Words to GROW by!The tomato is the most popular vegetable grown in the Louisiana home garden. Tomatoes require little space when staked and tied and are capable of producing many pounds of usable fruit per plant. Staking also reduces disease problems.There are hundreds of varieties from which to choose, but all will not produce well under Louisiana’s growing conditions. So choose varieties that have a proven performance record in this area. Recommended varieties for our area are: Floramerica, Mountain Pride, Better Boy, Jet Star, Supersonic B and Fantastic.A promising new hybrid is Bingo. For cherry tomatoes, choose the new Chelsea or Sweet 100, Large Red Cherry, Cherry Grande or Small Fry. In planting tomatoes in the home garden, select a site that will receive full sunlight all day, if possible. If this is not possible, plant them where they will receive at least six to seven hours of sunlight each day. Tomatoes grown in too shady a location will produce weak plants with few fruit.Tomato plants prefer a fertile, well-drained soil that is high in organic matter. Fertilize soils of low to medium fertility with 8 to 10 pounds of a complete fertilizer, such as 8-24-24, per 100 feet of row. You may add such organic matter as compost to the soil prior to planting. Plant on high rows (8-10 inches) to improve the soil drainage.

Transplant tomatoes in the garden after the danger of frost is over. If tomato plants are set out and a frost is likely, cover the plants with hot caps, paper sacks, boxes, etc., to help prevent frost damage. Space tomato plants 18-24 inches apart on rows 3 to 3 ½ feet apart. Set plants only slightly deeper than they were growing in the containers. The less the roots are disturbed when transplanting, the less setback the plants will experience.Black plastic mulch can be very beneficial in early tomato production. The plastic warms up the cool spring soil, resulting in earlier yields. It also helps control weeds and conserve soil moisture and fertilizer. Black plastic may also help to reduce fruit rot by preventing the fruit from touching the soil or the soil from splashing up on the fruit.Stake tomato plants after the first flower cluster is formed by placing the stake on the opposite side of the stem from the flower cluster. This will keep the fruit from being jammed against the stakes, since almost all the flower clusters will be formed on the same side of the stem. Tie the plant to the stake with a soft string or strip of cloth. Pass the string under a leaf stem to give more support. Wire cages are also popular support systems for home gardens. Prune the plants to one or two main stems by pinching out the suckers that form at the leaf base. Prune to about 2 feet and then stop.

WHERE HAVE THE CREOLES GONE? When days become longer and spring is near, our fondest thoughts are of the delicious taste of the “Creole Tomatoes” that will be appearing on the market in a few months. Often local backyard growers go to local feed stores demanding “Creole” tomato plants to set out in their own gardens. However, they are often told that no “Creole” tomato variety plants are available, but are offered a substitute instead. Yet, “Creole” tomatoes are offered for sale at every corner in spring. What gives? In 1969 a new variety of tomato “The Creole” was introduced. It soon became a favorite among locals for its yield, size and taste. The term “Creole Tomato” became interchangeable with quality and flavor. As a result the parishes growing tomatoes adopted the term “Creole Tomato” and all tomatoes became identified with it. Not to reduce confusion among the buying public, all varieties of tomatoes grown along the river and receiving the benefits of our warm climate and fertile soils are classified as “Creole” tomatoes. The flavor of fresh picked, vine-ripened locally grown tomatoes is of such a unique statue that all local tomato lovers are awaiting the cry of “Creole Tomatoes”. Today the variety Creole is no longer commercially grown. The name Creole remains and is used to describe vine ripened large tomatoes grown in the parishes along the lower Mississippi River. The tomato industry’s own scientists admit there is little comparison between a healthy tomato that ripens on the plant under optimal conditions and one that is picked green and hard, and then refrigerated, trucked and gassed with ethylene. A tomato plucked green and hard from the vine at the right stage will ripen. Some tomato scientists suspect that the prematurely picked tomato may be cut off from additional sugars and from plant hormones that help initiate ripening. When you smell a whole red tomato it has very little odor. But cut it open and that’s when you get the aroma. That’s when the tomato breaks down the fatty acids and releases the volatile compounds.

A tomato is alive. Even plucked from the plant, cut off from its support system, the tomato remains a living, breathing, metabolizing entity. Ripening is not rotting. Even sitting on the kitchen counter, green and hard as an apple, the tomato’s cellular machinery whirls away with purpose. Gases are exchanged with the outside world. In fact, the tomato’s breathing actually becomes heavier during ripening. The journey to ripeness begins weeks before the fruit turns red. A young, green tomato is fed by the plant’s leaves, where the engines of photosynthesis grind away. The leaves make the sugar sucrose, which the immature fruit converts to starch and stores. As the fruit matures, it breaks down the starch molecules, turning them into the sugars fructose and glucose. It is the sugar, in concert with citric acid and malic acid that gives the best tomatoes their balance of sweet and tart. An under-ripe tomato is very acidic. As it ripens, the acids decrease. Growers wait until the tomatoes become “breakers”, just beginning to turn orange-pink. The fruit is picked early because hard tomatoes stand up better to mass picking, packing and shipping. Tomatoes lest you forget, are a fruit and chilling injury can occur. Refrigeration will make your tomatoes taste flat and mealy, like ordinary winter tomatoes. If cold stored tomatoes don’t ripen properly they may develop off flavors. Refrigeration will spoil the flavor....ruin the taste. The best tomato flavor develops between 60-75 degrees. If the tomatoes are not a rich red color, experts advise, to simply place tomatoes in your fruit bowl and set them on a table or shelf at normal temperature or allow them to ripen on the kitchen counter, away from direct sunlight. Remember, the redder they get, the better they will taste. Furthermore, tomatoes should sit and ripen stem side up. THAT’S THE WAY THE GRAHAM (CRACKER) CRUMBLES

by Tony OnellionThe announcement of the trade of Jimmy Graham to the Seattle Seahawks for starting center Max Unger was a masterful stroke by the Saints last week. In one fell swoop, the Saints bolstered a weak offensive line position with a proven All Pro while ridding themselves of the prima donna who wore number 80.Remember a few years ago when the Who Dat Nation was all ga-ga over this guy? Hundreds of nicknames were offered up to canonize this former basketball athlete from the University of Miami. He was, according to most of my Saint friends, the best tight end in the business - and maybe ever.

