1 Pack of Vivera Greek Kebab2 wholemeal pitta breads A handful of cherry tomatoesA handful of pitted black olivesA handful of lettuce ¼ diced cucumberA dash of vegetable oil
For the tzatziki: ½ cup of your choice of vegan yoghurt A chunk of finely grated cucumberA dash of lemon juice 1 crushed garlic cloveA pinch of sea salt and cracked black pepperA dash of extra virgin olive oil A sprinkle of chopped fresh dill
Ingredients Toast the pitta breads until slightly charred.
Dice ¼ cucumber, halve the cherry tomatoes and tear the lettuce.
Fry the kebab for 5 mins on a medium heat in a dash of vegetable oil.

3.Whilst frying, make the vegan tzatziki. Finely grate the cucumber with the skin on, then squeeze out excess moisture. Add yoghurt to a large mixing bowl, then mix with cucumber, crushed garlic, finely chopped dill, salt, pepper, lemon juice and olive oil. Stir to combine.
Spread the tzatziki over the toasted pittas, and assemble the other ingredients on top. Add the kebab, and any leftover tzatziki, then serve.
