Please Shop Local This Holiday Season and BeyondHappy Holidays to you! My favorite time of year. I have always loved the holidays. I don’t know why, but my whole persona changes. Once the leaves start falling and I can make my home transform into another place and time, with fall and holiday décor… for me, heaven has arrived.

This is my 5th Holiday issue! Wow, my how time flies, when you are trying to be a successful publisher. The sad thing is our economy really has not changed. It seems a little better, but as I have my finger on the pulse of things in the valley, as far as my clients go…this holiday season is VITAL to their success and keeping their doors open.

Now that the magazine goes all the way from Boise to Weiser and all the towns in-between, you get to read about many of the locally owned retail stores that have partnered with the magazine. For the last 4 years, the magazine has had a special section showcasing my retail advertisers. We have also pushed the SHOP LOCAL MESSAGE from the first publica-tion I created. The heart of my publication is to bring forward the importance of the “local movement”and all I can say here is… PLEASE GO IN TO OUR LOCAL MOM AND POP STORES AND BUY SOMETHING.

Now that I have that out of the way, please enjoy this beautiful local story book. How lucky I am to be able to do this job and to meet the fabulous folks that I have met through the magazine. We represent over 100 locally owned businesses. My clients, these brave business owners, with passion and heart and intention to do things their way and maybe change the world for the better---you will be able to read about a few of them in this issue.

Of course, the stories and the design of our holiday issue are well worth the trip through the pages. I am blessed beyond message to have the team of writers and designers that have been put in my life. They are all local and all trying to do what they love.

utfitting a castle is the stuff of myth for most, but for Kate Swift, it was a fairytale come true. It was her two years as

Interior Design Manager for Dr. Tim Barber’s castle on Warm Springs Av-enue that first led her to Happy Wife LLC.

Under Swift's leadership, Happy Wife has now grown to perform housekeep-ing and personal concierge services for more than 125 clients through-out the Treasure Valley. Demand for services has not let up, and Swift expects to be hiring more staff as the company grows. She understands that running a business like Happy Wife is a collaborative effort. “Our teams are encouraged to make the decisions necessary to meet the cli-ents’ needs.”

THE ROAD TO HAPPiNESS

Swift always envisioned herself as an entrepreneur. She started down the path at the tender age of seven, knocking on doors in her Anchor-age, Alaska neighborhood looking for projects to do. “Weeding, garden-ing, cleaning… whatever someone wanted help with. There was never a task I couldn’t—or wouldn’t—do.”

Before relocating to Boise, Swift worked for Fortune 500 companies, including eBay and Discover Card, learning the organizational and management skills that have helped her grow her company.

Her personal journey has shown her what really matters in life. “Happiness isn’t defined by how much money you have or how many famous people you know. It’s about having the time to spend with fam-ily and friends in activities that bring joy to your life.” For Swift, happiness is knowing that she can give her clients back some of that time by helping them with the demands of every-day living.

ALL AbOUT THE “YES”

Whatever the task, the Happy Wife answer is always “Yes.”

Last year, for example, Happy Wife had the privilege of choosing decorations for Dr. Barber’s home for the holidays. “He doesn’t have time to do it all himself,” says Swift. “The unique style and architecture of the home was a perfect palette for the lavish holiday décor we chose,” she says proudly. “We’re looking forward to doing it again this year.”

The rest of the year was not always so magical, but from October thru December, with Halloween, Thanksgiving and then the grand finale, Christmas. Ever since I can re-member, this time of year has always been my happy time.

My family was a split family, like many other families. Christmas Eve was when my husband and I would gath-er up our three children to be with my dad and his wife and family. We would all meet at the Moose Lodge in Cheyenne, Wyoming around 3pm and have my favorite holiday drink, a Tom and Jerry. My dad Donald Clason and his wife Collette were long-time supporters of the Moose Lodge and worked many volunteer hours to help support this important organization.

Of course, many of my dad’s friends and most of our family, on his end would be there. How I long to have one more Christmas Eve, at the Cheyenne Moose Lodge, when my kids were little and my dad and his wife were still part of this world.

