Corn Flour—made from dried corn, milled very fine into flour. Do not sub corn flour for corn meal.

Corn Meal—made from dried corn, milled fine, medium or coarse. Traditionally stone-ground which makes the corn meal more nutritious by leaving some of the hull and germ of the kernel. It also has a higher fat content that makes it more perishable. Most corn meal is now ground by steel rollers which removes most of the husk

and germ.

Grits—originally made from dried white corn, cooked with lime, dried and ground coarse (i.e.

“cured”). Now more generally manufactured as a more coarsely ground corn meal.

Masa Flour– made from hominy (dried, cooked corn with added lime).

Polenta– a dish that you make with medium or coarse ground yellow corn meal. If a corn meal has the word “polenta” in the description, it generally means it is coarse grain size, ideal for this

dish.

SUGAR GLOSSARY AA Confectioner’s Crystals (special order) —size 1100 microns—large grain size, clear crystal. Ideal for toppings, baked

goods. Not to be confused with “confectionary” or powered sugar.

Agave (various #)—Agave syrup is the same as agave nectar. Raw has not been pasteurized or heated. Though the

syrup can come from several species of agave, the Blue is the most popular. Light is golden to amber and heated to

about 151 degrees for a short time; whereas Dark is heated to 116 degrees for a longer period of time resulting in a

deeper darker color.

Bakers Special (various #) —size 100 microns—super fine sugar with superior dispersion characteristics. Also known as

Castor, Bar, Superfine or Ultrafine Sugar.

Brown Golden C (various #)—size 150 microns—stays soft & pliable on the shelf, even when temperatures are high.

Boiled medium brown sugar with a rich molasses flavor and small uniform crystals.

Brown Yellow D (various #)—size 150 microns—dark brown with extra rich molasses flavor. Boiled, small uniform crystals.

Cane Syrup (Lyle’s #527855, 16 lb)—100% cane sugar, by product of making granulated sugar. Excellent alternative

for corn syrup. Smooth butterscotch flavor, excellent for pecan & pumpkin pies.

Décor AA Polished (C&H #526921, 25 lb)—sugars that are used as garnish and/or won’t melt. Also “A”, Snow Sugar =

Demerara (various#)—size typically 1200 microns. Perfect as a garnish for cookies, pies and even crème brulee.

Minimally processed sugar with golden hues & large crystals. Similar to Turbinado but with larger crystals.

Flos (special order)—sugar especially formulated for cotton candy machines.

Glucose syrup #21535 & #21536—invert type sugars but not necessarily substitutes for “inverted sugar” like trimoline

in a recipe.

Granulated White Cane (various #)—size 200 microns—fine crystal, general purpose sugar. Natural or organic cane

is non-gmo and slightly blond in color. (Beet sugar is generally GMO if from the US).

Invert Sugar– like trimoline used to prevent or control crystallization & increase shelf life. Sweeter than glucose. Honey

can sometimes be used as a substitute.

Muscovado (special order)—minimally processed. Made before molasses is taken out of sugar production processes.

Deep dark brown in color. The term comes from the Spanish word mascavado meaning lowest quality because it was

less refined and considered inferior in the late 18th and early 19th century. Can be special ordered.

Powdered Sugar (various #)—size 50 microns—micro-pulverized sugar formulated with 3% cornstarch to prevent caking.

Ideal for icings, dustings & frostings. Organic turns slightly grey, making it less suitable for white icings.

Sanding Special (special order)—size 750 microns—medium size decor, clear polished crystal grain ideal for sanding

cookies.

Sucanut (special order) - size n/a. Unrefined. Large grains made by crushed sugar cane, extracting the juice & heating/

reducing the juice to a rich, dark syrup, then cooled & dried to granulars. Dark color and distinct molasses flavor with

healthy trace minerals. Also known as Rapadura, Jaggery & Panela. Some forms sold in cakes. Sucanet is a branded

Acacia (Acacia) Raw Italy** - Very light in color and super clear. Soft & silky taste, aroma of white flowers with a hint of vanilla and sweet almonds.

Rich in fructose, sweet & moisture absorbing. Superb as a glaze for tarts or pies and excellent in candying fruits & vegetables. Compliments goat and

blue cheeses. Region: Levico Terme (TN) - Montello (TV).

