In our article of this month let's talk about pink, a beloved wine internationally for its versatility and great abani-co of options at the time of with - put you well either as an aperitif, with meals or simply on the terrace of fashion in Ibiza.

The Rosé as well says it the title, it is not a wine

White, nor is a red wine, since its elaboration is not exac-correctly as none of es-tas earlier, is simply a pink.

You could say that almost all countries wine produ-pink cen, but perhaps one of the examples most important are the famous Pink of the

Provence, in France with its delicate salmon colour and in the mouth it behaves more like a target than as a red.

In Spain fortunately is coming this fashion and pro-ducers very famous not-so delight with its wines, before giving some examples of wines and areas explain a little how produces a pink and its types:

1. direct press: red grapes is an fashion and pressed in the same way as in white, this extract some colour on the skins. This method-do produces pink more deli-ed.

2.-racking: the grapes are processed in the same way as for the production of red but juice discover after 6 to 48 hours of initiate fermentation depending on the desired color, the fermentation follows at cool temperature to preserve the aromas.

3.-bleeding: process very pa-recido to run it off the difference is only part of the juice is extracted and the other part permane-ce in contact with the skins to produce a red wine, in this case the Pink is a sub-product.

4.-mix: consists of mez - HPLC wine red with white wine (prohibited in the EU) to exceptional - tion of Pink Champagne.

Erika Vásquez after more than 10 years devoted body and soul to the hospitality industry, and after passing through the best restaurants in the region as head of room and sommelier, locks - ja currently next to Fernando Llamosa. Sommelier and specialist in gin and tonics, Erika is in the van - guard of the restoration.

Do catering for vocation?, cuen - tanos how did this mun-do? By vocation clearly, the treatment I always liked people. My mother when I was little was working as a waitress in a restaurant and on Sunday my father took us to eat don - it to my brothers and me. Was - mos the worst the dining table! I guess I liked to see my mother with the dishes, taking orders... wanted to imitate her!

How sommelier as you see the present moment media living cuisine? I think that right now we are at a very important time for gastronomy.

Customers know what they want and how they want it. They pay but tam-good call. There's a lot fall - cia and that is what makes you improve and Polish you every day. The hos - telería Cantabra is increasingly recognized and talk about gastronomi - ca in the North is not just talking about the Basque country, we have star michelin, renowned chefs, and people in the room that is doing great work. We have large award-winning, professional baristas in cocktails and a partnership and your - milleres with lots of energy and that will give much to talk about.

The perfect pairing? Buff...Perfection does not exist. There are great - des classic anise with cas - tañas, sauternes with foie, San Lucar de Manzanilla of Ba - rrameda and ham and that wine and cheese tastes like kiss.

The perfect pairing is what we share in good company, as either a chocolate with churros, a Gin & Tonic with sweet, or a ca-nita with a top of tortilla.

Tell us about your experience at nose gold the three years I've had the pleasure of going to been an experience very enrique-cedora. Share impressions with colleagues, Qatar new references that propo-nen more top wineries, the master theoretical class that is never over, it is a mini course in a single day and you should keep your eyes peeled and ears well awake to be able to absorb everything we exposed in a few hours. But first and foremost you have to have the nose well... already opened always go with cold or with the na-riz clogged like my ami-go Jean Marcos of the wine route... I guess that it's more exciting.

Now these very focused on the Gin and Tonic, what do you think about this boom of the Premium Gin?

I think that the pie has become too large. South daily - gen new Premium gins, with their corresponding tonic prepared by the same House and recommendations of how to serve them. I think it is too much information for customers who order a drink must almost study. Much more will not last the boom of the gin, since there is no si-Uncle for all, but there are cleaning

and they will finally be the gins quality and really good.

What are the ba elements - musicians needed to make serve as us a good gin and tonic in a

local? Good dishes, good ice and a smile to customer.

Now do you exert as its - miller? As for 3 years working for Fernando LLamosas

But happy and with much ilu-sion and not I care, on the contrary I have discovered that I love and that it gives me very good! (he laughs).

Thus Councillor for environment, María Tejerina, and SEO/BirdLife delegate in Cantabria, Felipe González, du-rante announced what his visit a flames, don - of three new posters have been installed to encourage a greater and better knowledge of the ca - features of this great urban park and, at the same time, avoid common and usual practices thatHowever, lay in pe - made the biodive conservation - diversity of this area.

Tejerina emphasized that the campaign which is entitled "The flames, a space for biodive-diversity and people" is inmar-ca within the strategy-conservation of the biodiversity of Santander and form part of the technical Plan of management of the Park.

