Do you ever wonder if local chefs hang out together? Do they sit
around drinking beer, sharpen-ing their knives, and talking food and wine pairings late into the night? Do they even know
each other?I was curious, so I talked to
some of the area’s best chefs, trying to find out if there is any sense of community amongst them. Charity events, like the annual Casa Pacifica Food and Wine Festival, are one of the few times that they gather

together in one place, offering them the rare opportunity to hang out and learn from one another. Though some chefs are involved with the Downtown Restaurant Association or the American Culinary Federation (ACF), it is the informal rela-tionships that are the lifeblood for most of them.
Some lean on former co-workers and old friends from culinary school. As Alfonso Betancourth, sous chef at Safire Bistro, says, “It’s good to keep in touch, for when you need a different point of view or even when you might need a job.” Some know of each other and stay in the loop through vendors or cooks that move around. century messenger delivering news via horseback for his role in keeping her in the loop.
Throughout all of these conversations, one name kept coming up: Nic Manocchio, executive chef at C-Street Restaurant. Andy Brooks of the restaurant Brooks calls upon him when looking for pur-veyors for hard-to-find items. Manocchio calls his relation-ship with Brooks “neighborly friendly,” and often calls him to talk through recipe ideas.
Jason Collis from Jonathan’s may call upon Manocchio if he runs out of something, and he is usually there to save the day. Collis says, “We’re a breed of our own; we all go through the same things.” Betancourth at Safire calls him to compare notes on how business is going. He says, “It’s a competitive field, so you don’t want to give your secrets out. You keep in
touch with the ones you trust.” Clearly, a lot of people put their trust in Nic Manocchio.
So, what is it about Manocchio that makes him so many chefs’ go-to guy? Well, he is a self-proclaimed peo-ple person and says, “You can never have too many friends.” In his eyes, knowing what other chefs are doing is the best possible way to learn. The benefit to him of all this keep-ing in touch? “You never know when you’re gonna need some-one’s help.” F

Maybe you don’t have the dough to eat out as much as you would like, but some local bakeries offer a small
mental vacation for a song. That eyes-closed, secret-smile moment when you first taste the sugary, buttery bite can take you to a place we all know as heaven on earth. It may be the perfect cupcake for some, or an unusual flavor of cheesecake for others, but these bakeries have the goods.

Once dismissed as a Westside fancy that catered to young girls wearing party dress-es, cupcakes are now considered to be the dessert craved even by manly men. The Cupcakery in Thousand Oaks offers a fairly traditional slate of cupcakes with a few inno-vations tossed into the mix. Standouts in the selection are the pink velvet, which is a red velvet cake topped with a spectacularly light cream cheese frosting, and the Saturday spe-cial called the High Hat, chocolate cake with marshmallow frosting swirled extra high and then dipped in chocolate. lack of trendy décor. And do not leave the shop without a suffi-cient stash of two of their cook-ies. First and very foremost are the macaroons. These memorable little morsels taste nothing like the kind you have probably tasted and not liked. Yes, they are most-ly coconut and egg white. But one bite into the light, chewy, buttery cookie that lingers as it reveals a multitude of flavors and textures, and you, too, will feel like writing poetry. The black and white cow cookies are also notable. They are large and pretty and excellent butter cookies with the duality of chocolate and plain sugar icing.

I am planning my third trip to Italy, and, as is usually the case, my itinerary revolves around
the meals and not the sights. The trip is several months from now, and my voracious appetite simply cannot wait, but I find that right here in Ventura County, we have everything an Italian foodie could possibly want. We have the wine, we have the gelato, we have the osterias and the pizzerias, we even
have the climate, so why not take a trip to Italy right here, right now?
LocaL inspirationIn Italy, a proper restaurant with crisp, white tablecloths, dim light-ing, multiple courses and profes-sional service can be found on every corner. Here, we really have to look for it, but despair not, it can be found! While the menu at Osteria Monte Grappa takes mostly from Northern Italy, it also draws local inspiration from the farmers markets and by sending
hikers to the backcountry to for-age for wild mushrooms. Porcinis or chanterelles find themselves on the specials list, tossed with pasta or polenta and topped with a drizzle of truffle oil and shaved grana padano — a poor man’s parmesan.
