Please note that the Gourmet warming drawer is referred to in these operatinginstructions as the drawer.

This drawer complies with all relevant safety requirements.Inappropriate use can, however, lead to personal injury anddamage to property.

To avoid the risk of accidents or damage to the appliance, pleaseread these instructions carefully before installation and using it forthe first time. They contain important notes on installation, safety,use and maintenance.Miele cannot be held liable for damage caused by non-compliancewith these Warning and Safety instructions.

Keep these instructions in a safe place and ensure that new usersare familiar with the content. Pass them on to any future owner.

Correct application

This drawer is designed for domestic use and for use in similarenvironments by guests in hotel or motel rooms, bed & breakfastsand other typical living quarters. This does not include common/shared facilities or commercial facilities within hotels, motels or bed& breakfasts.

This drawer is not suitable for outdoor use.

The warming drawer must only be used as described in theseinstructions. Any other usage is not supported by the manufacturerand could be dangerous.

This appliance is not intended for use by persons (includingchildren) with reduced physical, sensory or mental capabilities, orlack of experience and knowledge, unless they have been givensupervision or instruction concerning its use by a person responsiblefor their safety, and are able to recognise the dangers of misuse.

Safety with children

Young children must not be allowed to use this appliance.

Older children may use the appliance without supervision if itsoperation has been clearly explained to them and they are able touse it safely. Children must be able to recognise and understand thepotential risks of improper use.

Cleaning may only be carried out by older children under thesupervision of an adult.

Please supervise children in the vicinity of the drawer, and do notlet them play with it.

The drawer gets hot when in use and remains hot for quite awhile after being switched off. Keep children well away from thedrawer until it has cooled sufficiently so that there is no longer anydanger of burning.

Danger of suffocation! Whilst playing, children may becomeentangled in packaging material (such as plastic wrapping) or pull itover their head with the risk of suffocation. Keep packaging materialaway from children.

Technical safety

Unauthorised installation, maintenance and repairs can causeconsiderable danger for the user. Installation, maintenance andrepairs must only be carried out by a Miele authorised technician.

A damaged drawer can be dangerous. Always check for visiblesigns of damage. Never use a damaged appliance.

Reliable and safe operation of the drawer can only be assured if ithas been connected to the mains electrical supply.

The electrical safety of this appliance can only be guaranteedwhen continuity is complete between it and an effective earthingsystem. It is most important that this basic safety requirement ispresent and tested regularly and, where there is any doubt, thehousehold wiring system should be inspected by a qualifiedelectrician.

The connection data (voltage and frequency) on the data plate ofthe drawer must match the mains electricity supply in order to avoidthe risk of damage to the drawer. Compare this data before connecting the appliance. If in any doubt,consult a qualified electrician.

Do not connect the drawer to the mains electrical supply by amulti-socket adapter or extension lead. These are a fire hazard anddo not guarantee the required safety of the appliance.

For safety reasons, this drawer may only be used when it hasbeen built in.

This appliance must not be installed and operated in mobileinstallations (e.g. on a ship).

Never open the casing of the drawer.Touching or tampering with electrical connections or componentsand mechanical parts is highly dangerous to the user and can causeoperational faults.

The manufacturer's warranty will be invalidated if the appliance isnot repaired by a Miele approved service technician.

Faulty components must only be replaced by genuine Miele spareparts. The manufacturer can only guarantee the safety of theappliance when Miele replacement parts are used.

If the plug has been removed or the connection cable is notsupplied with a plug, the drawer must be connected to the mainssupply by a suitably qualified electrician.

If the mains connection cable is damaged, it must be replacedwith a special connection cable of type H 05 VV-F (rubber insulated),available from Miele, by a suitably qualified and competentelectrician in order to avoid a hazard (see “Electrical connection”).

During installation, maintenance and repair work, the drawer mustbe disconnected from the mains electricity supply. It is onlycompletely isolated from the electricity supply when:

– the mains circuit breaker is switched off, or

– it is switched off at the wall socket and the plug is withdrawn fromthe socket. Do not pull the mains connection cable but the mainsplug to disconnect your appliance from the mains electricitysupply.