"Through this new acts - tion, which we developed in tail-cooperation with SEO/Birdife, we have installed three posters that we show the configuration and distribution of the Park of the Lla - more, 50 species of birds that can be spotted in this space, as well as those species exo - practices that are considered unwanted visitors", summarized.

SPACE FOR BIODIVERSITY AND PEOPLE

Tejerina recalled that in the di-non of the Park of the flames was incorporated as main condi - cionante the remains of a small wetland conservation, that it had been absorbed into the urban development, whose preservation has made it possible the

maintenance in the heart of the city of a great variety of flora and fauna silves-tre associated to this space.

Indeed stressed that Las Llamas Park arises, therefore, as a space for biodiversity and the perso - nas, a place where you can practice sport, attend a concert or a coffee, and at the same time, meet the rique - za of species that inhabit this ecosystem.

"This is the message of the first of the panels," advanced the Mayor, who noted that it also includes with - sejos to conserve biodiver-University, as deposit trash in the bins and containers, avoid pulling cigarette butts or make noise to go along the catwalks, tied to the dogs, avoid releasing exotic animals or feed the ducks, target the latter SEO/BirdLife and the Santander City Council addressed in a previous campaign.

SANTANDER AND BIRDS

For its part the delegate of SEO / BirdLife emphasised that, despite its small area of 5.321 square kilometers, San - tander observed more than 100 different species of birds, many of them nesting in the city, now that his situation geo-graphic favors the presence of a large community of waterfowl during migration.

In this regard, said that what lar - go in the spring and summer, a great variety of birds from the South of Spain and the African continent breeding in parks and jar - dines of the municipality, as well as in the areas of estuaries, wetlands and wooded areas.

He also said that in the municipality of Santander, since the beginning of March, there are birds that arrive from the African continent and South of Es - pana, such as the hoopoe, mosqui-tero, Finch, or swallows.

González added that, therefore, the second panel aims that I saw them - sitantes to know the 50 species of common birds in this large park.

EXOTIC ANIMALS, UNWANTED VISITORS

The campaign promoted by the Town Hall of Santander and SEO/BirdLife also addresses a common phenomenon, but no less dangerous for the bio-diversity of flames as it is the presence of animals exo -

Santander will offer more than 360 cultural activities coincidien-do with the celebration of the world of sailing which will host city next September. The Cantabrian capital, which will become an international showcase during the competition, proposes an am-plio and varied programme of cultural and leisure activities in the face of the sports event.

In particular, the programming cultural will start on 30 August and it will culminate on Sept. 21. Thus, during these three weeks Santander offer citizens the best of itself and will organize about 40 daily activities aimed at all audiences. Many of these events are directly linked to the programming to the City Hall and the cover - ing creative Santander (FSC) have been prepared specifically for these dates.

In all of this programming cultu - ral which mingle ar - Portuguese national and international,

It should be noted the prominence of the directors and local, either as direct participants or as or-high officials of pro - cultural productions that will be invited to participate to artists from other regions and countries.

The activities will take place throughout the city but are concen - find, above all, on the waterfront, from the Pereda gardens to the beach for the movie - gros. In fact, the center of the proposals will be in the heart of the world, between the school's nautical, sailing CEAR, the dune of the architect Alejandro Zaera and the Palacio of festivals.

For this reason, the majority of the activity - des will they focus on the street and designed program includes pro - put of all artistic disciplines: exhibitions, concier - cough, screenings, tours, performances or conferences are just a few examples.

The high volume of activity-

des makes it complicated and perhaps confusing to explain in detail each of the proposals. For this reason, a specific book with all programming in es-storeroom and English will be published. In addition, all programming be consul - tar in a special application of the sailing world.

Even so, it is important to highlight the main proposals:

-SANTANDER WORLD. It's a project that contemplates the placement of five giant sculptures along the front ma-ritimo. Opens the sculptures - ran on September 2 and will be part of the landscape of the city has - ta on September 21. The cin - co sculptures, more than four meters high each, repre - recline at each of the five continents, will be five identical human figures as to the form, but each with a different skin because they will be interveni - das by different artists. Lexus Santander, Vicente García Sommaire has crossed the narrow - cho of Gibraltar without costume, anything - do of Lanzarote to Puert - ra 2 times with costume, Somo to Laredo with costume (43 hours), Maple Bridge at the Arnia suit and Suances to Santander.

How long do you carry "into the water"? I got my mother to the water a few months, and it was autonomous in the water before walking, I swam with the Pa Club - stripe life, at the time of adolescence left it and went back to 1930s and peak with the long distance, taking it a little more seriously since 2007 that I swam the Strait of Gibraltarthen everything came followed and you can not stop.

