Albert Stevens Crockett,
The Old Waldorf Astor ia Bar Book
R E C A L L I N G
The dr inks we present you today at The Lo
are inspired by the Old Waldorf Astor ia Bar Book,
wr i tten by histor ian Albert Stevens Crockett.
From the t ime when the Waldorf Astor ia Hotel
was just the Waldorf and i t stood where
the Empire State Bui lding in New York stands today.
The Waldorf Bar was an “American Bar”
serving mixed dr inks and known as the water ing
hole for the robber barons of the late nineteenth
and ear ly twentieth centur ies.
We have studied Mr. Crockett’s recipes, went back
in t ime and adjusted some of the recipes to the palate
of today. Within our menu we take you on a journey
to discover the dr inks once served at the Old Waldorf Bar,
f rom Cocktai ls , Smashes, Cups to F izzes.

‘The Balance’, for May 13, 1806, descr ibes the cocktai l as “a s imulat ing l iquor, composed of spi r i ts of any k ind, sugar, water and bitters – i t i s vulgar ly cal led bittered s l ing” and is supposed to be an excel lent elect ioneer ing potion. (Old Waldorf Bar Book, P.13)
Our cocktai ls are st i r red dr inks with a heavy spir i t base, accompanied by sweeteners and bitters
‘Smash: To atten; in tennis , to bat, etc.; in s lang a smash is something of extraordinary abi l i ty.Somewhere in these l ies the or igin of the term as “a beverage of spi r i tuous l iquors, with mint, water, sugar and ice.” (Old Waldorf Bar Book P. 99)
Cups go far back in t ime and have their or igin in social dr inking. Cups could feature wine, beer or both. Nowadays they might not be essent ial in mixed dr inks, but in the ear ly 1900’sthey were essent ial . Lower in alcohol, refreshing and a true ‘sess ion beverage’something you can st ick with al l n ight.
Yet, whi le the cocktai l i s an American invention, i ts der ivat ion and rst date of appl icat ionare hazed by anecdote and fancy. Take, for example, a story once heard in the Orient.“A cocktai l?” “Yes” “But why the name?” “Dr ink i t and you wi l l nd the rooster feathersgrowing on you” (Old Waldorf Bar Book P. 12)

Fizzers and Sours were served dur ing the Golden Age of American Dr inking (1850-1900);Many mixed dr inks were inspired by either showfolk, l ike Ms. Taylor – an opera s inger, or by Chorus gi r l s – in this case referr ing to the gir l s in rst successful Broadway Musical of the 20th century “F loradora”.
Memorial ized by poets and painters, credited with hal lucinogenic powers, and feared by many. Contrary to popular misconception… the only drug in absinthe is alcohol.
“Lal la Rookh is the name of a play in poetry wr i tten by Thomas Moore and publ ished in 1817. L ike Mamie Taylor and Florodora, we can conclude: dr inks and show bizz go hand in hand”
