Most people eat more at Thanksgivingdinner than they consume in a normal day,and then continue overeating at year-end.So it helps to have a plan in place to avoidany holiday gobbling that you might payfor later.
Turkey, yams, mashed potatoes, greenbeans and cranberry sauce are all nutri-tious, so long as lots of salt, sugar and but-ter haven't been added to them, saysKathleen Duran-Thal, director of nutritionat Cooper Wellness Center in Dallas.
An earlier study by researchers at theNational Institute of Child Health andHuman Development and the NationalInstitute of Diabetes and Digestive andKidney Diseases found that Americansusually gain only one pound during thewinter holidays, but the weight put on thenisn't shed in the new year.
Those findings contradict many peo-ple's views that they gain five to 10pounds between Thanksgiving and NewYear's Day. Researchers said the effects ofweight gain at year-end, however, areworth worrying about because they con-tribute to increased weight over time.
Keeping weight stable in the fall andwinter may help prevent age-relatedweight gain and associated diseases, saysDr. Riva Rahl, medical director at CooperWellness. In addition to not looking orfeeling top-notch, adults with excessweight are at greater risk of heart disease,high blood pressure, diabetes and certaincancers, she says.
Cooper Wellness experts say to goahead and enjoy your favoriteThanksgiving foods, but consider makinghealthy choices at your turkey dinner.They offer some tips for keeping you fromfiddling with your belt at the end of themeal.
1. First of all, don't arrive at aThanksgiving dinner hungry. Eat a goodbreakfast, and maybe even lunch that day.
2. Fill half your plate with vegetables,one quarter of it with lean meat, and onequarter with starches like mashed potatoesand turkey dressing.
3. Choose white-meat turkey and avoideating the skin.
4. Void gravy.5. Limit yourself to small helpings of
heavily sweetened yams and cranberrysauces.
6. Use restraint when dinner rolls arepassed around. Buttered rolls may melt inyour mouth, but they're full of calories, soeat only one.
7. Try sampling in moderation themany foods that you have looked forwardto. And consider bringing somethinghealthy to the dinner, like a side dish that'slow in fat, sugar and salt.
8. Eat slowly. By eating Thanksgivingdinner slowly, your body has time to regis-ter when it is full so that you don't con-sume too much.
9. At dessert time, try to choose thelightest options. Pick pumpkin over pecanpie, for example, and avoid 200 calories inthe process. Or just eat half a piece of pie,and pass on whipped toppings and icecream. As dinner winds down over coffee,avoid any plates of additional sweets thatmay be sitting on the table.
10. After Thanksgiving dinner, take awalk with your friends or family. Fifteenminutes of walking will get your blood cir-culating and can burn off 100 calories,says Susie Kania, exercise physiologist atCooper Wellness.
Light Sweet Potato PuddingAgave syrup is a natural sweetener that
doesn't raise your blood glucose levels.This is a great dessert for everyone, but isparticular good for diabetics.
1 1/3 cups mashed, cooked sweet
potato
1/2 cup agave syrup
2 teaspoons ground cinnamon
2 teaspoons grated orange zest
1 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/3 cup egg substitute
16 ounces evaporated skim milk
1/2 cup light whipped topping,
optional
1/2 cup chopped, toasted wal-
nuts, optional
Cooking spray
1. Preheat oven to 375 F.2. In a large bowl, combine sweet pota-
to, syrup, cinnamon, orange zest, salt, gin-ger, cloves, egg substitute and milk. Beatat medium speed with a mixer untilsmooth. Add milk; mix well.
3. Pour mixture into a 2-quart casserolecoated with cooking spray. Bake at 375 Ffor 1 hour or until a knife inserted near thecenter comes out clean. (For individualservings, pour 2/3 cup potato mixture intoeach of 4 custard cups. Bake at 375 F for40 minutes or until a knife inserted nearthe center comes out clean.)