After a couple hours partaking in holiday cheer with the crowd, we would all go to my dad and Collette’s house for dinner and presents. It was the only time of year that they ever used the basement. Dad would have the wood burning stove cranked up and a huge pot of his amazing winter stew simmering in the largest Slow Cooker I have ever seen.

After we opened presents and ate the best homemade stew that has ever been made on this planet, we would wrap up our little ones and go back home to prepare for Santa. Before I hit the sheets, I would make a Christmas Egg Casserole. That way, I had breakfast ready to throw in the oven Christmas morning, and could simply enjoy the events at hand.

Our Christmases are much different now. My youngest son will be 20 years old the day after Christmas and my dad and his wife has long since passed. My little sister lives far away in Wichita, Kansas and my oldest daughter and granddaughter live in Texas and rarely make it home for Christmas.

But making a big pot of beef stew, whipping up a batch of the best Tom and Jerry’s you’ve tried and creating my Breakfast Casserole still brings tears to my eyes, as I am bawling as I write this.

Please enjoy my family recipes. My dad normally used wild game for meat in his stew; I use beef. I have changed his recipe just a little, but the memories are still the same. May everyone reading this take the time to cherish your time this holiday season! Life is short and things change quickly.

DONALD DUCK’S WiNTER STEW 2 pounds of stew meat cut up and dredged in flour 2 tablespoons oil in a large stock pan

Heat oil on high and brown the meat really well on all sides.

Then throw in:

2 cups each of each.. large chunks potatoes, carrots, celery 1 cup of butternut squash, yellow squash, turnip 2 onions chopped 1½ cups chopped fresh cabbage ¾ cup raw barley Fresh corn off the cob (3 ears) or frozen corn

1. Sautee for 20 minutes. Chop up fresh herbs. I use rosemary, thyme and garlic.

2. Add one large can of Rotel Tomatoes and 8 quarters of water.

3. Stir and simmer for 2 hours. Add 2 tablespoons of “Better than Bouillon” Beef Paste

4. Serve with crusty bread.

CHRiSTMAS MORNiNG bREAKFAST CASSEROLE 1 bag of frozen hash browns 3 cups chopped ham 1 cup chopped onions 1 can chopped green chilies 1 pound grated Swiss cheese 3 cups blanched asparagus or broccoli (whichever you prefer) 12 eggs beaten with 1 cup milk 1 tsp. of each, dried mustard; salt and pepper... stir in eggs

1. Put hash browns at bottom of sprayed 9x13 baking dish. Lay the ham and veggies evenly on top of the potatoes. Layer grated cheese. Pour egg mixture over potatoes.

2. Cover with foil and leave in refrigerator overnight.

3. Heat oven to 350. Leave covered and bake for about 1 hour till the eggs are firm.

4. Serve with fresh fruit and salsa.

TOM AND JERRY12 eggs, separated ½ tsp. salt 1 lb butter, at room temperature 3 lb. powdered sugar 2 tsp. vanilla, rum, or brandy flavoring 1 tsp. nutmeg ½ tsp. cloves 1 tsp. allspice One shot of spiced rum or brandy

1. Beat egg whites until stiff; add salt. Beat egg yolks until light. Cream butter and powdered sugar; mix until crumbly. Add egg yolks and vanilla; mix well. Add spices. Add egg whites; beat until well blended.

2. Will keep several weeks in refrigerator. May be frozen, if covered.

3. Use 1 heaping tablespoon of batter for each Tom and Jerry. Put one shot of liquor at bottom of coffee mug, add ONE HEAPING tablespoon of mix. Add boiling hot water to fill to the top. Stir and enjoy.

Downtown Ontario would not be the same without the furniture store located on South Oregon Street. it has long been a fixture within the

community, and though names have changed, it is still “the” furniture store for most of Malheur County.

There are many ways that Ashley Furniture Homestore gives back to the community. Most of their support goes to Little League teams and local schools. For example, two luxury recliners are donated to Treasure Valley Community College each year, and are raffled off to a set of lucky fans to enjoy the best seats in the house during the season.

