Oregano Potato Casserole by Barbara Stewart 2 ! cups mashed potatoes(with milk) 1cup small curd cottage cheese ! cup sour cream 3 eggs, separated
! teaspoon seasoned salt 2 tablespoons butter or margarine 2 tablespoons minced fresh oregano or 2 teaspoons dried oregano 2 tablespoons minced fresh parsley or 2 teaspoons dried parsley
1. In a large bowl, combine potatoes, cottage cheese, sour cream, egg yolks, oregano, parsley and seasoned salt
2. In a mixing bowl, beat the egg whites until stiff peaks form, fold into potato mixture. 3. Transfer to a lightly greased 2 ! quart baking dish. Dot with butter 4. Bake, uncovered at 350 degrees for 1 hour or until lightly browned.
Serves 6-8.

Oregano is a hardy perennial herb that is related to the mint family. It can grow to 2 feet tall or can be used as a ground cover. Like mint, this herb can be invasive. To control it’s spread you can try to plant it in a bucket with the bottom cut out. It loves full sun and well-drained soil. Plants may be started from seeds or cuttings. Cuttings seem to produce more flavorful plants than those started from seeds. Oregano is typically used in Italian, Mediterranean or Mexican dishes. It complements dishes that have tomatoes, eggplant or any kind of meat. Try sprinkling it on scrambled eggs or adding it to dressings for a change in taste. Drying oregano is easy. Cut it before the sun gets hot during the summer so that the oils in the plant aren’t evaporated. You may hang it away from the direct sun or lay it out on a screen to air dry. Grind and store the dried herb in a glass jar or container.

I have been working closely with Keith Finch (City Vegetation) and Connie Curtis (City Dot) to develop and implement a comprehensive strategy to address the issues raised in our meeting with the owners of the Royal Inn, specifically regarding the Green St. bridge, Green/Broad sidewalk, and the vegetation surrounding both. To date, Mr Finch's crew has trimmed the vegetation in question and will be checking it frequently. Mr. Finch is also reaching out to BB&T Ballpark to see if they are willing to remove the Leyland cypress trees from their end of the bridge and replace them with something more passable and inviting to pedestrians and cyclists. Ms. Curtis is communicating directly with NCDOT to find out exactly what modifications the state will permit the city to make to the bridge. At the moment the tentative plan is to remove the orange barricades from either end, pressure wash the graffiti, and install bollards and or large landscaped concrete planters to prevent vehicle thru traffic. I met yesterday with the owners of the Royal Inn again and toured their site, discussing their concerns. They have already gotten estimates to make the pertinent repairs to the fence. At the suggestion of Capt Masencup and Atty Andrews, I have formed a committee to continue our forward momentum. Rick Henterly, Mike Foltz, Vernetta Cockerham, and Lindsay Snyder have all agreed to serve during these initial stages. We will continue reaching out to property owners and residents around N. Green as we progress.

Tending the Sidewalks
Eight years ago my wife and I decided to make the West Salem Neighborhood our home. We were drawn to the area because of the historic homes and the proximity to downtown. One of our favorite activities is walking our streets for exercise and relaxation. The sidewalks are essential in making walking and running possible in our neighborhood.
After reading about the Royal Inn Meeting from the May newsletter concerning the density of vegetation around the sidewalks and under the footbridge near the hotel, I was reminded of the upkeep of the sidewalks throughout West Salem. While most sidewalks in our neighborhood are well maintained, there are some areas that could be improved. Anytime pedestrians have to duck under tree limbs or leave the sidewalk because of overgrown vegetation, it becomes a nuisance and a possible a safety issue.
It is evident from reading the neighborhood newsletter that residents want to make this a great place to live. Every resident and landlord plays a part in the upkeep of our sidewalks and curbs. If everyone will make sure their sidewalk is clear, our neighborhood streets will look more welcoming to residents and less welcoming to crime.
