oiluntil golden brown. Once cooked,

roughly slice it up and set aside.

2. Cook the julienne style vegetablesin salted boiling water for around2 minutes. Once cooked drainthem and leave them to cool.

3. In a mixing bowl add the cutsantos tomatoes, the cookedchicken and the vegetables.

4. Add the green pesto, saltand pepper and mix.

5. Put the mixture into a fridgefor around 1 hour.

6. Transfer the salad into alarge salad bowl garnishedwith the basil leaf on top.

Goes well with a couple of slices of rustic Italian bread.

CrOYdON,GEOrGEsTrEETThis brand newrestaurant on GeorgeStreet in Croydonopened in December2011. Inspired by theelectrical engineerand inventor of theteleprinter, FrederickGeorge Creed

(1871–1957) - wholived and died in thearea - the artworkin this restaurantis derived from theiconic paper tapeused to punch holesin by the teleprinter.
