Tannin Based Wood Adhesive T annin is an excellent renewable resource for

replacing petroleum-derived phenoliccompounds. The major wood species from whichit can be obtained are mimosa, quebracho andradiata pine. It is mainly concentrated in the innerlayer of the bark and has been utilized in theadhesives industry in Africa, South America andOceania. In particular, tannin-based woodadhesives have been used industrially for quite along time in several countries for the manufactureof exterior wood panels. There are two differenttypes of tannin: wattle tannin composed of resorcinol A-rings and pine tannin composed of phloroglucinol A-rings with catechol or pyrogallolB-rings. The free C6 or C8 sites on the A-ringreact with formaldehyde, due to their strongnucleophilicity, to form the adhesive. Thephenolic nuclei in tannins also react withformaldehyde. This high reactivity of tanninstowards formaldehyde is the result of their A-ringphloroglucinolic or resorcinolic nuclei, whichhaved 10- to 50-times higher rate of reaction thanthe reaction of phenol with formaldehyde.Because of this characteristic, less freeformaldehyde emission occurs than from other wood adhesives such as phenol– formaldehyde,urea–formaldehyde, etc. Tannins are an important ingredient in the

process of tanning leather. Some enzymes are used commercially, forexample, in the synthesis of antibiotics. Somehousehold products use enzymes to speed upchemical reactions: enzymes in biological washingpowders break down protein, starch or fat stains onclothes, and enzymes in meat tenderizer break downproteins into smaller molecules, making the meateasier to chew. Enzymes are generally globularproteins, acting alone or in larger complexes. Like allproteins, enzymes are linear chains of amino acidsthat fold to produce a three-dimensional structure. The sequence of the amino acids specifies thestructure which in turn determines the catalyticactivity of the enzyme.  water. Microorganisms thrive when there is water, spoiling the food and altering its taste.Removing water keeps food from spoiling for longperiods of time. Also removing water makes thefood lighter, making it easy to package andtransport. Yet, removing water, must not alterthe composition of the food. Its basic structureand composition of its nutrients must remainintact.Freeze-drying, technically known as

Lyophilization, is a process of sublimation where water molecules in a solid phase are di rect ly converted to vapor phase. Since Lyophilization is themost complex and expensive form of dehydration, itsuse is usually restricted to delicate and heat-sensitivehigh value materials.

Over the period it has gained importance as it is

found to be a process that is least damaging to variousproduct characteristics like colour, aroma, textureshape, nutritional content and size etc. It is thusparticularly suitable for delicate, heat-sensitive andhigh value materials. Freeze-dried products oncesealed to prevent the reabsorption of moisture can

be stored at room temperature without refrigeration,and be protected against spoilage for many years.Freeze-dried products can be rehydrated(reconstituted) quickly and easily and become as freshas they were when freeze dried. Since Freeze Driedproducts are light in weight they have an addedbenefit of easy handling while usage andtransportation.

Freeze drying is one such method. The scientificprinciple in freeze-drying is sublimation, theconversion of a solid (ice) directly into its gaseousform (water vapour). A typical freeze-drying machineconsists of three major components - a freeze-dryingchamber, a freezing coil connected to a refrigeratorcompressor, and a vacuum pump.