If the drawer is installed behind a furniture panel (e.g. a door),ensure that the door is never closed whilst the drawer is in use. Heatand moisture can build up behind a closed furniture panel and causesubsequent damage to the drawer, the housing unit and the floor. Donot close the door until the drawer has cooled down completely.

Correct use

You could burn yourself on the hot drawer or hot dishes. Protectyour hands with heat-resistant pot holders or oven gloves whenhandling hot items. Do not let them get wet or damp. Heat transfersthrough damp and wet material more quickly with the risk of scaldingor burning yourself.

Fire hazard! Do not store any plastic containers or combustibleobjects in the drawer. They can melt or catch fire when the applianceis switched on.

Due to the high temperatures radiated, objects left near thewarming drawer when it is switched on could catch fire. Do not usethe drawer to heat up the room.

Never replace the anti-slip mat supplied with the appliance withpaper kitchen towel or similar.

The telescopic runners can support a maximum load of 25 kg.Overloading or leaning or sitting on the drawer will damage thetelescopic runners.

The underside of the drawer gets hot when it is in use. Be carefulnot to touch it when the drawer is open.

The anti-slip mat is heat-resistant up to 200 °C. It is possible for the bottom of pots and pans to exceed thistemperature, especially after they have been used to sear food.Allow pots and pans to cool down for a minute or two before placingthem in the drawer.

Items made of plastic or aluminium foil will melt at hightemperatures. When keeping food warm, use only heat-resistantcontainers made of porcelain, glass, etc.

If liquids get into the appliance through the vents, it can cause ashort circuit. Take care when opening and closing the loaded drawerso that liquids do not spill over.

The  “Keeping food warm” function is designed to keep hotfood warm and not to warm up cold food. Ensure food is sufficientlyhot when placed inside the drawer.

Bacteria can develop in certain foods if the temperature is too low.Make sure that you set a high enough temperature to keep foodwarm.

Cleaning and care

Danger of electric shock! The steam from a steam cleaningappliance could reach electrical components and cause a shortcircuit. Never use a steam cleaner for cleaning.

Disposal of the packingmaterialThe transport and protective packaginghas been selected from materials whichare environmentally friendly fordisposal, and can normally be recycled.

Recycling the packaging reduces theuse of raw materials in themanufacturing process and alsoreduces the amount of waste in landfillsites. Ensure that any plasticwrappings, bags etc. are disposed ofsafely and kept out of the reach ofbabies and young children. Danger ofsuffocation.

Disposing of your oldapplianceElectrical and electronic appliancesoften contain valuable materials. Theyalso contain specific materials,compounds and components, whichwere essential for their correct functionand safety. These could be hazardousto human health and to the environmentif disposed of with your domestic wasteor if handled incorrectly. Please do not,therefore, dispose of your old appliancewith your household waste.

Please dispose of it at your localcommunity waste collection / recyclingcentre for electrical and electronicappliances. You are also responsible fordeleting any personal data that may bestored on the appliance prior todisposal. Please ensure that your oldappliance poses no risk to childrenwhile being stored prior to disposal.

Remove any protective wrapping andstickers.

Do not remove stickers carryingsafety or installation information orthe data plate.

This makes it easier to performservicing and repair work.

Cleaning the drawer for thefirst time Remove the anti-slip mat and the

rack, if present, from the drawer.Clean them with warm water and alittle washing-up liquid applied with aclean sponge or with a clean, dampmicrofibre cloth.

Dry the mat and the rack with a softcloth.

Wipe the drawer inside and out with adamp cloth to remove any dust orleft-over packaging.

Dry all surfaces with a soft cloth.

Refit the anti-slip mat and the rack (ifapplicable) in the drawer.

Heating up the drawer for thefirst timeHeat the empty drawer for at least2 hours.

Switch the drawer on by touching theOn/Off sensor.

Touch the  sensor repeatedly untilthe  symbol lights up.

Touch the  sensor repeatedly untilthe segment on the far right-handside of the temperature display lightsup.

Touch the  sensor repeatedly until2h lights up.

Close the drawer.

The drawer is fitted with a contactswitch. This ensures that the heatingelement and fan in the appliance onlywork when the drawer is closed.

The drawer will switch itself offautomatically after 2 hours.

The metal components have aprotective coating. This may give off aslight smell when the drawer is heatedup for the first time. The smell and anyvapours given off will dissipate after ashort time and do not indicate a faultyconnection or appliance. Ensure that the kitchen is well ventilatedwhen heating the drawer for the firsttime.

