Plans are under way for a new com-munity sports hub in Parklands.

The building which will cost more than $1 million will be based at Arthur Adcock Memorial Reserve and house the Parklands bowling and rugby clubs.

The bowling club which leases the site from the city council is set to be granted permission to build the fa-

cility at tonight’s Burwood-Pegasus Community Board meeting.

The two clubs hope construction will start next year and be com-pleted by early 2017.

Bowling club vice president and project co-ordinator Wayne Eden said the hub would benefit the wider community.

“We are looking out for the community and it is going to finish up being a community hub which

will cater for other sports and recreation and the people of the Parklands area.”

The next step for the club will be completing the final design for the facility and gaining resource and building consents.

The rugby club currently uses the Queenspark School hall for its club nights which it holds every two weeks with up to 200 people regularly attending.

The new facility will have room to accommodate 300 to 400 people.

Before 2011 it used the Parklands Community Centre but QE II Fit-ness moved into that building after the February 2011 earthquake.

It has been recommended to the community board by city council staff to approve the demolition of the old clubrooms and construc-tion of the new building.

I’m approaching one year in the role of community services supervisor for Christ-church East.

For me there have been multiple highlights in the last 11 months, including the tremendous turnout for the New Brighton Anzac Day service and the efforts of the Community Safety Partnership – of which I represent police.

The partnership’s initiatives, including the successful New Brighton guardians project, have contributed to making the mall and CBD area a safer place to be.

I’m constantly impressed with the positive attitude of people in the eastern suburbs and the genuine passion they have for their area.

I also note comment about police service delivery in the area, and hope to dispel myths around this.

For example – there seems to be confusion around the opening hours and function of the New Brighton police station. The public counter is open normal business hours – Monday to Friday, 9am to 4pm. This is in line with the other suburban stations in

Christchurch (Papanui, South and Hornby). In addition, Christchurch Central is open 6am to 11pm.

Aside from the public counter, various police work-groups operate from the station – including response (patrol) staff, who work 24/7 to attend incidents reported via calls to police communi-cations. If the station is closed – it doesn’t follow that no one is working in the area.

Police officers don’t sit around the station waiting for your call. They are best deployed “out and about” – patrolling the local area and responding to reported incidents.

A good analogy is: If your house was on fire, would you travel to the fire station to report it? While there remains a need for public counter service at police stations, most reporting and informa-tion requests are best made by phone.

A key focus for police is working with the community – to make all of Christchurch a place where people can both be safe and feel safe.

Bar tab not claimedA $100 bar tab has yet to be claimed at O’Sheas Public House. The reward was offered to anyone who could identify two men who broke into the bar and stole the social club’s safe last month. Police had found a safe after carrying out a search warrant on a property which they thought could have been from the bar, but owner Alan Stroud confirmed it wasn’t. More than $500 was in the safe.

Playground repairThe Burwood Park playground damaged by a suspected arson attack last year is likely to be repaired. The Burwood-Pegasus Community Board has decided that the $7857 repair be carried out as a matter of urgency from the city council’s operational budget available from July 1. This is pending decisions yet to be finalised surrounding the Long Term Plan.

RoadworksThe kerb and channel on Rockinghorse Rd will be repaired from today (June 15), which is expected to take up to 10 days, weather permitting. SCIRT are asking the public to take care around the new kerb as it takes a couple of days to set. When new kerb is being poured in front of a property SCIRT will be unable to maintain vehicle access to the driveway for up to three days while the new kerb sets. An access restriction letter will be left in affected houses’ letterboxes the day before.

Aranui High School principal John Rohs has given an insight on how difficult it has been for him missing out on the top job at the new community campus.

Mr Rohs has refused to speak to the Pegasus Post but has revealed on Facebook.

He said on Facebook: “While this is a heart-breaking reality, I am profoundly grateful to have enjoyed the privilege of being principal of Aranui High School for 10 years – still New Zealand’s top job.”

Mr Rohs has been overlooked for consideration for the position and missed out on an interview all together.

The establishment board of trustees refused to comment on the matter.

A new principal could be an-nounced as early as this week.