Regardless of where I speak or to whom, no matter the age, race or culture, and re-gardless of how many differences there are

on other levels, people all seem to agree with this concept; “Life is 10% what happens to me and 90% how I react to it.” (Chuck Swindoll) Ben Franklin put it this way, “Life is ten percent what you make it and ninety percent how you take it.”

If this is such a fundamental truth, why is stress a leading cause of health problems? Why are antac-ids the number one over-the-counter medication? Why does road rage exist…even when people aren’t driving? I think it’s because we forget to remind ourselves that although there are certain things we cannot control, we do have the power to control our perspective and attitude in life.

Keeping the right perspective is particularly timely and powerful in the midst of the chal-lenges some are facing currently - whether eco-nomically, in business, health or other life issues. Now more than ever, everyone needs encourage-ment and hope along with a gentle reminder of

the power of our own perspective. Frank Capra’s classic movie, “It’s a Wonderful Life” offers just that.

The movie opens with various loved ones offering up prayers for George Bailey (portrayed by Jimmy Stewart) who is at a place of desperation in his life. We then see and hear the dialogue between stars in the heavens, representing angels talking to God. Joseph (the senior angel) and God are talking to Clarence (the apprentice angel) about George Bailey. God tells him “A man down on Earth needs our help.” Clarence says, “Splendid! Is he sick?” “No, worse-he’s discouraged,” Joseph replies. “At exactly 10:45 PM, that man will be thinking seriously of throwing away God’s great-est gift” (meaning his life).

Clarence and George then meet when George is standing on a snow-covered bridge in Bedford Falls contemplating jumping off and ending his life. The whole point of why he’s there is hugely significant. George Bailey’s condition of hopeless-ness had to do primarily with his economic state. Earlier that day, his Uncle Billy had “lost” a large sum of cash that was intended for deposit for the Bailey Brothers Building and Loan. George knew he could never come up with that money and as a result was facing arrest and prison.

As the movie progresses, Clarence walks George through his life, giving him glimpses of what life would have been like for his family and friends if he hadn’t lived. Mary, his wife (portrayed by Don-na Reed) never married so obviously his children were never born either. His mother was a sad and lonely old woman. His uncle ended up in an in-sane asylum. His former boss went to prison for twenty years. His brother would have drowned and never been in the Army, which meant he wasn’t able to save his fellow soldiers’ lives.

After this journey with Clarence, only one thing changed that day, but it was the thing that affect-ed everything else-his perspective. His situation was still the same-the missing money, possible arrest and jail time, his wife, children, family, friends and business situation was unchanged-but his perspective toward it all, was completely opposite.

When George stood on the same bridge that he was ready to jump from earlier, he then was pray-ing, asking God “Get me back. I don’t care what happens to me. Get me back to my wife and kids. Help me Clarence, please. I want to live again. I want to live again. Please God, let me live again.” Just as George Bailey found out, whether we look at our life and say “it’s a wonderful life” or not depends entirely on the perspective we choose.

T The sparkling event that welcomes the holiday season in western Treasure Valley is the Canyon County Festival of

Trees, planned from Friday, Nov. 23 through Monday, Nov. 26, culminating with the gala Dinner and Live Auction on Nov. 27, all at the Nampa Civic Center.This year is the 20th anniversary of the festival, and the theme cho-sen by the board of directors is “Holiday Blessings,” which empha-sizes not only the seasonal blessings of giving, family gatherings and spiritual enrichment, but also the blessings from the festival’s proceeds that all go to the Meals on Wheels programs in Nampa and Caldwell. These programs serve hot, nutritious meals to thou-sands of the elderly and homebound, enabling them to stay in their own homes longer than would otherwise be possible. During the last 19 years, the festival has raised more than $500,000 for this program.

