    the pace at which anticipation and participation has grown in the build up has been extraordinary to see. When we started putting the May edition together, we had the main event facts in front of us to work with. But as the days went on, more and more news and events started coming in and before you knew it our feature had grown to four pages and our cover had gone Giro pink! And were not the only ones. Look around your local community

    now and youll see that there arent many shops that havent caught the Giro bug. We have the lowdown on everything inside and we hope to see you there along the route going absolutely boogaloo for this magnificent spectacle.     Judith Baker has raised a fantastic 2,356 for Diabetes UK. Judith raised 750 when she took part in RunHer in November and recently raised 1,606 as a result of a table quiz held at Knock Golf Club. Further donations has brought the current total to 2,500. A fantastic achievement and huge congratulations.

    Young Womens Champions for Change Project - Catherine Morgan is a young womens development worker with YouthAction Northern Ireland. She is available to work free of charge with groups of young women in East Belfast aged between 14 to 25yrs. The project works with young women to develop their skills in leadership, equality, inclusion and peace building. Accredited programmes are also available.     Castlereagh Hills Golf Course, on the Upper Braniel Road is offering all golfing enthusiasts 8 to over 50s, the chance to pick up golf. Organised and instructed by the experienced resident PGA Golf Professional, the group coaching lessons are aimed at 8 17 year olds, men and ladies and the over 50s. Summer Golf School places are available now. You can also reg-ister for the next set of lessons for ladies commencing on the 28th August 25th September. The mens coaching lessons will start every Thursday from the 8th to 29th May from 7pm - 8pm. Get the chance to test your skills at the competition fun night on Thursday 5th June. Group coaching lessons for Over 50s commence every Tuesday from 2nd September to 23rd Septem-ber from 10am 11am. A fun competition has been organised for Tuesday 30th September so that you can put what you have practised into play!     Diabetes UK Northern Ireland is urging local people to sign up for its Walk for Diabetes event at Stormont on Sunday 8 June at 2pm. This Walk for Diabetes will also be kick starting Diabetes Week 2014. A Walk for Diabetes is a perfect opportunity to gather friends and family to enjoy light activity and good company as well as help raise awareness about diabetes. The Stormont Walk for Diabetes will start at 2pm on Sunday 8 June and the route is only 2 miles long. This walk is suitable for wheelchairs and push-chairs.     The Giro dItalia is a long distance, multi-stage bicycle road race for professional cyclists. It is held primarily in Italy, over a three-week period in May and June each year.

    The Giro is one of the European cycling calendars three Grand Tours, along with the Tour de France and Vuelta a Espaa.

    The first Giro dItalia was held in 1909. 2014 will mark the 97th event it was suspended twice, during the two World Wars.

    The 1909 race had eight stages; the 2014 race will have 21, over 3,450km.

    The route of the Giro varies each year, but the most difficult stages are usually the Alpine and Apennine mountain passes. This year the highest point or Cima Coppi, of the race will be the Passo di Stelvio (2,758m) in the Eastern Alps.

    Since 1931, the overall winner of the Giro wears the Maglia Rosa (pink jersey). Pink is the colour of the races founding sponsor, Italys La Gazzetta della Sport newspaper. Last years winner was Italian Vincenzo Nibali.

  • When theres bright sunlight you could be excused for leaving your flashgun at home, but often this is one of the best times to use flash. Direct summer sun is harsh and unflattering and creates shadows across the subject. Using fill-in flash can reduce or remove this by filling the deficient areas with light. Fill-in flash is also useful to illuminate your subject if it is backlit.Almost all digital cameras have built in flash, and the ability to over-ride auto flash by switching it on even when theres enough light to shoot without it. With SLRs you can use a separate flashgun this gives you more light, and the ability to bounce the light for more diffused illumination. You can avoid the harshness of the sun altogether by shooting in the shade try fill in flash here to brighten the photo up and avoid unwanted shadows. Many cameras have what is a very useful

    dual shoot mode which will take the same picture twice, both with and without the flash.Once youve got the lighting right, youll be looking for the perfect portrait. My tip is to get the camera level with the subject (whether its the kids or the dog) to give a more natural composition. Focus on the eyes for maximum impact. Photographing silhouettes can be a great way of conveying mystery, drama and emotion in your pictures and the power of the summer sun provides the presents the perfect opportunity to try them. To do this you need to position the subject in front of the light source (most likely the sun or sky) and take your light-meter reading off the background rather than the subject. To do this with a compact camera, half press the shutter button with the bright background in the centre of the shot then, with the button still depressed

    recompose your shot, then press fully to take the photo. Subjects with a strong distinctive shape make the best silhouettes, such as trees and people in interesting poses. If youre on holiday its very important to make sure your batteries are charged. Digital cameras are very hard on batteries, and many are not suited to alkaline batteries. Battery failure can cause memory card damage or lass of images. When youre packing always make room for your charger. Keep a spare memory card in your camera case too. Theres nothing worse than running out of space when youre away. Memory cards are comparatively much cheaper than film, and of course, theyre re-usable!Now you should be all set to capture all those special memories, but dont forget, the only truly permanent way to keep an image is in print To keep it, print it!