Because he caught as many passes as Ron Gronkowski, the real tight end playing for the New England Patriots. Once. All those nicknames…all that Obama-like giddy excitement…all a waste of time. Even some NFL experts were fooled by the hype. No more.

Graham’s nickname is and always should have been, “Graham Cracker.” Remember having graham crackers as a kid? You’d dip them in milk and they’d get real soft and dissolve. Then you’d have a real sweet hybrid of a drink and a dessert. But you’d never put your graham cracker where it could get broken or crumbly. No, Graham has never been anything close to a real tough cookie, like Gronkowski… or Vernon Davis…or Tony Gonzales. There are a few nuts in the Graham cracker….nuts like, ‘I’m the best wide receiver in the business.” Jimmy, they’re more likely to name a tackling dummy after you than anything else. Your deplorable attitude and season performance last year was a wrap for you in the Big Easy. And now you’re in the land of laptops and latte’, a real sugary addition to a team that believes in what they call “The Legion of Boom.” Play like you did the past two years, pretty boy, and you’ll hear The Legion of Boos from Seattle fans who are accustomed to seeing real football players take the field in the Northwest.

As a 49er fan, Jimmy, I love to tell you that you get the chance twice a year to have your bell rung by the likes of Eric Reid, and Navarro Bowman. These are real football players and they don’t cotton well to a player of your ilk. And do you really think you’re the viable alternative to a short and goal in a critical play in a big game? Marshawn Lynch is the viable alternative. Or a quarterback rollout from Russell Wilson. Oh, it would be such a delicious moment to watch you run your all-time wide receiver route on the one-yard line if the Seahawks returned to the Super Bowl this year! I’m sure all your lifelong fans would just be overcome with a case of the vapors to see that magnificent specimen body of yours make its Hall of Fame moves in the back of the end zone. Once you got off your block, that is. What’s that? You don’t block? You don’t want to get hurt or sacrifice your body for the team? Wow, will Richard Sherman love you! Not to mention the rest of the defense. This isn’t touch football, Jimmy. As a Hurricane, you should have been well immersed in the culture of violence on the field. I guess that doesn’t extend to the shooting forward types like you. Power forward? Lebron James would be a power forward. Watch Lebron and learn, Jimmy. That’s what a real all-star athlete does and how they think. Now you get to thrive under the mystic powers of one Pete Carroll, who will cut you more slack than Sean Payton because he fancies himself a child of the 60’s. But even the coach with the dumbest play call in NFL football history won’t put up with your crap for very long. See, the Seahawks may play dirty on defense from time to time and they may not have a true wide receiver. But your presence doesn’t change either situation.

Graham crackers are for kids. They’re not nasty or tough and people move on from them as they become more mature in their tastes and judgement. Just like the Saints did on March 10th, 2015. This is a positive move for the rest of the NFC West, who watched Seattle implode with their last wide receiver experiment, cutting Percy Harvin. The Jimmy Graham experiment will probably wind up the same way. Say hello to Ricky Williams on your way down, Jimmy.

Contrast Jimmy Graham’s trade with the tearful retirement of one Patrick Willis, a linebacker in the Dick Butkus, Lawrence Taylor and Ray Lewis (without off-field ramifications) mold. All Willis did was provide a rallying point for a rebuilding 49er team in the early 2000’s with his “bring it” style of hitting and ability to stay on the field and defend against virtually any scheme. Willis’s toes and feet were in such bad shape that the decision to leave was one of future health and mobility issues. Willis has a legitimate shot at the Pro Football Hall of Fame. Mr. Graham has a declining, outside chance at the same. Unless there is a sea(Hawks) change in his attitude and fortitude, Jimmy Graham may wind up like so many other talented athletes…a fading memory and a life of many regrets. It’s up to you, Jimmy Graham. Will you remain a Little Debbie snack or turn into hardtack, fit for a British sailor or a pirate?

Deadly Advice

A DEADLY TURN - One fisherman we see on a regular basis here in Slidell is Captain

Dudley Vandenborre, the designer of the “Deadly Dudley” lure series and fisherman

emeritus. Dudley sends much of his product to his customers from my wife’s shipping

and mailing center in the south area of the city and through the years we have come to

know him and his family. Dudley recently had open heart surgery and missed most of

the earlier spring speck runs in the area. We’ve been actively working with Dudley to

grace our reports with his fishing knowledge since last year but pending media projects

and other matters had delayed things.

Until now. Dudley Vandenborre will begin a fishing feature this issue entitled “DEADLY

ADVICE”. Dudley will take your questions about fishing techniques, tackle and fishing

conditions and answer them. If you have a fishing question, send it to DEADLY

He will answer it in the next column or in a future column, depending on available
