¼ cup dry quinoa
2 tsp olive oil
8 ounces sliced mushrooms
1/8 tsp salt
1/8 tsp black pepper
½ avocado, sliced
1 cup cherry tomatoes, halved
¼ cup chopped green onions
¼ cup chopped basil
1 Tbsp lime juice
4 ounces green chili peppers
8 ½ ounces artichoke hearts
1. Cook quinoa according to package directions.
2. Heat olive oil in a pan over medium heat. Add mushrooms, salt, and pepper. Cook until mushrooms are tender.
3. Combine the remaining ingredients in a large bowl. Stir in mushrooms and quinoa.
