    Homemade Potato Salad

    Ingredients: 10-12 medium sized russet potatoes. 5 hard boiled eggs 2 cups chopped celery 1 cup diced black olives 2 cups mayo 2 tbsp sweet or dill relish 3 tbsp Dijon mustard

    Prepare Time: 15min Cook Time: 20-30 minServes: 15-20 people

    Summer is here and the air is filled with a warm breeze, sounds of big get-togethers with family and friends, and ripe with the delectable smells of a good BBQ. Weekend after weekend were constantly asking ourselves, What should I bring? to that quintessential potluck style party. Well, here at The Valleys Nickel we put our heads together and took a vote as to what we hope to see decorating any table at these kind of events, and thats potato salad.

    There is no other dish better loved, better received and more expected than that tasty bowl of creamy potato delight. Now, theres a vari-ety out there for any of us to choose from: classic, classic red (with red potatoes), with or without bacon, with or without seafood the list goes on. But one thing is for sure, with all the variety that exists in the world, nothing beats a good ol fash-ioned classic that has been homemade. Sure, theres

    the prepackaged tub available for purchase at any major grocery store, which is perfect if youre out of time and on the go, but there are a couple of important questions youll have to ask yourself: How long has it been sitting there? and What were the quality of the ingredients that went in to making that? When you take charge of the food you eat by making it at home, you also take control of the quality.

    So lets talk ingredients, since were on the subject of quality. It goes without saying that all of the ingredients listed here will be available to you at your usual grocery store, but can you get them organic? There are many benefits to attempt-ing a more organic diet that would be well worth your time in research, but whats also beneficial is their quality in freshness and flavor. When a fruit or vegeta-ble is organic, it means that they were produced during their normal season and when theyre allowed to mature in a natural way, their flavors are much more pronounced. Ever wonder why fruit straight from the tree is so much sweeter than what you buy from the store? However, sometimes organic can really mean expensive, but going more natural doesnt have to mean breaking the bank. Try checking out your neighborhood farmers market. Even if its not organic, the food didnt travel very far to get to us, meaning it didnt need any help from chemicals to keep it looking fresh. Produce from other states has to travel hundreds of miles to

    get to us. If you need to find a farmers market near you, take a look at our list on page 10. (Dont see yours listed? Email [email protected]) Got your ingredients? Great! Lets start cooking.

    1) Peel the potatoes and dice them up in to cubes. The smaller they are the faster theyll cook. Youll be mashing the pota-toes later; so dont worry about consis-tency between your diced cubes.

    2) Place the potatoes in to a large pot and fill with water until the potatoes are fully submerged. Set the pot on the stove to

    boil with the burner on high. These will take 20-30 minutes until

    they are cooked through. While youre waiting,

    start the eggs.3) Fill a small pot with water and gently lay in your 5 eggs, they should

    be fully submerged by at least 1 inch of water.

    Set the burner to a medium heat. These wont take as long as the

    potatoes, so its best to set a timer for 10-12 minutes.

    4) Dice the celery until you have 2 cups.5) Chop your can of black olives until you

    have 1 cup. 6) Check on your eggs. There are a couple

    of different methods you can use to make sure the eggs are cooked all the way through. First, you can sacrifice a single egg by pulling it from the pot, run

    it under cool water and then peel it. Or you can spin the egg. Yes, spin the egg on the counter like a spinning top toy. Lay the egg on its side, use your middle finger and thumb to spin the egg. If it spins quickly and easily then it has been hardboiled. If its slow and difficult to spin then its still raw, let it cook for another minute or 2. Once the eggs are done, run them under cool water and begin peeling.

    7) Check on your potatoes. If you can push a fork easily through a whole cube, then your potatoes are done. Drain the water and set them aside.

    8) Once the eggs have been peeled, chop them up in to small pieces.

    9) In a large bowl, mash the potatoes until theyre a creamy consistency with small chunks.

    10) Mix in the mayonnaise, celery, eggs, olives, relish and mustard.

    11) Add relish or mustard to taste. De-pending on if you a sweeter or more tart potato salad, the mustard will give the salad a tart edge and the relish a sweeter finish.