Mr Rohs said the establish-ment board of trustees for the new school stressed the Aranui Community Campus was a brand new school and having the exist-ing Aranui High principal lead the school would compromise that position.

Mr Rohs said the board was very enthusiastic about the new school but “only time will tell whether they are on the right track.”

“At this point in time, it is more important for me to maintain my dignity and self-respect than to worry about what jobs are on offer

at the community campus.”The community campus is an

amalgamation of Aranui High, Aranui Primary, Avondale and Wainoni schools.

He said he would have liked to stay on in the job which he has held since 2006.

“I would dearly love to be able

to continue to be in an educational leadership role, although right now the decision has been made for me, that I will have to leave Aranui.

In the May issue of the Educa-tion Gazette Mr Rohs featured in an article which highlighted his successes at Aranui High includ-

ing turning the perception of the school in the Pasifika community around.

The article said: “Mr Rohs’ open style of leadership – and the dedi-cation of staff – have turned this negative perception around; the Pasifika community now whole-heartedly embraces the school.”

Five new streets in the Prestons subdivision have had names pro-posed with one honouring Polish workers.

The street is proposed to be named Polish Settlers Place.

It is in honour of the Polish workers who drained a large amount of the area into produc-tive land.

The Polish Association sought to honour its ancestors, and ap-proached Ngai Tahu for permis-sion to name one of the roads in the subdivision, and to install a plaque in the berm which is be-ing created.

The association is proposing

some form of ceremony once the work is complete.

Ngai Tahu has agreed to this proposal. Rather than single out any one of the settlers for recog-nition, the association proposed that the chosen cul-de-sac be named Polish Settlers Place.

The other streets are proposed to be named Dunlops Crescent, Makawe-roa St, Te Whariki St and Kohunga Crescent.

Dunlops Crescent may possibly change to Dunlops Rd depending on the roading layout. This new part of Dunlops Rd sits partly over the original alignment of Dunlops Rd.

Makawe-roa St is named after the taonga plant species previ-ously found at Prestons.

Te Whariki St is named after a woven mat or carpet.

A new subdivision creating about 215 new residential allot-ments will be accessed from two new roads. The subdivision is a further stage in the Prestons subdivision, being carried out by Ngai Tahu.

The decision on the proposed names will be discussed at tonight’s Burwood-Pegasus Com-munity Board meeting with it recommended the board approve the new names.

How did you get selected?I was selected as the best actor

in the regional Sheilah Winn Shakespeare festival and from there we went to the National Shakespeare Schools Production, which was 50 of the best young actors from around the coun-try, 24 got selected to travel to London.

How are you feeling about you imminent trip?

It is coming up really quick now, I have never been to London even though I was born in England, so that will be a new experience for me. The first two weeks are working towards the performance at the Globe Theatre and on July 16 we perform. So I am just getting myself ready, reading the play we are doing. The last week we are in Stratford-upon-Avon, learning the history of where Shakespeare came from and seeing the places where he grew up.

Have you meet the other 23 participants?

They were all at the National

Shakespeare Schools Production, and the group that worked well together were selected. So we are a really tight group. They are coming from all over, a few from Hawkes Bay, Hamilton, Christchurch, it’s a small sprawl of the whole country really.

How does the history of suc-cess from past Aranui High School students inspire you?

I guess in year 9 it was one of my dreams to go to the Globe Theatre, I saw Teone Kahu go that year and Shea Kokaua when I was in year 11, so it was something that I always aspired to do. When I got selected I was definitely proud of continuing the legacy. I will be carrying on what they have started, which is a proud his-

tory of Aranui students perform-ing on that stage.

Why did you choose drama as a subject?

It was a passion; it was the sub-ject I could go to where I wasn’t just putting my head down look-ing into a book. My first teacher Bree Le Cren was drilling in her classes that theatre is somewhere you can be more open and when I carried on, I found it was some-thing I had a talent for and ended up loving it.

It has definitely made me more confident, I am fine with public speaking now. Once I learnt how to act, I got past the worrying about people judging me on stage.

What are you doing right now?