The Co-chairwomen Linda Clemenger and Pamela Knighten report that the festival will open at 3 p.m. Friday, Nov. 23 with entertain-ment by the Suzuki string group, refreshments and the display of gor-geous trees, wreaths and centerpieces and exciting Silent Auction items to bid on. It continues Nov. 24 from 10 a.m. to 6 p.m.; Nov. 25 from noon to 5 p.m.; and Nov. 26 from 10 a.m. to 7 p.m.Any businesses, clubs, schools or organizations who desire to help with this fund-raising effort are all invited to contact Clemenger at 459-0439, evenings, and sign up as sponsors, decorate a tree, or donate a silent auction item. SANTA’S CRAFT SHOPClemenger said the festival is planning to feature a new craft-ers’ booth called Santa’s Craft Shop, and any local folks who enjoy making handmade items are invited to donate some of their work for this good cause. The holidays are a perfect time to bring new and fresh interior decorating ideas into your home. Christmas is that wonderful time of year when you create magic with a little sparkle and lots of enthusiasm.One thing that has become very popular this season are tablescapes, your Christmas tablescape can be rustic or whimsical, minimalist or majestic. Whatever design elements or styles you choose, your Christmas décor can receive a helping hand from all the hoopla and childlike delight associated with the season. Here are some ideas to create your best Christmas tablescape ever.

Create Your Holiday Theme:First, the key to making your holiday decorations charming and stylish is to make a plan and create a theme ahead of time. Think about your color scheme and how your theme will work from room to room. Be creative and let your imagination run wild as you think about possible themes: Holiday Memories, Home for the Holidays, The Magic of Christmas, etc. The possibilities are endless. If you have special china or Christmas dinnerware you plan to use again this year, you can still make your ta-ble unique by incorporating a theme into your design, by using small trees, snowflakes, candles, runners, plat-ters and easels to create height and dimension.

Decorate Simply:There’s no law that says you have to slave over your Christmas table décor, it can be hectic enough when you are just trying to prepare a meal and bake. wreath or pine boughs in the center of your table, add a basket, candles of different heights (with batteries for safety),

Hello fine people! I’m Patti Saunders Mays, author of “Was It Something I Said? Common Things We All Do That Drive Others Away Without Knowing It (And What to do Instead)”. I’m a new contributor

to UL Magazine and delighted to be here! Cheryl Richard and I recently got together at a Boise Moxie Java to talk business and compare philosophies. Turns out, we’re so simi-lar in our love for Idaho and our passion for local businesses that I’m still spinning from all the energy that meeting gener-ated. It made for a get-together I’ll not soon forget. There’s no question in my mind that Cheryl is directing the UL Maga-zine in a journey to greatness that is just beginning, and I feel so very lucky to be on board.

Being born and raised in Idaho/Treasure Valley, my mindset is one of low-key practicality with an easygoing, live-and-let-live outlook. But I have that spark of entrepreneurial spirit that so many Idaho businesspeople share; a kind of “Snake River Stampede meets Wall Street” drive that burns with a passion that will not be dampened. That energizing spirit thrives throughout UL Magazine and that’s why my belief in this publication is so strong.

About me; my husband and I are happily retired from the hectic corporate life we lived in Seattle for 17 years. We returned to the Boise Valley to be with my beloved parents in their final years. We have one grown daughter (the light of our lives) who enjoys her own career in another state. I have several siblings here in the Boise Valley, and many wonderful friends, classmates and coworkers – all of whom I consider family.

So why am i writing? Well - I have two businesses that I’m promoting via UL Magazine, both of which I man-age from our home. The first, my cooking site, called “great Cooking Ideas.Com” has been spinning along and steadily growing for about 3 years now. It’s all about affordable, easy recipes that are family-friendly and use readily-avail-able ingredients. Every recipe is kitchen-tested and, if I do say so myself, way tastier than most. I like to think of it as extraordinary food for ordinary living.

My other pride & joy is my newly-published eBook, “Was It Something I Said? Common Things We All Do That Drive Others Away Without Knowing It (And What to do Instead)” which details exactly how we mess up socially again and again and never even know it. I wrote this book as a re-sult of insight gained from my degree in Social Psychology at the University of Oregon, coupled with my career at the executive level in corporate America.

