Chapter Three 13

Correcting Your Cookies Are your baked cookies… Too tough? Check your measurements, the amount of sugar or flour used may be wrong. Using bread flour or a flour with less protein content may correct this problem and make cookies chewier. Too crumbly? This may be the result of too much sugar, shortening, or the ingredients may not have been mixed thoroughly enough. Try adding more eggs to a new batch, then mix again. Too hard? Too much flour or not enough shortening may be the cause of this. It is important to always be aware of how long the cookies have been baking, as over baking may cause hardness. A standard cooking timer can be used to help monitor baking time. Too dry? The same things that make cookies too hard make them too dry as well. If your cookies are too dry, try baking at a higher temperature for a shorter amount of time. In addition, you may substitute brown sugar for part of the granulated sugar. lacking flavor? Make sure all of the cooking ingredients were added. Also be sure your baking equipment has been properly washed before use. Using Low quality or outdated ingredients may result in poor or undesired flavor.