I am taking a gap year because of the London trip, I am working in an after-school programme with children at Parkview Pri-mary School and I am looking at going into a primary school teaching degree at Canterbury University next year.

Drama is something that I will carry on with, but not profes-sionally. Simply because I feel I’d much rather work with primary school children. That’s what I love doing and I am really keen to carry on with that.

Describe your worst moment on stage?

I had the last monologue of the play and I walked on stage and I just stood there and completely forgot my line, I looked around

and swore in front of the whole audience, I didn’t realise it was the wrong thing to say, I thought I could say it and then get back to my line. I just remember seeing the audience gasp, I have never done that again. I went to the then drama teacher and apologised to him. I thought I had let the whole show down.

But his words comforted me, he was like it’s all right, you just have to come back next time better than this time.

Who has motivated your de-sire to get to the Globe Theatre?

Lawrence Wiseman, who was the drama teacher at Aranui. He made me a more mature actor, he gave me plays that I could search for a depth in the character, which now lets me enter into any play knowing I can perform any character.

One of my best mates Isaac Wilkes, he has always been right on my side, just the way he goes about his life. The way I see him treat people is something I aspire to be like.

Would you recommend competing in the Sheilah Winn Shakespeare competition?

It’s something every high school student I believe should be getting in to, even if you don’t get through to the national festival. It is an amazing experience, once you get to your performance and you rattle it off there is nothing like that adrenaline rush after. There is no reason not to enter.

Readers respond to the issues plaguing the New Brighton Pier with people breaking the fishing rules.

Greg Johns: About time they banned fishing on the pier. I don’t think it was intended to be this way.

If they were to continue, make it over winter months and leave summer for public and maybe ice cream vendors or a band at the end for a nice weekend thing to do instead of fish guts and if you’re lucky a hook stuck in your face.

Yoshiro Tamaki: I have read the article about the problems of the fishers at the pier. Actually I know that the pier is one of the best spot for fishing in Christchurch and it can be fun for everybody to watch people fish there as Mrs Collins said in the article, as long as it is safe and not disturbing people to walk and get to the front of the pier.

I suggest a new fishing deck to be installed below and at the end of the present pier walkway. The galvanised steel gating deck is to be accessible from the pier walk level by stairs and it would be 3-4m below or 2-3m higher than the highest tide level of the sea water.

Probably the area of the deck need not to be much larger than the present fishing zone so I hope that it would not be impossible to use the existing pier piles to sup-port the steel deck.

It will separate fishers from the visitors and it should be great fun for everybody to watch fishing on the new deck from the present pier

level. Hope it will solve the frustra-tion raised among the people.

Malcolm Allison: I read your article and this has prompted me to have my say on the matter. Per-sonally I believe all fishing should be banned on the pier.

The pier is for the people, not just a handful of ungrateful, rude and selfish fishers who feel they have sole right to it.

This has been going on for long enough now and no one seems to want to abide by the rules.

The one and only time I visited, some time ago with relatives from overseas, we were disgusted by the state the pier was in, blood and guts from fish which of course brought the seagulls around mak-ing it a very unpleasant and thus not making it a very good experi-

ence at all. My view is . . . ban all fishing

from the pier.

Gordon Heyward: A couple of weeks ago there was an article in the Pegasus Post about visitor numbers declining on the Brigh-ton Pier.

I recently decided to take a look for myself as I’ve not walked the pier for a long time. It may be bet-ter if I called it Fishermen’s Wharf. When I got to the end I would have liked to have sat for a while and just take in the sea air.

I had to keep some distance in case I got hooked with a flying fish hook.

The few seats that were there were overtaken with fishermen, not just for sitting on but for put-ting all their gear on.

As I stood and leaned against

the rail, I watched a bloke pull-ing up a crab pot. He had one fairly large crab about 15cm across which he tipped out on the pier. The poor thing was on its back and its legs were going.

After putting his pot back in the water, he went over to his crab and with his boot, stood on each claw and broke it off. I guess that was so it couldn’t nip him. He then picked up body which was still alive and threw it in his bag for taking home. Even the two claws that he left on the floor, were still moving.

