2.9 Swelling power, solubility measurements
Swelling power and solubility patterns [30] were deter-mined using starch samples (1.25 g db) suspended incentrifuge tubes in 30 mL of distilled water preheated to607C. The dispersion was heated in a water bath for 30min to 607C, after 10 min the suspension was vortexed.After centrifugation for 30 min at 6000 6 g at 257C the
supernatant was collected and its volume measuredusing a probe (Volsu), and the pellet were weighed in thesame centrifuge tube (Wpe). Then 10 mL of the super-natant and the total pellet were dried at 707C for 24 h andweighed (Dsu and Dpe, respectively). Two parameters werecalculated: concentration of soluble material in thesupernatant (water solubility) and the swelling power.
Water solubility = (Dsu ? Volsu ? 100) / (1.25 ? 10 mL)
Swelling power = (Wpe 2 Dpe) / (1.25 2 Dsu)
