Honey, pure honey. That’s the tasteof the Houghton Museum ReleaseRiesling 1���. It was made froma parcel of premium fruit from theJustin vineyard in the FranklandRiver region and though lackingthe length of some Clares itis still fresh and has nokerosene character. It has wonthree trophies and nine golds.

Released April 2006

Whites that cellar well come from old vines, too. Take the Tyrrell’s Hunter Semillons that come from vines planted in 1��� or the Te-Aro Estate Madiera Clone Semillon that is made from the fruit of a five acre site in the southern Barossa Ranges planted in 1�1�.

Optimum Conditions for Storing and Cellaring Wine• Temperature–Between12°cand18°c.Stable

temperatureisimportantastheprocessofexpansionandcontractionthatoccurswhenwineheatsupthencoolscausescorkmovementthatletsairintothebottle,whichthenoxidisesthewine.

• HumidityBetween65percentand75percentisbestforlongtermcellaring.Iftheatmosphereistoodrycorkslosemoistureandtheelasticitythatmakesthemeffectiveasaseal.Toomuchhumidity,however,cancauseproblemswithmouldgrowthonthetopsofcorksandonlabels.

• LightAslittleaspossible.Lightdoesdamage,especiallytowineinclearglass.Thoughultravioletlighthastensageingitisatthecostofwinestastingdullanddownright

uglyifsulphidecompoundsdevelop.• VibrationItseemstherearenogood

vibrationsinthemusicofwine.Movementstirsupthesedimentinabottleandmakesthewinehazy.Theneedtoturnbottlesisnonsense;itisbestnottotouchthem.

• AirflowSomeisneededtoinhibitmouldgrowth.Bearinmindthatbottlespresentedforauctionorexchangeneedtolookgoodandpristinelabelsarepartofthat.