So what does the pier need to attract more people?

At the end of the pier it needs a small bar plus a few chairs and tables. It would be nice to go down there on a nice Sunday afternoon and have a coffee or a beer while you listen to a group or entertainer.

There would have to have a wind break which could done by a plate glass wall extending from the rail.

The fishermen may not like it. Let them go to Lyttelton.

Some older folk may find it a long way to walk. On some of the long piers in the United Kingdom they have a small train to transport people to the end. But that would be a lot of work laying rails.

What about that vehicle they had at the airport that they no longer seem to use. It holds about seven or eight people and it would it would give that thing a new lease of life.

It was a stupid idea putting a library and coffee shop there. Why didn’t they put a night club like there used to be. We are very short of night life in the city.

There are many other things that can be done with Brighton but its fighting against others who think they know everything. But the things they try never seem to work.

Aileen Trist: They need to stop all fishing on the top of the pier and add ramps off the side, sitting at a lower level just for fishing off.

This idea was put to the coun-cil before and nothing was done. Those who continue to disobey the city council rules should be heavily fined and lose their fishing gear.

Rangers need to monitor the pier in all weather (even in the colder months), as it is an all-year sport.

Will it take someone being caught eye by a casting rod hook to see urgent action on this mat-ter?

I’m not sure if we can blame global warm-ing but the weather in the last week has fluctuated between extremes of southerly rain and nor’westerly warmth.

Both have led to nine calls this week to incidents involving power lines or power feeds to houses. No serious damage has occurred from these.

Unfortunately, there have been a few incidents where damage has occurred.

One in Parklands on Sunday was quite possibly the result of a power board catching on fire. The fact that a fridge, a freezer and a washing machine were plugged into this power board does make it quite likely.

Fridges and freezers have compressors that start up regularly as the temperature inside raises enough for the thermostat to react. Each time the compressor starts, the power feed experiences an enhanced draw of current. If the power board is prone to failing this is the time it will do so.

If by coincidence both fridge and freezer start up together then the likelihood of problems doubles. Both these appliances should be plugged into the wall outlet. Never through a power board.

Another ashes fire, this time in Park-lands last Saturday, luckily happened dur-ing the day. Even then there was damage to the wall and the ceiling above the porch where the fire started.

Please remember fireplace ashes can remain hot enough to start a fire.

Never leave them in a plastic bucket and never leave them inside a building. Use common sense. It’s still allowed you know!

Power boards can only take so much

The Youth Alive Trust needs $170,000 in order to complete its new youth centre in New Brighton.

The facility, on Seaview Rd, will provide a place for young people hang out, and contains a gym, kitchen, childcare centre, and meeting rooms.

The gym, lounge, courtyard, and foyer will open this Friday, marking the completion of the

first stage of the project, which cost $1.4 mil-lion.

The budget for the whole project was $2.6 million, but a $170,000 shortfall means the centre’s

meeting rooms and kitchen may not be completed by the end of the year, as was scheduled.

Since the project began four years ago, the trust has raised $1.92 million, mostly from organisations including the city council, the New Zealand Lotteries Commission, the Lion Foundation, the Christchurch Earthquake Appeal Trust, and the Canterbury Commu-

nity Trust, but also including $20,000 from members of the public.

The Grace Vineyard Church, which established the trust in 1989, has pledged a little over $500,000, including $285,000 to ensure the completion of stage one.

said they would hammer away at possible sources of fund-ing until they had what they needed.

“The main cost has been ty-ing the two sides of the build-ings (together) for earthquake strengthening, so the building is up to modern building stan-dards.”

Burwood-Pegasus Communi-ty Board deputy chairman Tim Baker said the trust had already done a great deal of good for the community, and the new facility would just add to the work they are doing.

“They are positive role models that teach the children how to be good citizens.”

A new community is being built in Bromley thanks to Habitat for Humanity and corporate partner, Infor.

Crusaders players and staff have joined with Infor employees by rolling up their sleeves over the past month and helping to build 11 new homes for Habitat Hand-up Christchurch.

