Where were you originally from? Bristol but have lived in South Gloucestershire and Wiltshire over the last 30 years.

How did Quartz-Lite come to life? After being made redundant 10 years ago , I looked around for a business and bought a franchise for a replacement kitchen door company covering the Bristol and Bath Area.However in 2004 I was introduced to an Australian concept of transforming worktops with a 7mm thick granite finish worktops which was very unique and i was the first company in the area to offer this service in the South west area and it was a natural fit with the door replacement service.

What’s your Influences? I have always been a keen DIY man and have renovated 5 properties in my time so my involvement in the kitchen business is really something i enjoy doing. It is always very satisfying to be able to transform someones kitchen in just a day with Quartz-Lite and I can honestly say I have never had a dissatisfied customer as once people have it donethey are normally over the moon with the result.

Do you have any Hobbies? I don’t have a tremendous time for hobbies, but I do play Club Badminton every week in Wiltshire and my 7 year old Golden Retriever keeps me fit also.

What’s your favourite place? There are so many nice places in the UK but my favourite has got to be Salcombe and the South Hams area, with its wonderful coastal walks and views

1. Peel & juice citrus fruits, put juice to one side.

2. Roughly chop lemongrass & ginger. Place in muslin cloth with vanilla pods & tie well.

3. Put all ingredients except citrus juice into a pan, bring to boil & simmer for 10 minutes.

4. Allow to cool to room temperature.

5. Blend until smooth & press the liquid through a fine sieve with the back of a ladle.

6. Whisk in citrus juice & chill before serving.

Ingredients Preparation

• 1 orange

• 1 lemon

• 2 used vanilla pods (seeds scraped out)

• 4 sticks lemongrass

• 40g fresh ginger

• 1.35kg chopped rhubarb (forced is preferable)

• 200g sugar

• 170ml elderflower cordial

• 240g sparkling wine

• 240g water

• 4 tbsp grenadine

At this time of the year when the wind bites & the only exciting thing coming from the ground is brassicas the emergence of the year’s first fruit in the shape of forced rhubarb is a welcome delight not only on the taste buds but also the eye due to its bright pink colour. Don’t forget that, despite is lovely appearance, rhubarb has a sting in its tail, the leaves are quite unpleasant & will make you rather ill!

At the restaurant we serve this with gin poached rhubarb & clotted cream but it is also a great adult smoothie in its own right. Alternatively try it gently heated as a warm soup for desert served with vanilla ice cream.

Gardener’s CornerSpring – and it’s time to get excited about the garden at last! But where do you start?

That sad and ragged green patch in the middle of most gardens will now need a good rake to remove the moss, and then a gentle mowing with the blades set high. Trim the edges and see the difference it makes to the garden.

Late flowering Clematis will also benefit from a trim now. Cut them down to low buds about 30cm above the ground and they will then flower on the healthy new wood. These smaller-flowered Clematis look especially charming when intermingled with climbing roses.

If you are planning your first-ever vegetable garden this year, start with small beds so that they do not overwhelm you, and tackle one at a time. A 3m by 1.2m bed is a perfect size as it means that you do not need to tread on the beds and compact our notorious local clay soil. Grow only the expensive-to-buy vegetables at first: yellow courgettes, French climbing beans, rocket and fancy salad leaves. Home-grown salad is so much better than the bleached, wilted version sold in plastic bags. Watch out for slugs though!

Have you chitted your potatoes yet? Early potatoes can be planted now and they are great for clearing new ground. The soil will be a lovely texture after harvesting.

Helleborus argutifolius, the Corsican Hellebore, is one of those essential garden plants. Its lovely lime-green flowers last from January to June and the lush, evergreen leaves look almost good to eat! Take care and wear gloves when cutting out the dead leaves and flowers, as the sap is an irritant.

A final plea - don’t knot your daffs when they finish flowering. Let them die down naturally so the bulbs can flower even better next year.
