Introduction
“For almost a hundred years our food has been altered and manipulated
in ways that no longer promote health but actually hinder it. The good
news is that it really isn’t that complicated to restore your health with
nutrition. In fact, it’s quite easy to enjoy health and wellness once you
have the true basics of nutrition in place.” - Michael Snellings, CCN
The sad part about our current health situation in the U.S. is that we attempt to replace health and
wellness with chemical substitutes such as psych medications for poor mental health, heart
medications for poor heart health, and diabetes medications for poor sugar metabolism. In actuality, all
the above conditions are entirely preventable with the correct basic knowledge on nutrition and all non-
optimum health conditions are really a result of organ dysfunction due to nutritional deficiencies.
My purpose is to cover some of the
biggest problems that people face
when nourishing their body. Much of
the information on health and nutrition
is meant to be very misleading.
However, I don’t want to focus on
what’s incorrect about what is currently
known about nutrition but rather on
what you can do NOW that would be
health promoting TODAY!
My name is Michael Snellings and I’m Owner and Chief Clinician of Snelling Wellness, LLC at 50th and
France in Edina, Minnesota. Additionally, I’m an Advanced Clinically Trained Nutrition Response Testing
Practitioner and I’ve help hundreds of people restore their health using whole-food nutrition. I’ve been in
practice for over 5 years and over that period of time I’ve learned that you cannot be truly healthy without

Honestly, I wasn’t always an expert in health and wellness. In fact, I was
much like you, trying all the different tricks to see if that would help me
like taking all the “RIGHT” supplements, eating gluten-free, dairy-free,
egg-free, grain-free, eating vegetarian, trying all the different diets, and
finally going to a doctor to only have them tell me that nothing was wrong,
after thousands of dollars in tests.
That turned out to be the best
decision of my life because it
led me to two doctors that did
know what was going on and
fast forward to today… now
I’m here to tell you!

culminated in my second year of medical school when I blacked-out for
2 days. At that point I decided to drop out of medical school because I
wasn’t finding the answers I needed, and my health was only getting
worse.

No Food Is Safe…
unless it has not been processed! Processing removes or
impairs food’s vitamin and mineral content; examples of processed
include pasteurized milk, white sugar, synthetic syrups,
bleached flour, and practically all packaged cereals, shortening,
trans-fats, etc.
unless it is free of any kind of synthetic chemicals (such as
fortification with vitamins and minerals to replace what was lost
during processing). Fortification with synthetic vitamins and
minerals is actually useless and has proven to be dangerous. Tests
made on dogs with white flour fortified with synthetic vitamins
demonstrated that the fortified flour killed dogs quicker than the old
white flour, unfortified. That is why Canadian laws now prohibit the
adulteration of bread or flour with synthetic materials of any kind. If
the vitamin content is to be raised, it must be done by retaining the
original factors, not by adding new ones of unknown effect.

Processed foods, refined sugars, and
artificial sweeteners deplete the body
of vital energy
Carbohydrates, or more appropriately sugars, create an imbalance
in normal blood sugar levels creating a stress response inside the
body.
This stress response signals the body to release insulin, which in
turn tells the body to store fat (see illustration above). Additionally,
when insulin is released into the blood stream it creates a blood
sugar crash, which results in mood swings. Brain fog is a result of
blood sugar levels plummeting as well because the brain’s sole
source of energy is sugar.
Of course, the chaos doesn’t end there because low blood sugar
signals the body to release cortisol (a stress hormone), which
increases sugar cravings and the result is people eat more sugar to
“get the blood sugars back to normal”. However, the consumption of
sugar leads to high blood sugars AGAIN and the rollercoaster
begins once more. That is why I call it the blood sugar rollercoaster!

Research shows that foods that
are high-fat and high-sugar
possess addictive qualities, and
stress adds to the addiction and

risk for obesity. Stress makes

sugar foods more and promotes
compulsive behavior. Eating
sugar then makes you more
stressed and promotes weight
gain.

Healthier alternatives for sugar is
healthy fats and proteins, as they
provide sustained energy throughout
the day
Healthy fats are really what your body needs and good clean
protein from healthy animals helps build and repair the body. I like
to use the analogy of “throwing an oak log on the fire.” That is the
type of energy healthy fats and proteins provide.
In order to have optimum health you really have to keep blood
sugar levels within normal ranges (see illustration above). Balanced
blood sugar levels ensures that you do not store excess sugars as
fat – this is the only way your body stores fat is by taking excess
sugars out of the blood stream. Fat that is consumed is not stored
as fat. And the only way your body knows to store fat is when
insulin is released otherwise fat will not be stored. Therefore, this
data may make you ask the question, “If I stop eating sugar will my
body stop storing fat?” Well… the answer is yes!

The real reason why people are sick in tired is that they
commonly abuse one category of food, which is carbohydrates
or sugar to be frank. What is sugar? Well… what I tell my all my
clients is that, “it’s anything that’s not fat or protein!” I know that
may sound alarming but that is the reaction I’m looking for
because that’s what communicates my point. Lets look at this in
detail.
All foods are composed of three major components;
proteins, fats, and carbohydrates and some foods may fall
under one or two categories or all three.
Proteins would be anything that’s meat, eggs, fish, nuts,
seeds, and quinoa just to name the common types.
Fats are in butter, olive oil, animal meats, avocados, cod
liver oil, flax seed oil, hemp seeds, nuts, pumpkin seeds,
sesame seeds, black currant seed oil, coconut oil, real milk, and
ghee (which is butter without the milk remnants AKA clarified).
Carbohydrates are considered either to be dietary fiber,
complex carbs, or simple carbs. Dietary fiber is just that, its fiber
which helps add bulk to food among other things. However,
complex and simple carbs are the same as they are both broken
down into glucose which is a scientific term for sugar. Its just
that complex carbs have more complex chains of glucose (ie.
bread) than simple carbs (ie. granulated sugar). See cartoon.

HEALTHY FATS AND PROTEINS!
Think about it… what are our body’s
mainly composed of? FAT AND
PROTEIN! Therefore, doesn’t it make
sense that you would want to eat more
healthy fats and proteins so that your
body can use those components to
heal and repair itself! In truth, what I’ve
noticed significantly improves the
health and wellness of all my clients is
when they’re eating more healthy fats
& proteins and less carbohydrates.