The $7.6m project involves the construction of 21 homes to re-house families in need following the earthquakes of 2010 and 2011 which destroyed 20,000 homes.

Habitat Hand-up Christ-church will see families housed in decent homes, eliminating the health issues faced in their current houses and putting them on the path to home ownership over a 10-year period.

Volunteers from Infor, the Crusaders and the Christ-church community have been working at Bayswater Cres and Foresthill Pl in Bromley, building 11 of the project homes. With construction now well-advanced, the first six homes are scheduled to be occu-pied by July.

The Crusaders, Infor and Habitat for Human-ity recently hosted a street party for the community to celebrate the progress of the project to date.

“Over the course of the

last month we have had Crusaders players, staff and Crusaders Academy members volunteer their time and I know that they have all loved having the opportunity to be involved in this build,” Crusaders CEO Hamish Riach said: “It is great to be involved in a project where the direct benefits to this community and to the families involved are so clear to see, so we congratulate Infor and Habi-tat for Humanity on driving the project.”

Crusaders head coach Todd Blackadder and mem-bers of the team presented a tree to each of the 11 families, to plant in their new gardens.

“It was humbling to be there and see how grateful these families are for the help they’re receiving. But this is no handout – these families have been working incredibly hard themselves

to get their new homes built and it is awesome to see them so close to being able to move out of their current sub-standard living situations and into the new houses that they’ve been so involved in constructing,” Blackadder said.

Families selected in the project build were those who have been severely af-fected by the housing crisis that resulted from the Can-terbury earthquakes. Cru-saders commercial partner, Infor, has pledged $10,000 towards the build as part of its corporate sponsorship partnership with Habitat for Humanity International.

“This partnership reflects Infor’s continued com-mitment to being actively involved in the future of New Zealand, Christchurch and the wider Canterbury region,” said Jo-Anne Ruhl, managing director, Infor Pacific.

Residents will be included in the consultation process for the next stage of the QE II rebuild.

Mayor Lianne Dalziel said the city council is com-mitted to engaging with res-idents over the development of the Eastern Recreation and Sport Centre.

This will also include working closely with the Ministry of Education and Avonside Girls’ and Shirley Boys’ high schools to ensure that the co-location of the recreation and sport centre with these facilities benefits the entire community, she says.

The city council also agreed the Burwood-Peg-asus Community Board should have sign-off on each part of the concept de-sign for the new centre on behalf of the community.

The team working on the design of the facility will en-

gage with the community board to ensure that the views of the wider commu-nity are incorporated into the concept design, follow-ing consultation with resi-dents.

City councillors for the Burwood-Pegasus Ward David East and Glenn Livingstone say they are pleased the matter is now resolved and they can final-ly get on with building the recreation and sport centre

and bringing much-needed aquatic facilities back to the east.

Community board chair-woman Andrea Cummings said: “I’m delighted that the process is back on track. This is a great outcome for the whole community, which includes local resi-dents, schools and Eastern Recreation and Sport Cen-tre supporters.”

As the parent of a prospective Linwood College Year 7 student, it was a treat to attend the school’s Open Night. On a crisp May evening my son and I were greeted by a stream of senior students who welcomed us warmly with their smiles and salutations. After an initial gathering, we were whisked away by a student tour guide.Watching an automated 3D-printer constructing a student-designed object was captivating. However; the clinking of robots darting around a classroom floor soon lured my son and myself away. We passed the rows of students studiously designing highly complex robots on computers and we meandered down to the home economics room where we tasted delicious morsels before wandering on.

Although we loved to watch passionate dramatists and to hear such accomplished young musicians in the student-conducted jazz band, (as well as to feel the beat of the ever-so-cool outdoor Street Samba band), our favourite place had to be the science laboratory.Having given our tour guide the slip, we stayed in the laboratory for half an hour and were guided by enthusiastic students and staff who demonstrated interactively all manner of amazing scientific principles. My son has now started looking ahead and is talking about high school with a clearer vision. He is also contemplating life as a science teacher…

As part of the Year 7 and 8 challenge unit, ‘The Science of Sound’, classes have had lessons with some of our Science teachers, including Mr. Moulin. They demonstrated and explored what sound is and how it travels, using several scientific tools and methods.

