TOSTONES (FRIED GREEN PLANTAINS) www.charityskitchen.com PREP TIME: 10 min COOK TIME: 5 min SERVES: 2-4 DIRECTIONS 1. To begin you want to first peel your green plantains. 2. Now you want to slice the plantain at a slight angle and at least half an inch (1/2") in thickness. 3. Now you will need something to smash the plantains on and with after the first try, I use a wooden cutting board and a metal cup. 4. Next you want to prep your oil, I use vegetable oil but you can use the oil of your preference. You want the oil to cover the plantain completely. 5. Set the stove burner to med-high heat setting, remember that the oil needs to remain hot enough to fry. Test the oil to make sure it is hot enough to start by adding the smallest piece of the plantain, if it rises to the top and is frying than you know it is hot enough. 6. Before you begin to fry them, you will need to have on hand a plate with a napkin to absorb the oil in between fry’s. 7. Add your plantains, only enough to fit nicely in your pan do not crowd them so that they can cook evenly. You will fry them for (1 & 1/2 min) one and a half minutes. 8. Remove from heat and let sit for one minute before you begin to press them. 9. Pressing slightly and quickly on your cutting board begin to press your plantains and set them aside, you do not want to flatten them completely just a slight press to make them spread a little. You will need a new napkin to place them on after they are fried the second time to absorb the oil.

10. Once you have pressed all those in your batch you can return them to the frying pan to fry for the second time for another (1 & 1/2 min) one and a half minutes.

11. As you remove them from the heat lay them out on the napkin try not to stack them until they are cool this way when you sprinkle the salt it is applied evenly.

12. Once fried, sprinkle sea salt over them and serve.