Is it true that there are days when the Sea you don't want to? There are days when the daily rhythm does not want you to, the sea is changing and if you you res - petas, always loves you and gives you precious days. What is the place where you most enjoy swimming? In Cantabria Costa Creek I love and I train much in the Arnia, but we cannot say just one. The lighthouse of the horse in the area of Santoña. Laredo is beautiful, impressive lighthouse, etc...

Any story to tell - us after so many miles traveled? The swim with Calde -

rums and dolphins in the Strait of Gibraltar to 8 metres and beautiful wildlife in terms of pleasant surprises. More than once I have seen swimming along the cliffs and wanted to call the emergency services is often and someday another that has scared me a bu-ceador out of the Fund, for the time being all quiet.

The discipline that practices re - want a great physical effort, what your routine of trains - lie? Routine is three days during the week or four according to approaching the test of time and little and the weekend is a gift - from I can get two hour or more if we are a few months from the challenge, much training technique, given that having little time to train for the type of work and the familythus optimizing each stroke with minimum effort, and acclimation to cold in the case of this year.

Tell us, how was your last cruise? The latest tra-vesia was that most have dis - fruity to bring a team of support of friends of swimmers and the environment. The worst are the days prior, a week before didn't do more to look at the forecast time to see if it will be po-der exit and under what conditions. It was soon but not too much that did not have very cold since I went without wetsuits. The sea was quite calm and leaving accompanied me one

friends to the Ista of the Co - nejos. There then came my ami - go Arturo (Companion of trave-sias), then Luis García, also friend and got the baton Ana and Liz from Somocuevas until the Arnia. The stretch up to the Ma - ruca is more monotonous by the scarce references.

From there to Santander me accompany-no my coach Fernando Ca--beautiful, setting a comfortable pace. A long and high wave was formed in port but that it didn't bother much to swim and see the faro of Santander is a great "push". From there it hurt a little bit back, due to the rotation of the shoulder left - do, and I went from la Maddalena with some boat more than friends who came to meet me and swimmers such as David may, Pablo Gutiérrez and Luis.

I grabbed forces and managed to get in a time of eight hours and 40 minutes. Very happy and very well so.

THE DOG OF

WATERS

QR SMART MAGAZINE72

The origin of this breed dates back many centuries ago being origi - naria of Spain.

They were traditionally used as ' dog pastor, Assistant of the fishing and hunting. The area where Spanish water dogs more we can find is Andalusia and Extre - mature.

It is a breed that is used often for grazing, as guardians, for salva - mento in fire, arrest of drugs by their sense of smell fantastic, great obedience and agility. They are perfect as pets.

It is a dog's size half - not, very athletic and robust with a hair very curly with differ-tes colors black, beige, white or Brown, also may be bicolor.

Due to its highly developed natural instinct are fabulous as guard dogs, enjoy enor - nipples with the game although they are rather distrustful with strangers for what is very important is to socialize them from an early age to avoid fears and traumas.

His cousin, the water dog can-tabrico is originally from the coast of Cantabria used an - tiguamente in vessels of pes-ca. When they went out to the sea and the fish fell into the water, or escapes - ban of the networks, they were throwing for them; they are fantastic-dores and divers.

They were also responsible for lim - piar of rats the boat and mu - chos cases were shipwrecked in temporal life.

We can see even many in the ports of Cantabria but already

as pets. In Cantabria its census is about 1200 specimens.

They are shorter that Pe - water Spanish rro, able to have genetic proximity to the bar-bet and the poodle. It has a large layer of curly hair that grow form you plates being its waterproof inner layer. The co-lor of the Cantabrian water dog is white with brown or black truffle (nose).

As well as the water dog is - storeroom, they are very active, happy and extremely intelligent. They love the water and the game.

We can also meet with Portuguese water that has large dog similar to the Spanish water dog but that genetics - mind it is related to the Kerry Blue Terrier an ancient race irlan-desa. Also like their cousins

PDAE AND CROSSES

PDAE and this crosses a pue-blo of Sevilla and our mission is to rescue dogs water and crossings of water kennels, streets and families who have tired of them and threaten to throw them out or bring them to the kennel.

This project began at the end of 2009 but it was not established as a protective until 2011.

Yoana, founder, heart and soul of the protective, seeing the large amount of water dogs that were abandoned in Seville and Andalusia in general decided to begin to pick them up at your pro-pia House and with their money and media, it hauntology them, it helped and pre -

He stopped to give them up for adoption, dogs that when arrived to the protective their traumas and fears were very big

In 2010 some partners joined this pro-ject and gradually began to operate the protective as it is today.