A stunning, student-driven stage performance was presented at the Horncastle Arena with our Linwood College students gaining Awards for Excellence for concept design, student leadership and choreography.

Congratulations to Bhavna Lata in Year 13 (right) who was presented with the prestigious Hagley/Ferrymead Community Service Award, 2015 in recognition of her extensive contribution to the local community. Standing alongside Bhavna is Alexandra Davids, a Hagley/Ferrymead Community Board member.

We were very fortunate to be the school selected for a three-hour choral on-site workshop with Dr. Don Campbell who is a visiting choral expert. He is the Professor of Music and Director of Choral Activities at Southern Wesleyan University in South Carolina, USA. Dr Campbell coached the Linwood College choir, along with students from St Bede’s College and accompaniment from members of the talented local men’s chorus, The Plainsmen. This was a fantastic learning opportunity, as on 4th June our young vocalists performed at The Big Sing Choral Competition held at Knox Church where they put on an amazing performance.

Over the past year, Linwood College sports’ teams have grown with student participation increasing dramatically. So what is inspiring this growth? As with any successful school activity it comes back to passionate teachers, highly committed coaches, referees and other volunteers. The strange history of the hamburgerIn spite of its name, the hamburger did not origi-nate in Germany. In the early 19th century, Ham-burg butchers did, how-ever, chop steak very finely, combine it with onions and seasonings and form it into “steaks” or patties.

When later in the century German immigrants ar-rived in America, many opened restaurants. A ver-sion of the Hamburg steak appeared on menus—as the most expensive item.

But, then, during the mid 1800s, when many Americans found indus-

trial jobs, a bun was placed around the Hamburg steak to make it easier to eat. It wasn’t until 1921 that the first fast-food hamburger outlet opened in Wichita, Kansas. Now, on average, Americans consume three hamburgers a week, for a national total of nearly 50 billion burgers eaten each year. They’re so popular there is a national Ham-burger Day, May 28, and a

Hamburger Hall of Fame in Seymour, Wisconsin.

Hamburgers are generally regarded as fatty and un-healthy. But it all depends on the filling. If you can pack at least four vegetables (raw preferably) into a wholemeal bun plus some lean meat or fish, then you have a healthy meal that all the family can enjoy. Just forget the fried chips and replace them with grilled vegetables or fruit kebabs and yoghurt.

If you want, you can sub-stitute rice, mushrooms or a potato cake for the bun.

surprised to discover amoreishrange of proper chips— 100 percent natural, gluten-free, GMO-free and hand-cooked in high-oleic sunflower oil. Ned andMina Smith, the expatriateAmerican couple who run thefamily-style Proper Crispsoperation in Nelson, brandedtheir delights ‘‘crisps’’ todistinguish them frommass-produced ‘‘chips’’. And they are

different. I just love themcrushed and sprinkled overicecream. The rapport between

the salty tang of the chips andthe sweetness of the icecream isa taste treat.The potato is certainly

common and a staple worldwide.They are cheap, hardy and easyto grow, and are high in starch,protein and vitamins. They arealso versatile.We all love thetraditional potato favourites butthis week I’m serving upsomething funky— potatoeswith icecream, in chocolatetruffles, with squid and in agluten-free pastry.

RECIPESTOFFEE & POTATOCRISPS VANILLAICECREAMProper Crisps are delicate.Perfect for coating icecream.

4 large scoops French vanillaicecream1 large cup Proper Crisps inMarlborough Sea Salt, lightlycrushed1/2 cup long thread coconut,lightly toasted4 meringue nests, optionalToffee: 1/2 cup sugar1/2 cup water

Refreeze the scoops oficecream. When hard, roll in thecrushed crisps and coconut.Freeze, until ready to serve.

To make the toffee, placesugar and water in a large,microwave-proof glass bowl.Microwave on high for 2minutes.

Stir to dissolve sugar.Continue microwaving for 3-4minutes until liquid is lightgolden. Remove — the toffeewill continue to colour onstanding.

