BEFORE HANDLING DINNERWARE YOU MUST IN THIS ORDER: PUT ON HAIRNET, WASH HANDS, PUT ON FOOD SAFE GLOVES
1. Place dinner fork half thumbnail away from table edge on le8 2. A. Place knife horizontal to fork
B. Rotate 90⁰ to right, ensuring equal distance 3. Place salad fork close as possible to dinner fork 4. Place teaspoon close as possible to dinner knife 5. Place dessert fork horizontal between dinner fork/knife 6. Place dessert spoon above dessert fork in opposite direcKon
7. Set bread and buNer plate above dinner/salad fork 8. Place salt above plate sePng facing nearest exit 9. Place pepper to right of salt 10. Place sugar caddy behind salt and pepper 11. Place buNer dish on side of pepper 12. Place creamer to le8 of salt 13. Place coffee cup le8 of teaspoon with handle at 45⁰ angle 14. Fold napkin and place above dessert ware

Napkin Folding Process WMU Catering
STEP 1 Take clean napkin from chair
STEP 2 Fold napkin in half creaKng a
rectangle
STEP 3 Fold top half of napkin with folded edge towards you
STEP 4 Fold once more towards you
STEP 5 Make alternaKng folds towards and away from you, leaving about 2-‐3 inch unfolded porKon
STEP 6 Fold napkin in half with unfolded porKon on the
inside
STEP 7 Turn creased porKon upright, fold 2-‐3 inch unfolded porKon into
triangle, fold triangle in to napkin’s centered crease
STEP 8 Place folded napkin above
dessert fork/spoon, unfold with half napkin unfolding on B&B plate
