Sometimes simple is better.

Actually most times, yes?

 

So this post is gonna be simple.

 

This Whoopie Pie Cake was sort of accidental.  Obviously not accidental in intention, butaccidental in execution.

See, I was going to make this a super fancy, stack-o-whoopie pies piled up to make a giantgorgeous deconstructed type cake.

 

Unfortunately, ain’t nobody got time for that.

Meaning me.  I ain’t got time for that.

 

So I took the easy route.

It might not be as visually appealing as a giant stack of whoopie pies…I mean not much would…but it is incredibly tasty.

And also, you can actually slice it without holding your breath.

Which is kind of important, because I can only hold my breath for like 7 seconds before I’mcertain I will faint.

 

Annnnnyway.

Whoopie Pie Cake.

Simple. Delicious. Make it.

Just start with a chocolate cake mix.

Listen to the directions, then add an extra egg.Grease 2, 9×13 pans with butter and dust with cocoa powder.

Split the batter evenly between the 2 pans.(Obviously if you don’t have 2 pans, just bake one at a time.)

When the cakes are done, allow them to cool completely.

 Spread it out evenly, and place the other cake on top.

Next make your chocolate ganache.This is actually an optional step, but not really

Just heat up some heavy cream to almost boiling and then add in your chocolate chips, stirringuntil smooth.

Cool the ganache slightly and pour that over the top of the cake…

Spread it to just about the edges of the cake and allow it to drip over the sides for dah-rama.

2.  Grease 2 9x13 sized pans with butter and dust with cocoa powder, set aside.3.  Prepare cake according to package directions, but add in an extra egg to the mix.4.  Split the batter evenly between the 2 pans and bake for 15­20 minutes until a toothpick

comes out clean.5.  Allow cakes to cool completely.Filling1.  In stand mixer beat butter and Fluff together until smooth.2.  Turn mixer to low and slowly add in powdered sugar. Turning mixer back up, continue

mixing for 30­60 seconds until smooth.3.  Spread the filling on top of one of the cakes. Top the filling with the other cake.Ganache1.  In small saucepan bring the heavy cream to almost a boil. Remove from heat and stir in

chocolate chips. Allow to cool for 10 minutes and then pour over top of cake.

Notes

you could also bake this in 2 9x9 round pans

I work at a restaurant and always bring the staff treats on the weekends. Guesswhat they are getting this weekend. Think I’ll make in the round pans to look like agiant whoopie pie. Thanks for the idea.

I just finished swirling on the ganache. This cake will be a knockout at the 4th of JulyBBQ tomorrow! I used an 11″ X 14″ X 1″ deep cake pan to make the layers withparchment paper on the bottom. I followed the same cake recipe and baked it for15-18 minutes. I wish I doubled the filling. The cake layers at this size have a biggerarea. The current filling was plenty to cover it; I personally like more filling. Can’twait to have a piece of this!

Just thought I would let you know I got here by following a link fir egg free recipes,& this was not. Both my girls are allergic to eggs so I was excited to see this recipenoted as “not an egg in site”. Not only do boxed cake mixes call for eggs, butmarshmallow fluff also contains egg as well. Looks great & yummy, but verydisappointed, & just thought I would let you know in case others had allergies aswell.

Marshmallow Fluff is made from Egg Whites – so this is not an egg free recipe.Many people with an egg allergy are allergic to the white!

I am going to try this gluten free. It looks delish!To Dani above me…. I have made the fluff without butter. Use Spectrum palmshortening. Use dairy free chocolate chips and the extra creamy thick part of a canof coconut milk in place of heavy cream or actually, you can use any non-dairy milkfor the ganache.

Marshmallow fluff is also called marshmallow creme in some places. It is amarshmallow flavored creamy stuff usually found in the baking section.

i got half and half instead of heavy cream, what can I do to to substitute, I do notwant to go to store. Cake in the oven

This looks amazing!! Can’t wait to make it this weekend. One question, would thefilling still work if I only use 1/2 cup butter? Don’t get me wrong, it would beheavenly for sure…but I’m not sure my heart can handle that much butter!! Ha ha!!

I don’t know how to bake and no one else in my household does, so I will just sit inthe corner and cry. Don’t pay any attention to me. Thanks for the pictures and all ofthe posts. That cake, a gallon of vanilla ice cream and hot, black coffee would bethe perfect day before death for me. Thanks.