4. Let pudding cool. Cover and chill for2 hours. Serve with a tablespoon ofwhipped topping and sprinkle with wal-nuts, if desired. Makes 4 servings (2/3 cupper serving, 88 calories).

Pumpkins might sound "so yesterday"with Halloween long gone and the excite-ment of Thanksgiving Day on the way. Butnever underestimate the beauty pumpkinscan deliver when transformed into a glis-tening golden shine with a little metallicpaint and creativity. Once they are hol-lowed out by the kids, they make dandyvases for fresh flowers from your grocerystore. Keep the kids busy by letting themarrange the blooms in the gilded pumpkinsjust in time to set on the table for stunning,yet inexpensive, Thanksgiving center-pieces.
I discovered that pumpkins are stillabundant and cheap this month at farms,garden centers and grocery stores. Thinkabout gilding mini pumpkins too, whichyou can find with the gourds and squash inthe produce section of your grocery store.Transform them into cute "place card"
bouquets for each guest or into alluringvotive candleholders that will add a goldensparkle on your table between the turkey,cranberries and the pies.
Here are three simple steps for makinga pumpkin arrangement:
1. On a newspaper-covered surface, anadult should cut off the top of a medium-size, firm and smooth pumpkin, creatingan opening that is 4-5 inches in diameter.Let the kids scoop out the pulp and seedswith their hands and a spoon. Wash theoutside with a damp cloth. Let dry.
2. On a newspaper-covered surface out-side, or in a well-ventilated garage, anadult should spray the exterior of thepumpkin with gold metallic spray paintavailable at craft and hardware stores. Letdry.
3. Line the inside of the pumpkin withfoil or plastic wrap. Place a chunk of dampflorist foam trimmed to fit snuggly in the
hollowed-out portion. The kids may poketrimmed stems of flowers, leaves andtwigs into the foam, one at a time, until thearrangement is complete. Set it on a water-proof plate. Add water to the foam as nec-essary to keep flowers fresh.
Extra mini-pumpkin ideas: --Make golden mini-pumpkin arrange-
ments following the directions above. Forplace cards, glue small cards with guests'
names or photos printed on them totrimmed wooden skewers. Tuck into thearrangements.
--For golden pumpkin votive candle-holders, set a tea light and its metal casinginside the cavity or use a battery-operatedtea light.
An adult should always be presentwhen burning candles.
Note: Acrylic paint in a metallic goldshade also works if you prefer not to usespray paint, although it takes longer to dryand may require several coats.

Paint pumpkins gold for Thanksgiving table
Healthy Makeover Pumpkin BreadTreat family and friends to our slimmed-down quick
bread. Gone are the traditional version's 3 grams of satu-rated fat and all the cholesterol (thanks to egg whites anda blend of low-fat yogurt and canola oil). No one will sus-pect you've tinkered - a slice is that good!
1 cup (packed) light brown sugar
2 large egg whites
1 cup pure pumpkin (not pumpkin pie mix)
1/4 cup canola oil
1/3 cup low-fat plain yogurt
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup whole wheat flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/2 teaspoon salt
1. Preheat oven to 350 F. Spray 8 1/2 by 4 1/2-inchmetal loaf pan with nonstick cooking spray with flour.
2. In large bowl, with wire whisk, combine brownsugar and egg whites. Add pumpkin, oil, yogurt and vanil-la extract; stir to combine.
3. In medium bowl, combine all-purpose flour, whole-
wheat flour, baking powder, cinnamon, nutmeg, bakingsoda and salt. Add flour mixture to pumpkin mixture; stiruntil just combined. Do not overmix.
4. Pour batter into prepared pan. Bake 45 to 50 minutesor until toothpick inserted in center of loaf comes outclean. Cool in pan 10 minutes. Invert pumpkin bread ontowire rack; cool completely. Makes 1 loaf, yielding 16servings.
•Each serving: About 140 calories, 4g total fat (0g sat-urated), 0mg cholesterol, 165mg sodium, 25g total carbo-hydrate, 1g dietary fiber, 2g protein.