Miele@home

Your drawer is equipped with anintegrated Wi-Fi module.

In order to use it, you need:

– a Wi-Fi network

– the Miele@mobile App

– a Miele user account. The useraccount can be created via theMiele@mobile App.

The Miele@mobile App will guide youas you connect your drawer to yourhome Wi-Fi network.

Once your drawer is connected to yourWi-Fi network, you can use the App, forexample, to carry out the followingactivities:

– Access information about theoperating status of your drawer

– Retrieve information on cookingprocesses that are in progress

– End cooking programmes that are inprogress

Connecting your drawer to your Wi-Finetwork will increase energyconsumption, even when the drawer isswitched off.

Before installing the drawer in its finallocation, ensure that the signal ofyour Wi-Fi network is strong enough.

Miele@home availability

The ability to use the Miele@mobile Appdepends on the availability of theMiele@home service in your country.

The Miele@home service is notavailable in every country.

Connecting via the app

The Miele@mobile App can be used toconnect to your network.

Install the Miele@mobile App on yourmobile device.

To log in you will need:

1. Your Wi-Fi network password.

2. The password of your drawer.

The password for your drawer consistsof the last nine digits of the serialnumber. This can be found on theappliance's data plate.

Data plate

The data plate is located here:

Start signing the appliance on in theapp. Follow the signing-ininstructions.

When requested to activate Wi-Fi onthe drawer, proceed as follows:

Switch the drawer off.

Press and hold the  sensor.

At the same time, touch the sensor.

2h will light up constantly, 3h will flashon and off.

The drawer will be ready for connectionin the next 10 minutes.

Follow the instructions in the App.

When successfully connected, 2h and3h will light up constantly.

Quit the connection mode on thedrawer by touching the  sensor.

The drawer can now be operated viathe App.

Connecting via WPS

Your Wi-Fi router must support WPS(Wi-Fi Protected Setup).

Switch the drawer off.

Press and hold the  sensor.

At the same time, touch the sensor.

2h will light up constantly, 3h will flashon and off.

The WPS connection must be startedon the drawer at the same time as onthe Wi-Fi router.

Touch the  sensor control on thedrawer after a few seconds.

After a short while, 2h will light upconstantly, and 3h and 4h will flash onand off.

The drawer will be ready for connectionin the next 10 minutes.

Start the WPS connection on yourWi-Fi router.

When successfully connected, 2h and3h will light up constantly.

Quit the connection mode on thedrawer by touching the  sensor.

The drawer can now be operated viathe App.

If the connection fails, you haveprobably not connected WPS on yourrouter quickly enough. Repeat the stepsabove.

Useful tip: If your Wi-Fi router does notsupport WPS, please connect via theMiele@mobile App.

Signing out of Wi-Fi (resetting factorydefault settings)

To set up a new Wi-Fi connection, theexisting Wi-Fi connection must first bedisconnected.

Switch the drawer off.

Press and hold the  sensor.

At the same time, touch the sensor.

With an existing Wi-Fi connection, 2hand 3h will light up constantly.

The drawer will be ready fordisconnection in the next 10 minutes.

Touch the sensor.

2h will light up constantly, 3h will flashon and off.

After a few seconds, 2h and 3h willflash on and off. The connection hasbeen disconnected.

Quit the signing-off mode on thedrawer by touching the  sensor.

The Wi-Fi connection has beendisconnected. A new connection cannow be set up.

Operating principles

Malfunction due to dirty and/orcovered sensor controls.The sensor controls do not react orunintentional switching proceduresresult, perhaps even automaticswitching off of the drawer.Keep the sensor controls andindicators clean.Do not place anything over thesensor controls or indicators.

Damage caused by leakingliquids.Liquids that get inside the drawercan cause a short circuit.Open and close the loaded drawercarefully to prevent liquids fromspilling.

Open the drawer.

Switch the drawer on by touching the sensor.

Touch the  sensor repeatedly untilthe required function lights up.

Touch the  sensor repeatedly untilthe segment for the requiredtemperature lights up in thetemperature display.

Touch the  sensor repeatedly untilthe required operating duration (inhours) lights up.

Close the drawer.

