2 teaspoonsfinely grated lime rind(about 1 medium lime)

1/2 cup freshlime juice (about 5medium limes)

1 to 2 pintssmall fresh strawber-ries, hulled

1. Preheatoven to 350F.

2. Combine

cookie crumbs andmelted butter in abowl. Stir well, untilcrumbs are evenlymoistened. Press intothe bottom and up the sides of a9-inch deep-dish piepan, 10-inch tart panor an 11 x 8-inch rec-tangular tart pan.Bake until crust isfirm, 7 to 10 minutes.

3. With anelectric mixer, beatmilk, cream cheese,lime rind and limejuice until smooth.

Put the words“gooey” and “butter” infront of cake, and yousimply can’t go wrong.At least that what peoplein St. Louis think. St.Louis Gooey ButterCake is 70-year sourceof city pride and the for-tuitous outcome of abaking mishap.

“No one knowsexactly how this cakecame to be,” says DaleSchotte, owner of ParkCity Coffee, in St. Louis,which sells more than70 flavors of this cus-tard-like cake, “but I likethe version from the 90-year-old wife of thebaker who is supposedlyresponsible.”

Sometime in thelate 1930s or early1940s, the owner ofDanzer’s Bakery insouth St. Louis wasmaking his Deep ButterCake when he acciden-tally reversed theamount of sugar andflour. The outside of thecake was cooked butthe center was gooey.

Danzer setaside the failed cakeand finished his baking,but later that day he de-cided to taste his flop. Itwas so good, he spent asignificant amount oftime trying to recreatethe mistaken quantities.The cake was an imme-diate hit at his bakery.

How did it be-come a citywide sensa-tion? Danzer’s Bakeryshared the recipethrough the St. LouisBaking Association, anda regional specialty was

1 (18 1/4-ounce) package yellowcake mix

1/2 cup butter,melted

2 teaspoonsvanilla extract, divided

4 eggs 1 (8-ounce)

package cream cheese 4 cups pow-

dered sugar

1. Preheat ovento 350F.

2. Mix cake mix,melted butter, 1 tea-spoon, vanilla, and 2eggs with a spoon. Patinto a 13 x 9-inch bakingpan.

Mary Siarkie-wicz and her husband,Jim, Mt. Prospect, Ill.,are not fazed by specialneeds pets. Thoughthey have Corky, aCorgi they took in whenMary’s aunt passedaway, and Fezzik, ablack Labrador Retrieverwho came to them whena relative could nolonger keep him, theirhome has included spe-

cial needs pets as well.Dobby the cat is one ofthem. Their late dog,Labrador Dali, had re-quired hip surgery atage 2, but had lived tothe age of 14. They alsohad a Collie mix namedCandy who went blind inher later years.

So when theysaw the blind Collie mixlisted on Petfinder, theyhad no qualms aboutadopting her becausetheir experience withCandy had been so re-warding.

To help Annie,as she is named, theyoutfitted their dogs andcats with bells so shewould not be surprisedby anyone sneaking up

on her.“I use the scent

of lavender on myjeans so she knowsmy smell,” Siarkiewiczsays.

“I also talk toher to let her know ifthere are stairs and tellher to stop before shewalks into anything.”

Fezzik the Re-triver also watches outfor Annie. “He gets outof her way so she hasa clear path,”Siarkiewicz says. “Ifthey are going for adrink of water at thesame time, Fezzik willlet Annie go first.”