Pumpkin Pudding Pie1 envelope unflavored gelatin
1 1/4 cups milk
1 cup flaked coconut
3/4 cup graham-cracker crumbs
4 tablespoons (1/2 stick) margarine or butter,
softened
1 1/2 cups heavy or whipping cream
1 package (for 4 servings) instant vanilla pud-
ding and pie filling
15 ounces (1/2 a 30-ounce can, or 1 1/2 cups)
pumpkin-pie mix (not solid-pack pumpkin)
1. In small saucepan, sprinkle gelatin evenly over 1/2
cup milk; let stand 1 minute to soften gelatin. Cook overlow heat, stirring constantly, until gelatin dissolves com-pletely. Set aside at room temperature to cool (do notrefrigerate).
2. Preheat oven to 375 F. Spread coconut in 13 by 9-inch metal baking pan; bake until lightly browned, about10 minutes, stirring occasionally.
3. Reserve 1 tablespoon toasted coconut for garnish. In9-inch pie plate, with hand, mix remaining toastedcoconut with graham-cracker crumbs and margarine orbutter. Press mixture firmly onto bottom and up side ofpie plate just to rim.
4. In small bowl, with mixer at medium speed, beat 1cup heavy or whipping cream until stiff peaks form. Inmedium bowl, prepare instant pudding as label directs, butuse only 3/4 cup milk. With wire whisk, beat in pumpkin-pie mix and cooled gelatin mixture. Fold in whippedcream. Spoon pumpkin mixture into piecrust. Refrigerateuntil set, about 3 hours.

The steps to protect your personal information from identityfraud are very simple: Keep spyware off your computer. Checkyour credit statements immediately when they arrive, or if youhave good computer anti-spyware software, check your onlinebills more frequently. Use only your first initials and last nameon your bank checks. Stop your mail while you're away. Use ashredder for trash that has your name on it. Check your creditreports to make sure there are no errors. Take mail to the postoffice instead of leaving it outside your home. Don't put yourSocial Security number on a job application.
Still, even after taking all the safety steps, many people optto purchase an identity-theft protection service. These services,however, do not completely free you from risk.
In considering a protection service, you need to know:What services does the company provide? Some will moni-
tor your personal information and see when it's being used toapply for loans, credit cards or turning on utilities. Others willhave your name taken off pre-approved credit offers. Somewill help you get all your credit cards replaced, should there bea lost or stolen wallet. Others promise to protect you in theevent information is stolen from your driver's license number,public records and insurance records.
How does it monitor your accounts? How are you notifiedif a breach in your security is detected?
How much does the service cost? An average cost for theseservices is generally in the neighborhood of $10 per month,although certain add-on features can raise that price.

The Legend of Rudolphthe Red-Nosed Reindeer
Montgomery Ward, the Chicago-based depart-ment-store chain, had been buying and giving awaychildren's coloring books as Christmas gifts for theircustomers for years, but in 1939 decided to create itsown book to save money. The retailer gave theassignment to one of its employees, 34-year oldcopywriter Robert L. May, who penned the story of"Rudolph the Red-Nosed Reindeer." Some 2.4 mil-lion copies were handed out that year.
May drew on the story "The Ugly Duckling" andalso on his own background (he was often taunted asa child for being shy, small and frail) to create thestory of the misfit reindeer. Several names were con-sidered, including Rollo (too cheerful) and Reginald(too British), before May settled on Rudolph as hisreindeer's name. Concerns about Rudolph's red nose(an image associated with drunkards) also were over-come.
Written as a poem in the meter of "'Twas theNight Before Christmas," May tested the story on his4-year old daughter Barbara, who loved it.
At about the same time that May was creatingRudolph, his wife died, leaving him deeply in debtwith medical bills. However, he was able to persuadeMontgomery Ward's corporate president, SewellAvery, to turn the copyright over to him in January1947, ensuring May's financial security. He quit hiscopywriting job in 1951 but would later return toMontgomery Ward, where he worked until his retire-ment in 1971. May died in 1976.