Using MobileStart Touch the  sensor to activate

MobileStart.

The indicator light above the  sensorwill light up. You will be able to operatethe drawer via the Miele@mobile App.

Operation via the sensors hasprecedence over operation via theApp.

FunctionsThe following functions are available:

–  Warming cups/glasses

–  Warming dishes/plates

–  Keeping food warm

–  Low temperature cooking

The last function selected isautomatically activated the next timethe drawer is switched on, and appearsin the display.

The drawer has a fan which distributesthe warm air evenly throughout thedrawer. The fan runs continuously withall functions.

The drawer can be used to keep foodwarm at the same time as warmingplates and dishes. Use the  Keepingfood warm function for this.

Danger of burning from hotdishes!Empty dishes will become very hotwhen heated using the  Keepingfood warm function.Use oven gloves when removing thedishes.

Duration

Fire hazard due to dried-outfood.Keeping food warm for a long timecan result in it drying out or evenself-igniting.Do not leave the drawer unattendedfor long periods in continuousoperation.

The drawer is set for continuousoperation mode (exception: Lowtemperature cooking). The safetyswitch-off mechanism will switch off thedrawer after a maximum of 12 hours ofcontinuous operation.

A limited operating duration can beselected by touching the  sensor.Touch once for 1 hour (1h), twice for2 hours (2h), etc., up to a maximum of4 hours.

Continuous operation is restored bytouching the sensor a fifth time.

Temperature settingsEach operating mode has its own temperature range. The factory defaultrecommended temperatures are printed in bold. The temperature can be altered in5 °C increments by touching the  sensor.

The last temperature selected is automatically activated the next time the drawer isswitched on, and shown in the display (exception: Low temperature cooking).

Keeping food warm

Useful tipsTo maintain your food's optimum qualityplease note the following:

– Place the hot food into pre-heateddishes. Place the empty dishes in thedrawer while it pre-heats.

– Do not cover roasted or fried foodswhich you want to keep crisp. Thesetypes of food need to be kept warmat a higher temperature.

– Cover liquids and food with a highmoisture content with a suitable lid orheat-resistant foil. This will preventmoisture escaping and condensingoutside the dish.

– To avoid spillages, do not overfilldishes.

– Freshly cooked food is hotter thanfood which is being kept warm. Servefood which has been kept warm onpre-heated plates.

– Nutrients are lost when food iscooked, and continue to diminishwhen food is kept warm. The longerfood is kept warm for, the greater theloss of nutrients.

– We do not recommend food beingkept warm for too long, as it willcontinue to cook.

– Food may cool down if the drawer isopened and closed too often.

– Do not open the drawer too quickly orslam it shut. Liquids could spill overand get into the vents or into theinner parts of the drawer.

Health risk caused by using toolow a temperature.Bacteria may develop in the food ifthe temperature used for keepingfood warm is too low.Only use the  Keeping food warmfunction for keeping food warm.

This function is for keeping food warmwhich has just been cooked and is stillhot. It is not for reheating food that hasgone cold.

Select the  Keeping food warmfunction.

Select the desired duration.

Pre-heat the drawer for approx.15 minutes to ensure that it hasreached the required minimumtemperature.

Whilst the appliance is heating up,place the empty dishes in the drawer.

Remove the pre-heated dishes fromthe drawer after 15 minutes and fillthem with the hot food. Wear ovengloves when removing dishes fromthe drawer.

Then place the dishes in the drawerand close it carefully to prevent anyliquids from spilling.

Warming crockery

Useful tips– Distribute the crockery over the whole

area of the drawer. Stacks of platesheat up more slowly than individualpieces of crockery. If you cannotavoid stacking plates, place them atthe front of the drawer.Use the rack (depending on model).

– Do not place large serving dishesright up against the vents. They willcover the warm air outlets. Thecrockery will not heat up evenly.

– For cups and glasses, only select the Warming cups/glasses function toensure that the maximumtemperature (60 °C) is not exceeded.

– Heated crockery cools down veryquickly. Do not remove it from thedrawer until just before you need it.

