GAS hOSE CODE COmPLIANCE

Whenever a new or used piece of equipment is purchased, a new moveable grade gas connector is always recommended at the same time. Why? Safety. The purpose is to minimize the risk of an old line breaking while in use, which in the case of a range means a dangerous gas leak.

When selecting a new gas connector, always work with a foodservice professional to help select the correct diameter and length for your equipment.

All moveable gas connectors will be ANSI Z21.69 certified and comprised of a:

You may wonder, “Why do I need a moveable grade connector? Can’t I just use a connector similar to the one in my house?” The answer is NO. Always use a moveable connector because:

Flex Tube Kits

All three options will fix the equipment, but the best option is almost always flex tubes because of the installation time and price.

1. The first option is to purchase a replacement from the Original Equipment Manufacturer (OEM). These are the easiest to install, but also the most expensive.

2. The second option is copper clad steel tubes and fittings, which can be bent to fit the equipment. This option is the least expensive, but it can be time consuming to bend the tube to the exact dimensions for your range.

3. The final option is stainless steel flex tube. These are medium priced, but as fast to install as the OEM tubes.

mAINTENANCE ChECK LIST

Regular maintenance of kitchen equipment is essential to maximize performance and lifespan. You should always consult the owner’s manual for equipment-specific procedures, but there are many general actions that need to be done to all ovens and ranges regardless of brand.

Remember, let everything cool down first. Before you begin any cleaning or maintenance procedures, be sure to turn off your commercial range.

OvEN DOOR gaSKET

If the gasket is located on the frame of the oven door, it can be replaced quickly and easily. If the gasket is located between the front and back section of the door, it is more difficult to remove and should be replaced by a service tech. See page 20 to learn how to tell if the gasket is damaged and needs to be replaced.

OvEN TEMpERaTURE aCCURaCy

Monitor the internal oven temperature to ensure the actual temperature reads the same as the knob setting. The best tool for this is a high quality oven thermometer. If temperature variations become too great, have a professional inspect the oven as it may need to be recalibrated or there could be a problem with the thermostat. See page 28 for preferred oven thermometers.

FlaME aND pIlOT lIgHT

To check the flame, turn on each burner one at a time and look for a steady blue flame. If that is not what you see, turn off the burner and adjust the screw on the air shutter until the flame has been corrected. If the pilot doesn’t stay lit, unplug the range and clean out the clogged port.

gRaTES

Grates will crack and break over time. Monitor these regularly to ensure damaged grates are found and replaced early. Replacement grates can be found on pages 14-15.

Both gas and electric ranges have removable burners for cleaning. Cast iron grates can be cleaned by simply wiping them down with a wet cloth. If they are in need of a deeper cleaning, they can be soaked in warm soapy water to break down the grease. Electric range elements can be wiped down the same way.

UNDER THE gRaTES OR bURNERS

A great time to clean under grates and burners is when they’re removed for cleaning. If the stove has drip trays, remove them and wipe them down. If they are wiped down daily, they will not be as difficult to clean. These can be soaked in warm soapy water if necessary. For gas ranges, wipe down the area underneath the grates.

OvEN INTERIOR

To clean a porcelain enamel interior, use a standard oven cleaner. For metal interiors, use a mild detergent and soft cloth.

AS NEEDED

Wipe up spills immediately to prevent food from becoming baked on and more difficult to clean.

DAILY

Clean the oven interior with a mild detergent and remove any crumbs at the end of each day. Oven racks should also be removed and cleaned separately.

WEEKLY

Once a week, use a mild soap and soft cloth or soft-bristled brush on the exterior of stainless steel equipment.

MONTHLY

Perform a deeper clean to remove baked on food in oven interior. Check the owner’s manual for procedures and approved oven-cleaning chemicals.

OVEN GASKET BASICS

CHECK THE SEal - Located inside of the oven door is the gasket, which provides an airtight heat seal when the door is closed. A cracked or damaged section will allow heat to leak out of the oven, wasting energy and slowing the cook time of items in the oven. To check the seal, turn on the oven and allow it to heat up. Pass your hand around the outside of the door, without touching the oven, and if you feel heat escaping the gasket needs to be replaced. TypES OF gaSKETS - There are two primary types of oven door gaskets: silicone and fiberglass. Silicone can withstand the high temperatures of cooking, but not those of a self-cleaning feature. To increase the heat protection, fiberglass is used to coat the gasket making is suitable for a self-cleaning oven.

CHOOSINg a gaSKET When choosing a replacement gasket, the most important factors to account for are type and size. TypE - To determine type, simply identify if the oven does or does not have a self-cleaning feature. This will indicate whether to select silicone or fiberglass SIZE - Gaskets come in different lengths and are typically sold in rolls or by the foot to accommodate the different sizes of oven doors. To determine the required length, simply measure the old gasket and round up to the next foot when purchasing the replacement. This allows a few additional inches to be trimmed off during installation ensuring a proper fit.

When purchasing a new range or oven, it will typically come with standard legs installed. While this is the least expensive way to purchase your range, it’s not the best option for your kitchen.

Equipment on fixed legs is difficult to properly clean around. Mobilizing your equipment with casters allows it to be moved for easier cleaning, leading to a safer kitchen.

When mobilizing equipment, here are a few things to keep in mind:

1. Always use aftermarket casters over OEM - they are less expensive and equal or greater in quality

2. Select a caster kit with 2 fixed casters for the back of your equipment and 2 rotating casters with brakes for the front. This will allow maximum maneuverability.

3. Be sure to install a positioning system in your kitchen like Safety-Set from Dormont (see page 23). Positioning systems are a NFPA code requirement and ensure your equipment can be returned to its design specified position under the fire suppression system after cleaning.

4. Always use a moveable grade gas connector such as those available from JetForce and Dormont. They are required any time a gas piece of equipment is mounted on casters.