  • F irstly, lets meet the two brains behind the operation. Brain one: Im Matthew Carson and I have just fi nished my term as Member of Youth Parliament for East Belfast. Thats really where my involvement in the project started and part of my motivation for why I got involved. And brain number two: My name is Jordan Earle and Im a freelance designer. I attended the East Belfast Speaks Out conference with Matthew, where we heard from several young people who raised issues around fi nding things to do in East Belfast. We decided to do something about this issue, and fi nd a sensible solution. I oversaw the primary design and development of the application, and co-ordinated a team of young developers to aid the development.YouthEast is an App currently only available for iPhone and iPod touch (though theyre hoping to branch out in the near future)

    that sorts the youth services in East Belfast into four categories; general youth organisations, mental health support, leisure centres and faith groups. It contains a list and a map allowing users to see visually where these organisations are. The app contains contact details, and other details a young person may want to know about the organisation.Jordan led the development and design teams for the application, pulling together a team of young people to help build the actual app. The fi rst time we submitted the app, says Matthew, it was rejected, setting us back a few weeks. This was due to a small bug that Apple had found in it. But fi nally seeing it appear on the App Store after that initial rejection was a feeling of relief and excitement when we saw this idea we had back in March 2013 fi nally become a real product, it was something very special.The duos commitment to this project is providing a much needed channel of communication with the local people, connecting them to these multi-faceted services available. I think theres a great value in our youth services in East Belfast, says Matthew. I think a lot of the time people dont realise how important they are, but theyre giving young people somewhere to go and something to do. Ultimately keeping them away from crime, keeping them away from antisocial behaviour that young people are so often accused of. And as Jordan explains, its easy for groups to get involved, If groups wish to get in touch, were currently using an email system to add submissions to the app database. In the coming weeks, we hope to launch a tool for youth workers in East Belfast to submit to the database via an admin panel.

    Two friends recently launched a fantastic new app called YouthEast which allows young people in East Belfast to nd and browse a wide collection of youth organisations, mental health support, leisure centres and faith groups. We caught up with Jordan Earle and Matthew Carson to get the lowdown on this innovative creation.

  • F irstly, lets meet the two brains behind the operation. Brain one: Im Matthew Carson and I have just fi nished my term as Member of Youth Parliament for East Belfast. Thats really where my involvement in the project started and part of my motivation for why I got involved. And brain number two: My name is Jordan Earle and Im a freelance designer. I attended the East Belfast Speaks Out conference with Matthew, where we heard from several young people who raised issues around fi nding things to do in East Belfast. We decided to do something about this issue, and fi nd a sensible solution. I oversaw the primary design and development of the application, and co-ordinated a team of young developers to aid the development.YouthEast is an App currently only available for iPhone and iPod touch (though theyre hoping to branch out in the near future)

    that sorts the youth services in East Belfast into four categories; general youth organisations, mental health support, leisure centres and faith groups. It contains a list and a map allowing users to see visually where these organisations are. The app contains contact details, and other details a young person may want to know about the organisation.Jordan led the development and design teams for the application, pulling together a team of young people to help build the actual app. The fi rst time we submitted the app, says Matthew, it was rejected, setting us back a few weeks. This was due to a small bug that Apple had found in it. But fi nally seeing it appear on the App Store after that initial rejection was a feeling of relief and excitement when we saw this idea we had back in March 2013 fi nally become a real product, it was something very special.The duos commitment to this project is providing a much needed channel of communication with the local people, connecting them to these multi-faceted services available. I think theres a great value in our youth services in East Belfast, says Matthew. I think a lot of the time people dont realise how important they are, but theyre giving young people somewhere to go and something to do. Ultimately keeping them away from crime, keeping them away from antisocial behaviour that young people are so often accused of. And as Jordan explains, its easy for groups to get involved, If groups wish to get in touch, were currently using an email system to add submissions to the app database.     MORITOAs the little sister of Moro, Morito has been serving delicious and innovative tapas and mezze in the heart of Londons Exmouth Market for over three years. Sam and Sam Clarks little gem of a tapas bar packs a big culinary punch, attracting critical acclaim and constant queues. Now, with the publication of the cookbook of this hugely successful restaurant, Moritos small plates can be cooked, eaten and shared at home.