Remove icecream fromfreezer. Place in meringuenests, if using. Drizzle withtoffee. Serve immediately.

Serves 4.

CHOCOLATE POTATOTRUFFLESThe mashed potato must befree of seasonings, cream andbutter. It should also be verywell mashed and have asmooth consistency.

1 cup dark chocolate chips1/2 cup cold cooked mashedpotatoes1/2 tsp vanilla essence4-5 pieces crystallised gingerDark cocoa powder for dusting

Place chocolate chips in amicrowave-proof bowl. Melt on50 per cent power for about 2minutes. When completelymelted, stir into mashed potatovery well.Add vanilla essence and stir wellagain. The mixture should besmooth. Chill for 30 minutes.

Cut ginger into thirds orquarters. Take a tablespoon ofpotato mixture and roll around apiece of ginger.

Repeat with remainingmixture. Place on a plate anddust with dark cocoa powder.Roll into small balls. Dust withcocoa. Refrigerate until firm.

Can be stored in fridge for upto one week.

Makes 16.

POTATO & SQUIDSALADThis is based on a PetaMathias recipe that she will bedemonstrating at theChristchurch Food Show, April4-6.

400g waxy potatoes4 eggs, free-range/organic, ifpossible1 large shallot4 tbsp olive oil1-2 tsp diced or crushed chilli100g squid rings8 pitted black olives8 anchovies, oil retained2 tbsp white-wine vinegarFlaky sea saltFreshly ground black pepperto taste

Peel potatoes. Place in cold,lightly salted water. Bring toboil. Simmer, until cooked.Don’t overcook. Slice thickly.

Meanwhile, place eggs incold water. Bring to boil.Simmer for 5-6 minutes. Cool,then peel and quarter. Sliceshallot and place in icy water tocrisp.

Heat a little of the olive oil in afrying pan. Add diced chilli.

Saute squid rings for about 2minutes, until just cooked.Combine with potatoes, shallot,eggs, olives and anchovies in abowl.

Make a dressing usingremaining olive oil, a little oilfrom the anchovies and vinegar.Season. Drizzle over salad.

Serves 8 as a starter.

GLUTEN-FREEPOTATO PASTRY450g cooked warm mashedpotato100g butter, chopped1 & 1/4 cups rice flour1/2 cup cornflour1 tsp salt1 egg, lightly beaten

Place warm mashed potato andbutter in a large bowl and mixwell. Add rice flour, cornflour,salt and egg. Mix well. Use yourhand to mix it, if easier. Wrapthe dough in a plastic bag. Setaside for 30 minutes to rest.Roll out to about 1cm thicknessor thinner. Great for pie pastryor for sausage rolls.

Makes 800g.

MOROCCAN BEEF BURGERS

2 fillet steaks 1 tsp Moroccan seasoning 1/2 cup prepared thin, tempura-style batter 2 each: diagonal slices of carrot & parsnip rice bran oil for frying 1 orange ¼ cup each: baby salad leaves, mint leaves 2 medium baps, split and

lightly toasted 2-3 tbsp pomegranate molasses

Sprinkle the steaks with the Moroccan seasoning. Add a little seasoning to the tempura-style batter.

Dip the carrot and pars-nip slices into the batter and deep-fry, until golden. Remove and drain on paper towels. Keep warm.

Pan-fry the steak for 2-3

minutes each side. Place aside and keep warm.

Cut 2 thin slices of orange. Sprinkle the greens with the juice from the remainder of the orange.

Place half the greens on the base of the toasted baps, then add the carrot and parsnip, the diagonally sliced steak, more greens then drizzle with the pomegranate.

Lean the bap tops on the side. —Serves 2

MOROCCAN BEEFBURGERS

2 fillet steaks1 tsp Moroccan seasoning1/2 cup prepared thin,tempura-style batter2 each: diagonal slices ofcarrot & parsniprice bran oil for frying1 orange1/4 cup each: baby saladleaves, mint leaves2 medium baps, split andlightly toasted2-3 tbsp pomegranatemolasses

Sprinkle the steaks with theMoroccan seasoning. Add alittle seasoning to the tempura-style batter.