We currently have more than 35 dogs in the field and the vast majority are not water dogs but dogs without race that our colleague Yoana picked up the road, ditch, roads or that has them have left tied at the door, or released by the fence as if it were a bag of basu-ra, a case was Dakota a perri-ta white without race tied Sun jun-to its small only a week. The puppy found family but Dakota a year and me - gave then still waiting for an opportunity.

In the field we have dogs of all kinds (winemakers, greyhounds, large...) to desgraciadamen - you do not find a family that wants them to adopt.

The only person who is in charge of care, feeding, cleaning etc. These dogs is Yoana, which engaged in this task the 365 days of the year, never has a single day of vacation; rain, snow or this sick she is going to take care of them, feed them and play with them.

Another problem is the economy-co. Each dog is rescued entails costs very ele-

Fords (rates, vaccinations, chip, car - pads, travel, neutered...). We stay because some godmothers giving a small monthly contribution for any dog in particular, thanks to the tea-ming (donate a 1 euro a month), and the sale of t-shirts at any point in time and any drawing that is made. But the truth is, we are always in numbers ro-jos and if we continue living is because many of us ade - lantamos or donated money for castration and other needs.

Besides dogs field dogs have welcomed, the ma - yoria waters, different dogs - tea houses and places. It is a breed that is used for grazing in this area and you can find this race for the entire region. Some of these houses of Anda - Lucia are paid what we-puts a great economic effort but these dogs are older or have illness and in the field, his life would be very hard. We are keeping ourselves and sub-sistiendo thanks to the amadri-enables and the donations of people who participated and for-mamos part of this protective.

2013 had to deal with a series of extraordinary expenses that for us a great challenge has been to find the money.

We collected to Blanquita waters of 7 months dog which lived in - cadenada and just food, days have realized that he did not see and after go to the vet confirmed us that due to congenital cataracts was running blind, with - follow the money for its ope - ration with great effort, through a raffle and gift-nes, is now happily adopted in Alicante.

Shortly after appeared Mila who had been run over and operated by the city of a pue-blo but the operation had gone wrong and the dog as well as take you - nia tremendous pain, we took charge of her and I got -

MOS the 900 euros to operate, It is adopted in Seville.

Jerk now Chito, a water dog that appeared abandoned and knocked down in a village, the poor had a leg hanging and all ligaments broken, it cost us a great economic effort but we got to be and corrie - ra normally and already is adop-tado in Seville coexisting with other two Doggie "brothers".

These are some of the cases we have had although tene-mos thousand stories because often we find cases very strong and ends as the sugar that took her out of a Kennel of Madrid where leaves - ron owners because it leaves - ban to his country. Before you go with - taron that never had taken to the streets, even to their needs - dades, locked up his life in a room or terrace with two and a half years without with - touch with anything or anyone. For many months we have worked with her to socialize her and finally

on 11 January 2014 contro - sugar a person who is fixed in it and in its history and decided to adopt it, regardless its "pro-blemillas", takes 7 months adopts - da in Seville and is very happy.

One of the cases more bleed - teas we have had is Ninet that rescued it from a Kennel of Cordoba where its owner left after you have it day and night tied in a terra - za without food or water. I arrive at my house with 7 kilos. It was trans-parente and noticeable each

their bones and ribs. I thought I died and looked at her and I couldn't stop crying for what they had done to him. To put it in the ground it was so fragile that pa - seemed that it was going to break. With much love, affection, vitamins and good I think Ninet recovered and step to be an unstoppable and playful dog. Today this adopted and very happy in Zaragoza.

Others are not so lucky as Cotton we rescued him a year ago in a very sorry state, wounds all over his body, a canine match by half and a few hairs... Despite being a dog white water prices not found family and carries a year waiting.

Killo as a beautiful black waters crossing carrying I - ses outside of the kennel and not found a family. Some don't have any luck, but every day we keep trying.

We invite you to visit our-tro blog or enter our fa - cebook to know all our dogs.

Last summer we wanted to home - najear and encourage our friend that Yoana was not passing a good time and did an al - beautiful bum of all dogs adopted with their families. On this album, there are more than 250 pe - rros with a happy ending. And that for a tiny protective as ours is a great triumph.

This is our protective small-na, simple and humble but with an extraordinary group of people and an end to them, dogs and animals love, the great loves of our lives. Our mission out of kennels dogs water and their crosses, rescue them from the street and the drop-out and provide them a home a dignified life and future. We live for them and each one we rescued a triumph, an ale-gria and teamwork.