The book is a no-holes-barred, tell-it-like-it-is description of various social faux pas we all make over and over which end up alienating us in ways we never imagined. It’s insightful and laced with just enough humor to keep it enjoyable. You’ll find yourself nodding in agreement and laughing over the descriptions of things people do to shoot themselves in the foot socially. CHis series, Soldier of Rome – The

Artorian Chronicles, is a peren-nial best-seller on Amazon for An-cient History. Set during the reign of the Emperor Tiberius, these books tell of the life and career of a Roman legionary. He classifies his works as ‘historical fiction, based on actual events’. The series currently has four books, though a fifth is expected sometime in 2013. Anyone with an interest in Roman history, or who simply likes action and adventure in the same vein as Gladiator and 300 will enjoy these. James has also writ-ten a short novella based on one of the minor characters from the series, called Centurion Valens and the Em-press of Death, which he classifies as a semi-erotic thriller.

James credits his parents with intro-ducing him to history at a young age. It was through their influence that he made the Roman Empire a life study. And like one of his favorite authors, J.R.R. Tolkien, James wrote his first book during war. For both men, writ-ing about another time and place served as a form of catharsis and escapism. In Tolkien’s case, he created his own world, writing the early stories of The Silmarillion, during the time of trench warfare in World War I. These would serve as the back-

ground to his greatest works, The Hobbit, and The Lord of the Rings. For James, he wrote the initial draft of his first book, Soldier of Rome: The Legionary, while serving in Iraq. He also wrote a couple chapters to see if he could carry the story on; these would serve as the base of the sequel, Soldier of Rome: The Sacrovir Revolt.

Like many authors, James wrote because of his love of storytelling and idea of bringing readers in, to get lost in another era. He continued to work his day-job with the Army Guard on Gowen Field while writ-ing subsequent novels on the side. In 2011, the rise of the eBook, par-ticularly Amazon Kindle, leveled the playing field for James and other independent authors. Last Decem-ber, he elected to resign from his position on Gowen and dedicate himself to writing full-time; he has never looked back.

Though Rome has always been a passion for James, he has recently branched into other eras in history, specifically Napoleonic Europe. His last book, entitled Forlorn Hope: The Storming of Badajoz, takes place in 1812 in southern Spain during the Peninsular War. In it, the British army

under Sir Arthur Wellesley, who later became the Duke of Wellington, attempts to break the formidable fortress of Badajoz, held by the French. Though this was a shorter novella, it did serve as a precursor to James’ latest work; a full-length novel set during the Waterloo Cam-paign of 1815, entitled I Stood with Wellington. This work is currently in revision and editing, with an intended release date of around mid-December.

So what’s next for James? He is cur-rently writing a short novella while waiting for I Stood with Wellington to come back from the editor. This will tell the story of Michel Ney, Mar-shal of France, and his escape from execution following the fall of Napoleon, and will be called Cour-age, Marshal Ney. This winter he will devote himself to finishing the last two books of The Artorian Chronicles, before moving on to new horizons. He is also involving himself with local book clubs, as well as assisting other aspiring authors.

Almost everyone would answer that question with an emphatic ‘no!’ But if you fail to have a plan for your holiday eating, you’re more likely to eat out of control

and be regretting it come January. This time last year, Dave and I were reducing on the Take Shape for Life plan. Yep—we started just before Thanksgiving. But honestly, I loved having an “excuse” for not taking part in 10 week food fest. Here’s what I told myself: ‘Once I get this weight off, I can enjoy any of the foods I like in moderation.’ That got me out of the pity par-ty of denial which causes many dieters to fail. Just remember you’re not quitting fun food forever. A diet is a great time to re-think what the holidays really mean to you. It’s about being thankful for your blessings and being with the people you know and love. But in many cases, we’ve used the period from Halloween to New Years’ Day to open the floodgates to eating sweets, huge starch and fat laden dinners, hors d’oeuvres and cocktails several times a week for the ten week span. My goal is to not GAIN weight this season. I will eat lean and green every day there is NOT an event. Then I can truly enjoy a special dessert at a special event. If I have a cocktail at a special event, then I don’t have dessert or vice versa. A home-made treat as opposed to a store bought item is the only item ‘worth it’. I will stay away from bread and eat only cut veggies or lean meats at the snack table. I’ll also keep a diet soda or water with lemon in hand and step away from the food area. That’s my plan. Why don’t you make a plan, too so you’re cel-ebrating come January, not running out to buy larger clothes. One pill, two pills, three pills, four….five pills, six pills, seven pills more. Does this feel like you or your loved one? For many seniors, this is their truth. One of the biggest health risks facing many seniors today is the very thing that is meant to keep them healthy; medications and lots of them. Some time ago a patient was admitted to the nursing home where I was employed. She was incapable of even speaking. All she was able to do was moan. Our medi-cal director adjusted and eliminated several of her medications and this woman came completely out of her stupor and was to-tally alert and oriented. Her debilitating symptoms were medication related.