Alfafa aka Alfa Alfa (Erba Medica) Raw Italy** - Exceptional for nougat, jelly and candy making. Very interesting color—white and creamy. Produced

between July and August, this simple crystallized honey has notes of soft, vegetable and hay. The nose resembles cut grass and the cellar. Taste is

medium sweet and lightly acidic. Region: Porto Tolle, Polesine—Rovigo.

Alpine Flower (Fiori Delle Alpi) Raw Italy** - Produced in July and August, the different nectar origins give this “meditation” honey an amber color,

sometimes darkened by the presence of melates, a net smell of ink and cooked artichokes, and a taste, elegant but decisive in, among all the sensations,

stand out china and rhubarb; of a little sweetness has a long final that, with great harmony, closer the circle of all the senses involved. Superb with

yogurt. Region: Brenta Dolomites—Trento.

Apple Blossom (Melo) Raw Italy** - Rare honey. Light creamy color. Aroma of apple cider, grass sap, musk & baked Reinette apple. Medium sweet

taste with floral & herbaceous fragrance, thistle & boiled artichoke aftertaste. This honey would be fantastic for tanning pork roast and roasted game,

in a salad dressing with wild herbs, finish to risotto, and also on a cheese course with fresh apples. Region: Tres, Val di Non–Trento.

Chestnut (Castagno) Raw Italy** - Aroma of dried chamomile fragrance, tea-like & woody, earthy tones. Taste is bitter, slightly tangy, woody and

smoky with slight notes of cocoa beans. Harvested from the end of June and the first half of July from wild mountain chestnut flowers, this honey is ex-

traordinarily versatile and is the richest in minerals. Magnificent mixed with fresh ricotta or in a persimmon mousse. Wonderful with smoked food or the

filling of pumpkin ravioli, and also with ricotta and aged cheeses like Parmigiano Reggiano. Region: Novaledo, Borgo Valsugana, Trento.

Eucalyptus (Eucalipto) Raw Italy** - Produced in July. This honey has a strong personality. Color is amber or light hazel. Smells of licorice, sometimes

very smoky and slightly salty flavor with notes of dulce de leche. Medium sweetness, very intense and persistent with references to umami and caramel.

Try with roasted vegetables and to finish risotto! Region: Policoro, Metaponto—Matera.

Forest Honeydew aka Honey in the Forest (Bosco) Raw Italy** - Great as a sweetener in teas and coffee; perfect for mulled wine. Produced between

July and August. Very dark amber color with opaque reflexes from red to brown. The smell is strong with spices such as black pepper, juniper berries

and cloves. The taste is marked with cooked vegetables, carob, rhubarb and licorice Not sweet but leaves a behind the taste of baked cane sugar.

Ideal for sweet and savory applications. Rich in potassium. Region: Valley of Ticino—Pavia.

French Honeysuckle (Sulla) Raw Italy** - Very light in color, creamy. Hints of flowers & herbaceous fragrance, hay/dry grass. Delicately sweet, light

overtones of green pulses, straw & fresh walnut hull. Naturally balanced between salty, sweet & acid. Amazing as “food” for yeast in bread—especially

sour dough; making it softer, fragrant and brown. Often used in making hard nougat. Region: Nocara—Cosenza.

Ivy Flower (Edera) Raw Italy** - For tanning BBQ with pepper, vinegar and EVOO! Produced between September and October. This honey has a very

high concentration of glucose which results in fast crystallization while still in the comb; therefore requiring a small window to harvest. Honey color of

gray with green iridescences; pungent notes of cinnamon; and a sweet, toasted, herbaceous aftertaste with a pepper finish. Region: Lake Garda—

Verona.

Lime Tree aka Linden (Tiglio) Raw Italy** - Not related to lime fruit trees. Wonderful for all teas, especially herbal teas and flower infusions. Produced

at the end of June, by the flower of the noble tiglio plant. This white crystallized honey has beautiful golden reflections. The scent is fresh, menthol, with

an intense aroma of fresh spices, medium sweetness and long persistence, evokes fresh walnut, lime and sage. Very interesting for cheese plates. Re-

gion: Valsugna—Trento.

Miellefiori (Wild Flower) Raw Italy** - Vintage variables. Produced between Spring and Summer. Excellent as an all around honey and for garnishing

cakes, ice cream and pannacotta. Intense golden color with orange reflections. The nose has clear formal notes and candied fruit. Region: Tuscany

Orange Blossom (Arancio) Raw Italy** - Fragrant, along with notes of fresh flowers, honeysuckle, hawthorn & ripe melon. Excellent for pastry & wheat

pasta. Characteristically acidic. Region: Pianura Metapontina—Matera.