Heating-up timesVarious factors will affect the heating-up times:

– The material and thickness of thecrockery

– Load size

– How the crockery is arranged

– The temperature setting

It is therefore not possible to stateprecise times. For even heating with the Warming dishes/plates function, thefollowing values can be used as aguide:

– 30–35 minutes for 6 place settings toheat up evenly

– 40–45 minutes for 12 place settingsto heat up evenly

As you use the warming drawer, you willget to know which setting suits yourown needs best.

Capacity

Risk of damage due tooverloading.Overloading the drawer will damagethe telescopic runners.The maximum load bearing capacityof the drawer is 25 kg.

The quantity that can be loaded willdepend to a great extent on the sizeand weight of your crockery.

ESW 7020, ESW 7030, ESW 7120: theloading area can be increased by usingthe rack supplied with the drawer.Position the rack to suit. With two racksyou can increase the loading area evenmore by placing one rack on the leftand the other on the right. An additionalrack can be obtained from the Mieleonline shop, or directly from Miele (see“Optional accessories”).

Low temperature cooking

With low temperature cooking, food iscooked at a low temperature over along period of time. Using this method,food loses less liquid as it is cookedgently and so remains succulent andtender.

If food probes from other Miele built-in appliances are used in the drawer,they may affect the built-inappliances.Only use the Miele built-in appliancefood probe with the built-inappliance that it was supplied with.

For precision, we recommend using aproprietary food probe to monitor thecore temperature. The food can then becooked to an exact temperature.

Core temperatureFood can be cooked to a coretemperature of up to 70 °C in thedrawer. Food which needs to be cookedto a core temperature higher than 70 °Cis not suitable for cooking in the drawer.

The core temperature indicates thedegree of doneness in the middle of thefood.

For meat, the lower the coretemperature, the less cooked the meatis in the middle:

– 45–50 °C = rare

– 55–60 °C = medium

– 65 °C = well-done

Cooking durationThe cooking duration depends on thesize of the food, and can be between 1and 6 hours.

Pre-heat the drawer with the suitablecooking containers for 15 minutes. Thisensures that the dishes and the interiorof the drawer reach the requiredtemperature.

Example: Selected duration 1h Actual operating time 1 hour 15 minutes

Notes– Use meat that has been properly

hung.

– The quality of the food is of vitalimportance for a good result.

Using the Low temperaturecooking function Select the  Low temperature

cooking function.

Place an ovenproof dish on the floorof the drawer.

The drawer will pre-heat automaticallyfor 15 minutes and then operate at thepreset temperature of 85 °C for a presetduration of 4 h.

If you wish to cook using differentsettings, please consult the cookingcharts on the following pages.

If necessary, select the desiredtemperature.

If necessary, select the desiredduration.

After pre-heating, put the food in thedish.

If using a food probe: Push the food probe into the food sothat the tip is in the centre. Make surethat it does not come into contactwith bones or layers of fat as thesecan cause a false reading.

When the temperature is approx.10 °C (guide value) below the coretemperature given in the cookingchart, remove the food from thedrawer.

A smaller temperature difference isrecommended for large portions offood.

Sear the food on all sides over a highheat on the cooktop.

Useful tips– Do not cook the food all the way

through. Sear the food straight aftercooking.

– The food can be sliced straight away.It does not need to rest.

– Serve the food on pre-heated platesto stop it cooling too quickly.

Networking with Miele built-in appliances

Networking enables the drawer tooperate automatically depending on theoperational status of another Mielebuilt-in appliance.

Example:

The drawer heats dishes at the righttime before or after using the networkedbuilt-in appliance.

Pre-requisitesThe following conditions must be metfor networking the drawer with otherbuilt-in appliances:

– The drawer is connected to thehousehold Wi-Fi network viaMiele@home.

– The other built-in appliance isconnected to the household Wi-Finetwork via Miele@home.

Carrying out the networkingNetworking is carried out via theMiele@mobile App as normal.

Sabbath mode

For religious observance, the drawercan be programmed for the duration ofthe Sabbath. This mode switches offautomatically after about 72 hours andthe drawer resumes normal operation.When this function is activated, thetimer is deactivated and the sensorcontrols must be touched for longerthan usual.

Activating If necessary, switch the drawer off.

Press and hold the  sensor.

At the same time, touch the sensor.

1h, 2h, 3h and 4h will light up.

Set the required mode andtemperature.

Deactivating

You can deactivate the Sabbath modebefore the time has expired.