"Rudolph the Red-Nosed Reindeer" was printedcommercially in 1947, and in 1948 a nine-minute
cartoon of thestory wasshown in the-aters. When May'sbrother-in-law,songwriter JohnnyMarks, wrote the lyricsand melody for the song"Rudolph the Red-NosedReindeer," the Rudolphphenomenon was born.The song was recorded byGene Autry in 1949 andshot to No. 1 on the charts, selling 2 million copiesthat year. "Rudolph the Red-Nosed Reindeer" wouldgo on to become one of the best-selling Christmassongs of all time, second only to Bing Crosby's"White Christmas."
May's story of Rudolph differed from the one weknow today, made famous by Johnny Marks' songand the 1964 television special narrated by Burl Ives.In the original story, Rudolph was not related toSanta's reindeer and did not live at the North Pole,but in an ordinary reindeer village. He was well-adjusted and not regarded by his parents as a shame-ful embarrassment. He was discovered when Santanoticed a red glow coming from Rudolph's room ashe delivered presents to Rudolph's house. Worriedthat a thickening fog would keep him from complet-ing his Christmas Eve rounds, Santa tapped Rudolphto lead his reindeer team.

1 cup pitted prunes, snugly packed
5 teaspoons creamy gorgonzola or other blue cheese
1/4 teaspoon pepper
1. Place bacon between double layer of paper towels on microwave-safe plate. Microwave on High 3 to 4minutes or until crisp. Break bacon strips into 1-inch pieces.
2. Stuff each prune with 1/4 teaspoon creamy gorgonzola or other blue cheese. Sprinkle pepper over alland top with bacon. Makes about 20 appetizers.

Holiday weight gain isn't inevitableThe holiday season is a time for fes-
tive gatherings with family and friends.It's also the time of year when we seetempting treats everywhere we turn.
"Weight gained during the holidaysoften comes from eating foods that arehigh in sugar and fat," says Joan Daniels,R.D., a dietitian at the University ofMichigan. "The good news is that youcan still enjoy these special occasions aslong as you use a bit of restraint andkeep yourself from indulging too much."
Daniels and fellow Cancer Center die-titian Nancy Burke, R.D., offer the fol-lowing tips to help you enjoy the holidayseason without packing on the pounds.
•Don't go hungry to a holiday event.Eat a snack or light meal before youleave. Foods high in protein, like cottagecheese, nuts or chicken, help you eat lesslater. Fasting ahead of time, leaving roomfor a big meal or planning extra trips tothe buffet table often leads to overeating.
•Eat smaller portions of food. This isespecially important at a buffet, whereyou may want to try everything. Instead,choose the items you want to try themost, and eat a small portion of each.
•Pace, don't race. Many times, peopleeat so fast that their stomachs don't haveenough time to register that they're full.
Eat slowly, savoring each bite and enjoy-ing the taste of the food; chances are youwill eat less and not overeat.
•Limit fast food. Don't let a hecticholiday schedule force you to rely on eat-ing fast food often. Prepare and freezequick, healthy meals ahead of time tostay out of the fast-food trap.
•Offer to bring a low-calorie dish toholiday parties. Your host will appreciateit, and you'll know that at least onehealthy item will be on hand.
•Be realistic. Don't try to diet duringthe holidays. Set a goal to maintain yourpresent weight.
•Watch what you drink during the hol-idays. Regular eggnogs and other drinksmade with syrups contain a high amountof calories. Try flavored, calorie-freewaters, sparkling apple or grape juice,low-sodium vegetable juices or hot ciderinstead. Limit the amount of alcohol youdrink.
•Get physical. Look for ways to incor-porate some daily physical activity dur-ing the holidays. Enjoy a brisk walk,either outside or at an indoor mall.Exercise also can be a huge stress reliev-er.