Sunflower (Girasole) Raw Italy** - Wonderful enhancement to vegetable soups and savory stocks. Produced between the end of June and July. This

crystallized honey is rich in glucose. Unmistakably intense, warm yellow color (like an egg yolk). Delicate aroma of pollen, wet hay, pineapple and

passion fruit. Hints of green tomato, juniper and ripe apricot. Region: Hills of Jesi—Ancona.

Thistle (Cardo) Raw Italy** - Perfect for rich sauces and mayonnaise. Produced between June and July. When liquid, this honey has yellow reflections of

the sun, which change to light hazelnut color...when the honey crystallizes, it bouquet is of geranium, rose and chrysanthemum. The flavor is fruity and

slightly astringent flavor. Region: Madonie Mountains, Palermo.

Tree of Heaven (Albero del Paradiso) Raw Italy** - Called Tree of Heaven because of it’s height, reaching 50 ft in 25 years. Excellent with roasted nuts

or to caramelize fruit. Produced in May. This honey is fairly delicate and remains liquid for a long time. Golden yellow color loaded with amber reflec-

tions. Taste under ripe moscato. Region: Low Garda Veronese.

Gelatin Sheets/Powder

Not sure which type of gelatin sheet to use? Go for silver. When the recipe calls for SHEETS, you can

interchangeably use gold, silver or bronze with a very similar result; 5 sheets = 5 sheets. However, if

the recipe calls for GRAMS of gelatin sheets but makes no mention of grade, that can be tricky—see

chart above. Converting sheets to powder? No problem, simply 1 teaspoon of powdered gelatin is

about equal to 1 sheet of silver (1 envelope = 1 tablespoon = 3 sheets). While powdered

(unflavored) gelatin is convenient, it generally does not produce a crystal clear product like sheets do.

Not sure how much gelatin to use in your NEW recipe? Generally 6 sheets are for 1/2 liter liquid; 4

sheets for 1/2 liter of crèmes containing eggs products.

Pectin is a gelling agent from plants, mainly extracted from citrus fruits and apples. Pectin is a soluble

dietary fiber that binds to cholesterol in our gastrointestinal tract and helps slow glucose absorption by

trapping carbohydrates.

Apple Pectin— is used to stabilize/thicken jams, jellies, paté de fruit, etc. There are different types

of pectin for different applications. Pure apple pectin (also known as yellow pectin) is the most common

and universal in the pastry kitchen. It has a slow set, and spreadable gel texture. Once set, it cannot be

reversed or melted.

Thermoreversible Pectin—also known as NH, NR or TR. It can be set, melted and set again. Meant for

low sugar items. Set time is longer and is best for sauces or clear jellies where particle suspension is not

important.

What is the difference between DUTCH and NATURAL cocoa powder?

Cocoa powder is made from chocolate minus the cocoa butter, ground fine. If the recipe does NOT say which type, you can generally sub Natural for Dutch, but not the other way around. If the recipe calls for baking soda, then use Natural, if

it lists baking powder, then use Dutch.

For ice cream & sorbet, regular chocolate is best because you will get the smoothest product versus having a slightly sandy

texture left on your pallet.

Dutch Process (aka Alkalized)—cocoa beans are washed with a potassium solution to neutralize acidity, making them darker. The flavor however, is a little mellower. Typical pH level is between 7 (the same as water). Pairs with Baking

POWDER.

Natural Process—cocoa beans that have been roasted, then made into powder. All organic cocoa powder is “natural”.

Generally lighter in color and fruitier tasting. Typical pH level is 5-6. Pairs with Baking SODA.

Scharffen Burger —”squares”

Once the local darling who helped start the wave of new American chocolate back in 1996. Now owned located in Illinois and owned by Hershey. Still a staple in most local

retailers and many professional kitchens too. Sold in “square” pieces.

Cacao Barry —”pistoles”

Started in 1842 by Charles Barry who personally sourced beans in Africa for his French chocolate company. In 1971, Cacao Barry partnered with world famous pastry chef Gaston Lenôtre then becoming the first brand to offer support to professionals. Known for its quality and consistency.

