The succulent leaves of rainbow Swiss chard are earthy with some tang. The appealing rainbow colors come from the presence of betalain pigments found in the plant. This phytonutrient protects the plant from UV damage and also attracts bees for pollination.

Purple cauliflower obtains its magnificent deep purple color from the presence of the antioxidant anthocyanin.

Orange cauliflower acquires its color from the excess retainment of beta carotene.

The lack of sunlight exposure white cauliflower receives does not permit chlorophyll production. Since there is no chlorophyll being produced, the cauliflower remains white.

Pleurotus ostreatus, more commonly known in the kitchen as oyster mushrooms, have good availability year-round. Their peak season is towards the end of summer into the fall. You can expect a firm, meaty, chewy-like texture, and a nut-like flavor with a hint of ocean when cooked.

Native to East Asia, the shiitake mushroom presents an earthy umami flavor with notes of smokiness. You may also see this mushroom go by the names of the Chinese black mushroom or black forest mushroom.

The name shiitake: “shii” is the name of the tree where you can often find these mushrooms growing, “take” is the Japanese word for mushroom.