    12) Cover and chill in the fridge until its time for the party. Need to eat right away? Stick it in the freezer for a few minutes.

    The Ever Evolving Story of Franks Place

    Each year at the beginning of May, Fresno encourages Historical Preser-vation efforts with a week of special events and advocacy for its historical places. This year, the theme for the week was Every Building has a Story. Downtown Fresno is brimming with such places, and War-nors Center for the Performing Arts has an abundance of stories from within the large complex. Warnors is comprised of three venues: Warnors Theatre, Franks Place, and Star Palace. All of these venues are operated by the 501c3 Community Benefit Organi-zation (CBO), all of these spaces were part of the original 1928 complex, and they each have their own unique stories. The Warnors Complex makes up a considerable portion of the block at Fulton and Tuolumne in Fresno, and most people are unaware of just how large the building is. All of the storefronts on this block are part of the complex as well. From Modern Farm at 2021 Tuolumne Street, all the way around the corner to Franks Place at 1432 Fulton Street, and everything in be-tween. Each space has its own story; a story that is continuously being written. One venue that many people dont know a lot about is Franks Placean enter-tainment venue and rental space for special events. Throughout the years, this space has been used for many purposes. It has been renovated, remodeled, and repurposed various times. It has seen Downtown change drastically. From thriving urban center, to forgotten place, and on its way back again; Franks Place has been in the middle of it all. When the complex opened in October of 1928, the space that is now known at Franks

    Place was a storefront that was leased as a furniture store. Today, Star Palace rests above Franks Place. Star Palace is a large ballroom that can be rented for special events, such as weddings and other private events. How-ever, at the time that the complex opened, Franks Place was connected to Star Palace by a staircase in the center of the venues. The furniture store used the upstairs space for storage. If youre at an event in either of these venues, and would like to see where this staircase was, just ask a staff member and they would be happy to show you. Over the years the space at 1432 Fulton has been used as a sporting goods store, an office for Worldwide Ministries, and a plethora of other businesses and ventures. Since 2005 the space has been known as Franks Place, and has hosted many special events and local artists. The staff is often asked, Who is Frank and why is this place named after him? The answer is one of the many special stories that the Warnors complex has to tell. In the early 70s, the Warnors Complex ended up in the hands of the City of Fresno. Despite the rich history, and cultural importance of the spacesthe city was con-sidering demolishing them in order to create a parking lot. Several philanthropists stepped forward to save the building, after a public outcry against the demolition. Mr. Frank Caglia was one of these philanthropists, and a lover of historical preservation of all kinds. He purchased Warnors in 1973 after he fell in love with the one of a kind Robert Mor-ton pipe organ that had been installed in the theatre prior to its opening in 1928. Frank always used to say, You see, I bought a pipe organ, and there just happened to be a theatre built around it. Frank Caglia was an entrepre-neur that set out to make this one of a kind building a historical landmark and a success. He was a genuine man who was very kind and had a lot of spark! He was a man of his word, a man with a heart of gold, and a great philanthropist who gave much to his commu-nity. For example, Frank was responsible for restoring the lighting on the old Welcome to Fresno sign on South Van Ness Avenue... and added for good measure, Best Little City in

    the U.S.A. In 2005, the venue at 1432 Fulton Street was renamed Franks Place, and a portrait of Frank hung in the establishment to honor his effortsefforts that saved all of the historic spaces in the Warnors complex from ruin. Frank passed away in 2007 at the age of 95. In that same year, the Caglia family donated the building, and all it encompassed, back to the people of the San Joaquin Valley, turning the Family business 501 c3 Com-munity Benefit Organization (CBO) and protecting it forever. Thus, Warnors Center for the Performing Arts was born. A team of board members was created to oversee the operation; a small staff runs the events, while volunteers fill in the gaps. Franks Place has a book of stories from patrons and performers alike, and it was all made possible by one man

    who could not allow these incredible spaces to go gently into that good night. These days patrons can enjoy live music in this historic space, rent it out for pri-vate events, and even catch a burlesque show from time to time! They believe that the most import-ant part of the Warnors story is the patrons.