These preserves are made locally here in San Francisco’s Dog Patch using

traditional French recipes and cooked at low heat in copper kettles. Made

only of three ingredients—70% fruit, cane sugar and pectin. These

preserves are “clean” and all natural. Since there are no preservatives,

product comes frozen and has a 30 day shelf life refrigerated.

The unique secondary flavor is just a subtle suggestion that highlights the

main fruit while offering something different. These preserves can be

used on the table, as cake or cookie fillings as well as stuffed in baked

pastries. Since these preserves do not contain starches and gums like

commercial “bake-proof” jams (20-40% fruit), when baked, they will run

slightly making for a more artisanal product.

Trending—Butterfly Pea Flower

Butterfly pea flower tea is a caffeine-free herbal tea, or tisane, beverage made from

a decoction or infusion of the leaves of the Clitoria ternatea plant. The ternatea is also

known as butterfly-pea, blue-pea, Aprajita, Cordofan pea or Asian pigeonwings.

Derived from a plant that is common to most South East Asian countries, butterfly

pea flower tea has been brewed for centuries, but only recently been introduced to

tea drinkers outside the indigenous area. Butterfly pea flower tea retains many of the

medicinal properties, as well as extracting the deep blue color of the petals that has

made the plant a popular dye for centuries.

One neat trick of the steeped dried flowers is that the liquid changes color based on

the pH level of the substance added to it. For instance, adding lemon juice, tonic or

any acid to the tea will turn it purple.

There are so many exciting ways to use it too—Blue Ice Tea or Lemonade, Blue/

Matcha drinks, Blue Rice, Blue Velvet Cake or even Blue Surf Cake!

Matcha is everywhere and not just in beverages! Ice cream, cookies, cakes, truffles, rice

and more! Though Matcha has as much caffeine as coffee, it gives a less jittery buzz that

last longer. It’s important to store the Matcha in a dark sealed container, in a cool loca-

tion, so that it does not oxidize, effecting the color.

Matcha is a traditional Japanese green tea powder produced by stone-milling a shade-grown green tea called tencha

into a fine powder. The quality of matcha greatly depends on the tea bush cultivar, shading technique and picking

standard used to produce tencha. Matcha has a rich cultural tradition as the tea prepared and revered during cha-

noyu–the mindful, artistic, Zen-inspired Japanese Tea Ceremony. Matcha is unique among teas in that when we

drink matcha, we consume fresh green tea leaf itself, ground and whisked up into an energizing, refreshing bowl.

There are many types of Matcha powder, but basically there is “barista” and “culinary”. Barista is the go-to for café

style drinks, it is the best quality, second flush matcha. Culinary matcha is ideal for cooking and is less expensive.

What is “Baker’s Percentage”?

Baker’s Percentage is a calculation that allows you to

increase a dough recipe, while maintaining the correct

ratios. In short, you cannot just double or triple a dough

recipe and hope that it comes out correctly. According

to the Bread Bakers Guild of America (www.bbga.org),

it is critical to understand and respect these formulas to

have a successful outcome.

Flour is always 100% and the weight of each other in-

gredient is a percentage of the flour weight. It’s really

easy! The recipe must be in weight (not in volume). If

you have a recipe with more than one flour, just add up

the weights of the flours to make that your 100% base.

EXAMPLE: STRAIGHT DOUGH

CHOCOLATE

BLOOM

Chocolate bloom is a white powdery surface due to fat

bloom or sugar bloom. This problem is due to incorrect stor-

age of chocolate; either too warm or too cold. Fat bloom

occurs when cocoa butter either does not crystallize properly

or undergoes a phase transition when stored in warm or hu-

mid conditions. Fat bloomed chocolate feels 'oily' or 'greasy'

due to surface layer of fat. Fortunately, fat bloom can be

reversed by either tempering the chocolate or using it in a

baked good where the chocolate will be warmed or cooled in

similar way of the tempering process.

Sugar bloom occurs when sugar dissolves in surface moisture

and recrystallizes, so do not store unwrapped chocolate in the

fridge. Sugar-bloomed chocolate feels 'grainy' due to sugar

deposits on the surface. Most importantly, sugar bloom is

irreversible, so sugar-bloomed chocolate cannot be fixed

(though you may be able to salvage it in a brownie recipe).

Chocolate with low cocoa butter content (like 32%) will have

less than high cocoa butter content couvertures. If the choco-

late is being used in baking (either as a chip or melted into

the recipe) the quality won't be affected. If you are making

molded truffles, the chocolate will need to tempered again.
