Paul Rhodes Bakery was founded in 2003 and since that time we have grown to become one of the leading independent bakeries in London, specialising in handcrafted breads and pastries, all made using the finest ingredients and traditional techniques.

Our renewed ‘back to basics’ approach – highlighted in the section on our new Mastercrafted range – ensures our business is constantly evolving to have even greater focus on provenance and true artisanal production. We are regularly meeting with farmers, millers and suppliers of other ingredients - from olives to fresh fruit - to ensure our products are not only as natural and sustainably sourced as possible, but also the very best tasting we can find.

From our Greenwich bakery, we provide customers of all sizes within the London area – from Michelin-starred restaurants, neighbourhood cafes and specialist delis, through to leading hotel groups, major foodservice companies, and world-beating venues - with all their bakery needs, virtually every day of the year. And whatever the size and nature of their order, it all gets delivered freshly baked and early in the morning, by our own drivers.

This product brochure lists our core and new Mastercrafted ranges but we also create a number of seasonal and special occasion selections throughout the year.

In addition, we know one size doesn’t fit all, so we encourage a two-way conversation with our customers to ensure our product range meets as many needs as possible – whether that’s in terms of sizes, slicing or flavour options. And we also offer customers a bespoke service, working closely with them to develop and create products to a brief, where appropriate volumes exist. We pride ourselves on our excellent customer service and always place a premium on listening to and acting on customer feedback.

I grew up helping out in a family-run hotel, so my love of good food (and feeding people!) developed at an early age. Becoming a chef just seemed a natural path for me to follow. However, it was only after I started work with iconic chef Pierre Koffmann that bread became my overriding passion and I began to fully understand the magic that can be performed with flour, water, yeast and salt.

When I started the bakery, after running a number of Michelin-starred restaurants myself, I had one major goal: to provide busy chefs with great quality bread. And today, as the bakery heads towards twenty years in business, my goal remains the same. Today our bakers and pastry chefs, along with a vital support network of customer service and account managers, packers and drivers, work around the clock to provide our customers, most of whom are still chefs, with delicious products that they are happy to serve to their own customers.

I am proud that Paul Rhodes Bakery has also developed relationships with a wide variety of talented partners – including farmers, growers, millers and other suppliers. Our team is always looking ahead and striving for perfection: such focus sees constant improvements made to our products and has driven the journey of our new Mastercrafted range; discovering new grains, new flours, new techniques and new suppliers to keep our product selection fresh, relevant – and of course, delicious.

We’ve spent a lot of time going back to the basics of what we do, to the field, the farmer and the miller, to really explore provenance and true artisanal production. We’ve examined the best historical and alternative grains we can find - some of which have been virtually forgotten - and where possible, we’ve focused on ingredients from within the UK. We’ve also prioritised the use of stone-ground flour, ensuring a much greater inclusion of bran and germ, which ultimately delivers more flavour, and a more nutritious loaf. We have found incredible, diverse grains with unique tastes, but our journey, which is far from over, has also sought to remind us of the tremendous work undertaken by many independent farmers and as such, we are really pleased to have stepped up our support in helping to sustain those farmers who are investing in the future of the land.

In tandem with this, we’ve also been exploring what the world’s bread scene has to offer. This has taken the Paul Rhodes team from rolling fields of heritage wheat in Denmark and niche grain gatherings around stone mills in rural England to boulangeries in Paris, plus grain breeding events and artisan bakeries on America’s West Coast.

This initial Mastercrafted range has been developed not only in response to time spent in the field and enjoying bread worldwide, but also as a result of feedback to some of the sourdough breads we launched in 2018. These naturally and slowly leavened loaves were so well receivedby our customers - our Seeded Porridge Sour even won a 2018 Great British Food Award - that we decided to create more products in this vein and bring them together under one brand.

So welcome to Mastercrafted, our new handcrafted, long fermentation, great tasting and nutritious range made from diverse grains and carefully sourced additional ingredients. Predominantly breads at present, we have other products in development and will be looking to continuously add to the Mastercrafted range over time.

H E R I TA G E S O U R This long-shaped loaf delivers a complex flavour with beautiful sour notes. It has a very moist crumb, is dark in colour and, as we’ve used flour made from freshly stone-ground UK grains, it also contains a lot of the minerals and nutrients that would be lost in conventional milling.

Heritage Sour (72hr) 70001 1000g

S E E D E D P O R R I D G E S O U R Dense, moreish and with lots of umami to the taste, this loaf features fermented porridge that we add to the dough. It has a distinctive, nutty flavour derived from a selection of nine toasted seeds. These include sesame, sunflower and pumpkin, as well as British-grown flax seeds and camelina, an unusual seed, high in omega-3, and a member of the brassica family.

V I L L A G E S S O U R This long loaf gets its distinctive taste from the addition of beer. We’ve teamed up with Villages Brewery in Deptford and are using its Rafiki IPA to give the bread a dark and intense flavour. Conscious of waste, we are also incorporating Villages' spent grain - a by-product of the brewing process - into our dough, giving it a lovely malty note.

F R U I T S O U R Our nutritious Fruit Sour loaf is made from a mixture of spelt and wheat flour that has been organically grown in the UK. The fruit used is a mix of juicy figs, apricots, prunes and currants, making it soft, moist and utterly delicious. Toasted almonds and cracked rye kernels are also added for texture contrast. To give this lovely loaf a touch of sweetness – in the most natural way possible, with no refined sugars – we add a little grated parsnip and drizzles of honey ahead of baking.

It's a slowly fermented sourdough, with a touch of added yeast, giving a beautiful, delicate nutty flavour. We bake it in moulds to ensure a crisp and crunchy base, and top with a full-flavoured extra virgin olive oil and Maldon sea salt, which respectively deliver a moist crumb and a textured surface.

S I C I L I A N O L I V E S O U R A decidedly British loaf with an Italian twist, our Sicilian Olive Sour is slowly fermented to develop its distinctive texture and taste – both of which are enhanced with the addition of Belazu’s decidedly moreish and juicy single origin variety Sicilian Nocarella olives.

B U R N T P O TAT O S O U R Our Burnt Potato Sour uses predominantly British flour, but gains some of its very distinctive flavour (and name!) from the addition of a little Italian wheat called Grano Arso, where the grain is actually burnt in the field ahead of milling. The Natoora potatoes we use are roasted – not burnt – with a little rosemary and garlic to further bring out the taste, and then folded into the dough, which retains a beautiful, subtle smoky flavour. To further make this loaf stand out from the crowd we bake it in a long baguette-style shape.

C I A B AT TAWe offer two types of Ciabatta. The Mastercrafted British Slipper, our own distinctive take on this famous loaf, is made with emmer, a landrace grain, which provides a different flavour profile. We also produce a range of loaves made to a more traditional Italian recipe, with lots of extra virgin olive oil and a high percentage of water.