It’s not unusual for seniors these days to be taking anywhere from 6 to 15 or more dif-ferent prescription medications a day, and

in many cases these medications have been prescribed by more than one physician. This situation in and of itself would be enough to create the potential for many possible in-teractions and adverse side effects. Howev-er, not only are these seniors taking numer-ous medications, but they’re also adding vitamin and herb supplements as well.

In most cases no problems arise from this and everything stays in balance and works well to promote optimum health and wellbeing. But it is also not uncommon for combinations of prescription medications and over-the-counter substances to be working against one another causing several problems. Drug interactions can be the cause of anything from hair loss to mental status changes and in some cases even death. These interac-tions can be difficult to identify because many times the physician is working with limited information. It is not uncommon for patients to forget to mention the sup-plements they’re taking because they don’t see them as important since they are just over the counter. They also sometimes for-get to tell the physician about all the other prescription medication they’re taking. The consequences from this can be devastating.

Another very common problem with any amount of medications that the senior might be taking, is taking the medications proper-ly. Often the senior will forget whether the meds have been taken especially when there are different time schedules for the medica-tions. If there isn’t a system in place such as a pill box or medi-set, the senior will either not take their medications because they think they already did, or they will take too much because they forgot that they’d already taken them.

So here are a few tips to help keep from being one of the statistics:

• Makealistofyourmedications,vitaminsand supplements and update it with every new prescription or over the coun-ter addition. Carry the list with you at all times and especially when you visit your doctor, and ask him/her to review it.

• Haveyourpharmacistreviewyourmedlist as well. They should be very willing to offer this as a service. If they aren’t, switch pharmacies.

• Buy a pill box or medication set container that will hold a week’s worth of your medication and fill it every week. This takes the guesswork out of the process.

Medication is certainly a great thing to our aging society. It is in fact one of the con-tributing factors to our increasing lifespan, but it is also a slippery slope full of many hidden dangers if not properly managed and can contribute to a premature need for facility placement.

triglycerides and fatty acids. Fat moves through the blood as triglycerides. A triglyceride is composed of 3 fatty acids attached to a glycerol molecule. When the triglyceride reaches the level of the cell, it can either be used for energy or stored as fat. Insulin promotes fat stor-age, whereas glucagon facilitates the conversion of fat to energy. People who are insulin resistant or prediabetic have a difficult time losing weight because they have a system that is dominated by insulin.

Most of the time, when we diet, we reduce our overall calorie intake of everything - carbohydrates, fats, and proteins. When protein intake is restricted, our muscle mass is unpro-tected, and the body will burn muscle. Muscle is our energy burning furnace so we do not want to lose muscle. If we burn muscle, we end up with a lower muscle mass. In effect, we have now slowed our metabolism and we are worse off than in the beginning.

So, how do we lose weight without losing muscle and more importantly, how do we promote a glucagon dom-inant system? The key is to maintain protein intake at the level needed to support our muscle mass while restrict-ing carbohydrate intake. We have three “tanks” of energy - carbohydrates, mus-cle, and fat. If we protect our muscle with adequate protein intake and lower our carbohydrate consumption, keep-ing that tank relatively empty, then we are left with only the fat tank to burn. This promotes a glucagon dominant system.