    CHICHARRONES DE CDIZ

    Chicharrones are a meatier and classier variation of pork scratchings. ThisCdiz version is made by slow-roasting belly of pork, chopping it up andserving it with lots of freshly squeezed lemon juice and ground cumin.

    Serves 4-62 garlic cloves, crushed to a paste with 1 teaspoon salt1 tablespoon ground fennel seeds1kg piece of organic or free-range pork belly, skin scored2 teaspoons fine sea salt medium onion, peeled lemon, cut into wedges,

    TO FINISHjuice of 2 lemons3 teaspoons cumin seeds, lightly toasted and roughly ground

    The following is the Moro recipe for roast pork belly, but if you have a tried and trusted method, feel free to use your own.Preheat the oven to 230C/450F/Gas 8. Mix the garlic with the fennel seeds and rub it over the flesh side of the pork belly. Turn the meat over and dry the skin thoroughly a hair dryer works well. Generously sprinkle theskin with the salt and then leave for 20 minutes, then dust off the excess salt.Place the onion half in a roasting tin and put the pork belly on top to create a convex shape, which will help the crackling form. Place

    on the top shelf of the oven. It is important that the oven is really hot to start with, in order to blister the skin and create good crackling. Roast at this high heat for 20-30 minutes or until hard crackling has formed, then reduce the heat to 190C/375F/Gas 5. Pour 3 tablespoons of water into the bottom of the pan to prevent the meat juices burning. Continue to cook for about 2 hours oruntil the meat is soft and tender. Cool completely and remove any bones. Dice the pork into generous bite-sized cubes. Heat a frying pan until hot, but dont add any oil. Fry the cubes of pork until they have caramelised, crisped up and heated through. Transfer toa plate, squeeze over plenty of lemon juice and sprinkle liberally with the cumin. Add extra salt to taste if needed.

    Serves 6-82 medium potatoes (225-250g), peeled, sliced into quarterslengthways and cut into thin triangles8 tablespoons olive oil1 large Spanish onion or 2 medium onions, thinly sliced2 sprigs of thyme2 bay leaves, preferably fresh2 red bell peppers or 3 Romano peppers (page 280), deseededand sliced teaspoon sweet smoked Spanish paprika (page 280)8 organic or free-range eggs

    Toss the potatoes with a teaspoon of salt, transfer to a colander and leave to stand for 15 minutes. Set a large non-stick

    shaking the pan with the other hand to ensure it is evenly spread. Lower the heat and let the tortilla cook for 3-5 minutes. Using a spatula, gently check whether the underside of the tortilla is golden brown and the runny exposedside has formed a ring of cooked egg around the edge. Remove from the heat, rest for a minute, then take a plate about the same size as the pan and restit over the pan. Carefully invert the tortilla on to the plate. Return the pan to the heat. When hot, add the remaining 2 tablespoons of oil and gently slide the tortilla back into the pan to cook the other side. Lower the heat and tuck in the edges of the tortilla to neaten. Cook until golden brown underneath and firm to the touch, turning again if the tortilla is still runny in the middle. Remove from the heat and leave for a few minutes to settle, then turn the tortilla out on to a clean plate. Serve slightly warm or at room temperature.

    frying pan over a medium heatand add 4 tablespoons of the olive oil. When hot, add the onion, thyme, bay leaves and a pinch of salt and cook for 10 minutes, stirring occasionally, until the onion is soft and golden. Add the peppers and paprika and continueto cook for 10 minutes until the peppers start to soften. Now add the potatoes and cook for a further 15 minutes or until tender but not coloured, stirring every now and then. Remove from the heat and transfer the mixture toa dish, discarding any excess oil. Cool for 5 minutes.Crack the eggs into a large bowl and whisk lightly. Remove the thyme and bay leaves and fold the vegetable mixture into the eggs and check the seasoning. Wipe the frying pan clean and return it to a medium to high heat.When hot add 2 more tablespoons of oil and swirl it around the pan and up the sides to coat. As the oil begins to smoke, pour in the mixture, while gently

    Property prices in Northern Ireland continue to show strong

    growth with the anticipation of further increases throughout the

    rest of 2014. Prices for Northern Ireland for the end of 2013 show

    the recent rapid increase being achieved here. The average price

    of a Northern Ireland property was 102,725 up a staggering 10%

    in the last quarter of the year compared to quarter three, and

    an annual increase of 2.5% on the year previously. Century 21

    Belfast believes this shows the improving conditions for Northern

    Irelands property market and expects demand to improve