Press and hold the  sensor.

All displays will switch off.

The drawer is in normal mode again.

Risk of damage due to moistureingress.The steam from a steam cleaningappliance could reach electricalcomponents and cause a shortcircuit.Do not use a steam cleaner to cleanthe drawer.

The use of unsuitable cleaningagents can cause the surfaces todiscolour or alter. All surfaces aresusceptible to scratching. Scratcheson glass surfaces could cause abreakage in certain circumstances.Remove any residual cleaning agentimmediately.Never use abrasive sponges orcleaning agents.

Danger of burning on the hotinterior!The interior of the drawer will be hotafter use.Allow the drawer to cool down to asafe temperature before cleaning.

The drawer and accessories shouldbe cleaned and dried after each use.

Unsuitable cleaning agentsTo avoid damaging the surfaces of yourappliance, do not use:

– cleaning agents containing soda,alkalines, ammonia, acids orchlorides

– cleaning agents containing descalingagents

– abrasive cleaning agents, e.g.powder cleaners and cream cleaners

– solvent-based cleaning agents

– stainless steel cleaners

Cleaning the drawer front andinterior

Malfunction due to dirty and/orcovered sensor controls.The sensor controls do not react orunintentional switching proceduresresult, perhaps even automaticswitching off of the drawer.Keep the sensor controls andindicators clean.Do not place anything over thesensor controls or indicators.

Remove all soiling using a solution ofhot water and washing-up liquidapplied with a sponge or use a clean,damp microfibre cloth.

Wipe with clean water afterwards.

After cleaning, wipe the surfaces dryusing a soft cloth.

Cleaning the anti-slip mat

Damage caused by incorrectcleaning.Washing the anti-slip mat in adishwasher or washing machine willdamage it.The anti-slip mat should only becleaned by hand.

Damage caused by incorrectdrying.Drying the anti-slip mat in an ovenwill damage it.Never place it in the oven to dry.

Remove the anti-slip mat from thedrawer.

Clean the anti-slip mat using asolution of hot water and a littlewashing-up liquid.

Afterwards dry the anti-slip mat witha soft cloth.

Only replace the anti-slip mat in thedrawer when it is completely dry.

With the help of the following guide, minor faults in the performance of theappliance, some of which may result from incorrect operation, can be remediedwithout contacting Miele. This will save you time and money because you won'tneed a service call.

Please note that a call-out charge will be applied to unnecessary service visitswhere the problem could have been rectified as described in these operatinginstructions.

Problem Possible cause and remedy

The drawer does notheat up.

The appliance is not correctly plugged in andswitched on at the mains socket. Insert the plug and switch on at the socket.

The circuit breaker has tripped. Reset the circuit breaker in the mains fuse box

(see data plate for minimum fuse rating). If, afterresetting/replacing the trip switch in the fuse boxor the residual current protection device, thedrawer will still not switch on, contact a qualifiedelectrician or Miele.

A noise can be heardwhen the drawer is inuse.

The noise is caused by the fan which distributes theheat evenly throughout the drawer. This is not a fault.

The food is not hotenough.

The function for keeping food warm  is notselected. Select the correct function.

The temperature setting is too low. Check that the doors have been closed properly. Select a higher temperature.

The vents have been covered up. Ensure that the air can circulate freely.

The food is too hot. The function for keeping food warm  is notselected. Select the correct function.

The temperature setting is too high. Select a lower temperature.

Safety instructions for installation

Risk of damage from incorrect installation.Incorrect installation can cause damage to the drawer and/or the combinationappliance.The appliance must only be installed by a suitably qualified and competentperson.

The socket and on-off switch should be easily accessible after thedrawer has been installed.

The drawer may only be installed in combination with thoseappliances quoted by Miele as being suitable. If the drawer is used incombination with other appliances, the warranty will be invalidated,as trouble-free operation cannot be guaranteed.

The base on which the drawer and the combination appliance arefitted must be fixed in place and must support the weight of bothappliances.

When building in the combination appliance, it is essential tofollow the instructions given in the operating and installationinstructions supplied with it.

The warming drawer must be installed in such a way that:

– The contents of the dishes can be seen when it is opened. This isto avoid scalding from hot food spilling over.

– There is enough space for the drawer to be pulled out fully.