Dip the carrot and parsnipslices into the batter and deep-fry, until golden. Remove anddrain on paper towels. Keepwarm.

Pan-fry the steak for 2-3minutes each side. Place asideand keep warm.

Cut 2 thin slices of orange.Sprinkle the greens with thejuice from the remainder of theorange.

Place half the greens on thebase of the toasted baps, thenadd the carrot and parsnip, thediagonally sliced steak, more

greens then drizzle with thepomegranate.

Lean the bap tops on theside. — Serves 2

BLACK BEANBEETROOTMUSHROOMBURGERSBlack bean beetroot burgersare a new product locatedclose to the cheese insupermarket chiller cabinets.

8 large portobello mushroomssalt and pepper to taste2-3 tbsp canola oil2 vine sweet mini peppers,thinly sliced4 black bean beetroot burgers12 sprigs flat-leaf parsley1/2 cup beetroot & roastedcashew hummus or similar

Discard mushroom stems, thenseason and pan-fry in the oil,until just tender. Remove andkeep warm.

Stir-fry the peppers quicklyand place aside.

Pan-fry the burgers for about2 minutes each side or until hot.

Layer the burgers, peppersand parsley on 4 of the cookedmushrooms.

Top with some hummus thenthe mushroom caps.

SUSHI BURGERFresh or smoked oysters canbe used.

1 cup sushi rice1 1/2 cups water1-2 tbsp sushi su (ready-mixedsushi vinegar)1/3 cup mayonnaise1 tsp wasabi paste200g boneless salmon2 tbsp lemon juice16 thin slices cucumber4 oysters8 coriander leaves

Cook the rice in the water. Add alittle more water if necessary.Cover and stand for 5 minutesthen fluff with a fork, adding thesushi su at the same time.

Meanwhile, combine themayo and wasabi.

Place salmon in a microwavedish and sprinkle with lemonjuice. Cover and microwave onhigh for 1 & 1/2 to 2 minutes,until just cooked. Remove skinand divide salmon into 4 pieces.

Take a mould or biscuitcutter and make 4 round ricediscs. Top with the cucumber,salmon and oysters, wasabimayo, coriander leaves andanother smaller round disc ofrice. Can be garnished withstrips of fried nori or cavolonero leaves. — Serves 4

STICKY CHICKENBAGEL BURGERS

500g skinned and bonedchicken breasts1 tbsp canola oil2 tsp Worcestershire sauce1/4 cup each: tomatosauce, barbecue sauce,brown sugar1 tsp smoked paprika4 bagels, split and lightlytoasted4 each: large frilly lettuceleaves, spring onions1 tsp sesame seeds

Slice the chicken into 1cmstrips. Pan-fry in the oil until justcooked, about 5 minutes.

Combine the sauces, brownsugar and smoked paprika andstir into the chicken. Heat for afew seconds.

Meanwhile, line the bases ofthe bagels with the lettuceleaves.

Trim the spring onions.Thinly slice the green ends so

they will curl then place in icywater.

Top the lettuce with thesticky chicken.

Sprinkle with sesame seeds,cover with the bagel top andinsert a spring onion curl in thebagel hole.

Also appearing at the Avonhead School Hall this month is

the Risingholme Orchestra.The orchestra is made up of a mix of ages and professions

who come together for the joy of playing music together. With several public concerts each year, the orchestra has a

sense of purpose about their rehearsals which are the highlight of the week for many members – with friendships, a common purpose, playing music together and having fun making for a happy occasion each week.

“For this concert we will be performing Beethoven's dramatic Overture to Coriolanus, some sublime ballet music from Gounod's Faust, the rousing Eric Coates' Dambusters Overture and A Tribute to Henry Mancini,” said Helen Reddecliffe. “We also welcome Riley Payne to perform Neruda's Classical Trumpet Concerto for Trumpet and Strings. Riley is currently a year 13 student at Cashmere High School where he is an active leader of the trumpet section in a number of groups and is also co-principal of the Christchurch Youth Orchestra. We warmly invite you to a wonderful afternoon of entertainment.”
