As I look back at past summers, I see a trail of
beautiful and bittersweet memories. There have
been summers that overflowed with joy and
summers filled with deep sadness and pain. The
common thread is that every summer was
unique and had its own tale to tell.
Just as every natural summer has a story, so
does every spiritual summer. We will each
walk through the spiritual seasons many times.
Autumn is a time of change. Winter is a time of
barrenness and preparation. Spring is a time of
rebirth. And summer is a time for bearing fruit
and embracing the abundant life that surrounds
us.
The key to embracing our spiritual summer, no
matter what time of year it is in the natural, is
to remember to seize the joy of the season. This
is a time to feel the heavenly warmth on our
face and revel in the beauty that surrounds us.
Relax, have fun, celebrate, and abide in
gratitude for the blessings that surround. Fall
and winter will come, but don’t let thoughts of
the unknown rob you of the joy of the moment.
Summer is a season known for cultivating and
bearing good fruit. Oh goodness, there is just
nothing like a sweet, sun-ripened, summer
strawberry. It is like a taste of heaven on earth!
Our spiritual fruit of love, joy, peace,
forbearance, kindness, goodness, faithfulness,
gentleness, and self-control must also be
cultivated and ripened so it can taste even
sweeter than the best summer strawberry. There
is one sure way to do this, and that is to
remember who our spiritual gardener is and to
remain in him always.
“I am the vine; you are the branches.
If you remain in me and I in you, you
will bear much fruit; apart from me
you can do nothing.” (John 15:5 NIV)
Let’s celebrate our summers, both
the natural and the spiritual, and
embrace every story being written,
because God’s hand is in each one.
Lord, thank you for the gift of
summer. Thank you for ice cream
cones, backyard barbecues, and
sun-drenched memories. May we
seize each moment of joy and
remember that you are the true
cultivator of our harvest and
author of our stories. Amen.

Vacation Bible School
Vacation Bible School is scheduled at our church from August 12th through August 16th from 9:00
a.m. until noon. If anyone needs a registration form, Carol Hart will be receiving them soon
although preregistration is not required. More information will be posted in the Sunday bulletin as
plans are finalized.

This and That
As I sit in front of the laptop thinking of what to write, my thoughts
run the gambit. But I decided to give you some information on
micronutrients. What are they you say! Well, they are a
classification used to lump together vitamins and minerals, all
essential to the health of your body. We generally think of eating
healthy foods that maintain good sources of proteins, fats (lipids)
and carbohydrates (sugars) aka macronutrients. These are required in large amounts and provide
the energy in the form of calories that our body needs. Supporting roll goes to micronutrients. For
a number of reasons these substances provide the ‘magic’ necessary to produce the enzymes,
hormones and other substances for proper growth and development of the human body. As
minuscule the amounts needed, the absence of them is severe. For instance; magnesium helps the
heart maintain normal rhythm, assists the body in converting glucose into energy. It also aids in
calcium and vitamin C metabolization. Iron helps produce red blood cells. Iodine supports thyroid
gland development and function. Sodium plays a major role in fluid maintenance. And so on and
on. So what I’m saying is eat a well-balanced diet.
As we get older our appetite changes as our activity level changes. So therefore, intake of adequate
nutrient needs is often not met. My suggestion: take a good multivitamin/mineral supplement. We
do. Lab work proves it’s working too!
Tips:
• Stabilize whipped cream by adding 1 T. cornstarch to every 2 C. heavy cream. Adjust for
lesser amounts of cream. Can use unflavored gelatin as well.
• When choosing zucchini smaller is better. Stay under 8 inches. Zucchini is high in
potassium and low in calories and keeps well in refrigerator.
• Beets are an extremely healthy veggie. High in vitamins, minerals, fiber, potassium and
antioxidants and low in calories.
• Good sources of magnesium: dry beans, dark leafy greens, quinoa, fish, cashews, oatmeal,
banana and broccoli.
• Raisins are dried fruit and can be chewy. They are better if soaked before adding to batter or
dough. Use hot water and soak for 10 minutes, drain well on paper towels. Hot fruit juices
can add a sweet richness if that’s what is desired. (Of course, there are always spirits for
adults only!)

No cook desserts rank high on the summer list of sweets to end the BBQ meal. With the heat of
summer no one wants to turn the oven on. Since I received no recipes to share let me suggest
making your own recipe. Take a package of pudding prepared, box of cookies (wafers or sandwich
type), cool whip or whipped cream, and a candy bar chopped. Decide the serving dish and let your
imagination run wild. Next time you do it use a bar of cream cheese in there somewhere. Feeling
daring? Then substitute sour cream or yogurt for part of the milk used in making the pudding. Let
me know how you make out.
While in Amish country recently I purchased another cookbook. Have quite a selection now.
Anyway, saw a recipe that kids can help with and will enjoy eating.
Orange Creamsickles
2 c. soften vanilla ice cream
6 oz. orange juice concentrate
6 oz. orange yogurt
6 (5 oz.) paper cups and wooden sticks
Mix ingredients until well blended. Pour into paper cups. Cover each with foil then slit each and
insert the stick. Freeze until hard about 6 hours or overnight. Remove foil and dip in hot water if
necessary to remove from the cup. Serve…
Friendship Cake
1 cup greetings 2 or 3 cups of love
1 to 2 cups smiles 1 tsp. sympathy
2 large handshakes 2 cups hospitality
Cream greeting and smiles together. Then add handshakes, beaten separately. Add love slowly;
sift sympathy and hospitality and fold in carefully. Bake by the warmth which streams from a
loving heart. Serve to your family and
friends.

The PPCC annually awards a scholarship to a
graduating high school student who is a
Christian and is either a student in the Stissing
Mountain High School and actively affiliated
with an area Christian Church or is a student in
another school district or private school and is a
member of a church within the Pine Plains
Council of Churches. The awarding of this
scholarship shall recognize the applicant’s
contributions to his/her church, school and
community.
