Pomegranate Apple and ginger slice
Ingredients:• 200ml Pimms No. 1 Cup*• 200ml pomegranate juice*• Ice cubes• 1 cup (250ml) soda water• 1 cup (250ml) lem-onade• 1/4 telegraph cucum-ber, halved cut into long, thin slices

• 3 Coles Brand free range eggs
• 1 cup self-raising flour
• 1 teaspoon Coles Brand ground cinnamon
• 1 1/2 teaspoons ground ginger
• 1 grated lemon zest
• 3 jazz apples, quartered, cored
• 1 tablespoon Demerara sugar
Step 1: PlacePimms,juiceandicecubesintoajug. Fillwithsodawaterandlemonade.Stirinthe cucumber,orangeandmint.Servegarnished withborage,ifusing.
Step 1: Preheatovento180Cor160Cfan-forced. Greaseandlinebaseandsidesofa19cmx

Step 2:Usinganelectricmixer,beatbutterandbrown
sugaruntillightandfluffy.Addeggs,oneata
time,beatingwellaftereachaddition.Sift
togetherflourandspices.Foldintobutter
mixturewithlemonzest,untilcombined.Peel
andchop1appleandmixintobatter.
