A local party company is celebrating after clinching a place in the regional final to find the UK’s top children’s party company. Doodlebugs; run by Adventure Coach; Jeanette Rankin and Creative Guru; Tara Mullan beat off rivals from hundreds of other local businesses for a place in the competition run by Britain’s largest parenting site Netmums.com. Jeanette and Tara set up the social enterprise company in 2010 and work with numerous groups, organizations etc throughout Northern Ireland to ‘build a greater future one life at a time’. The national Netmums awards were set up to recognise the best firms in the growing children’s party market, which is now worth a whopping £750 million a year in the UK. George Best Belfast City Airport is celebrating after receiving three prominent awards in just a matter of weeks for its hugely successful community and employee initiatives. The airport has been named winner of the ‘Local Community Impact’ award at the annual Business in the Community ‘Impact Awards’, the winner of the ‘Employer of the Year’ award at the WorkForce Annual Training Awards and Highly Commended in ‘The Right Place to Work’ at the Irish News Workplace and Employment Awards. The success comes just months after the launch of the ‘George Best Belfast City Airport High Fliers Apprenticeship Scheme’, which offers young people in the greater Belfast area the chance to gain expertise and skills in a vast range of disciplines.

Tesco, the Foodbanks charity the Trussell Trust and food redistribution charity Fare-Share held the biggest ever food collection in the UK over the summer. The National Food Collection took place in Tesco stores to help provide much needed food for people in the area. Arnette Martin, Community Champion at Tesco Castlereagh said, ‘The event here was a real success due to our customers generosity, the total item in cash value was £1079 and Tesco then added 30% to our total which was excellent. The food collected was staying local which we love to see.’

World Suicide Prevention Day On Saturday 7 September SOS and EBCDA will have a stand at Connswater Shopping Centre from 10am to 2pm to raise awareness. They will also be joined by young people from the Belfast wide Hope 4 Youth group. On Tuesday 10 September SOS are holding a coffee morning at Willowfield Parish Church on the Woodstock Road from 10-12 Also on the 10 September from 4.30pm-7pm there is a free concert at City Hall with Pink, Katy Perry and Michael Buble tribute acts, face painting, craft stalls and lighting candles in remembrance of those lost to suicide.

Work on Phase 1 of the £35m Connswater Community Greenway (CCG) project started in 2013 with a focus on Orangefield and Victoria Parks. As part of Phase 1 plans have been unveiled for a new footbridge in Victoria Park which will connect the park to Airport Road. Read about all the plans at www.communitygreenway.co.uk. In July, CCG asked the public to put forward ideas to Name the Bridge. After a fantastic response, a representative panel of judges has narrowed it down to five.1. Cranes Bridge: You can view the iconic Harland and Wolff cranes, Samson and Goliath from the new bridge as well as the wildlife cranes. 2. Sam Thompson Bridge: East Belfast man, trade unionist, playwright and worked in the Shipyards. Wrote the play ‘Over the Bridge’. 3. The Island Bridge: The Bridge links Victoria Park to Airport Road and subsequently to Queen’s Island. The central part of the Park is also an island. 4. Victoria (Vicky) Bridge: Reflects the park’s name and location, which is often referred to locally as ‘Vicky’ Park. 5. Avalon Bridge: The word Avalon means ‘mythical island’. This word also has links to east Belfast’s Van Morrison who has an album ‘Avalon Sunset’. This album includes the track ‘Orangefield’ which is also on the CCG route. So they have decided to start a group themselves for men and women who have lost a spouse/partner – Widowed Friends has been born. ‘Speaking on a personal level, we are fortunate that we’re still working and our days are occupied,’ says co founder Lorna. ‘However we sometimes find evenings and weekends can be quite long. We’re hoping that we might be able to link in with others who might like to meet up for coffee and a chat, or to go out for a meal, or even to enjoy a day out together. Slimming World are slimming down their fee for young people with a reduced price for 16 and 17 year old members of £3.95 a week instead of the standard fee of £4.95. Slimming World already offers free membership to 11 to 15 year olds who go to a group with a parent or guardian and have the support of their GP or school nurse. Sally Moore, who runs the Ballyhackamore and Holywood Slimming World groups every week, welcomes the new discounted price. She says: ‘Obesity doesn’t just affect adults, it’s a problem for people of all ages, and we’re seeing more young people struggling with their weight. Some are so severely overweight that it’s affecting their health, with young people being diagnosed with conditions like diabetes and high blood pressure that used to affect people much later in life. It has a huge impact on their self-esteem and confidence. It’s very important they get the right support to lose weight so they enjoy good health and feel great as they become adults. At Slimming World we treat everyone like an adult, we don’t tell people what to do or what to eat, but instead we equip members with the skills to make healthy choices that fit with their lives and help them to lose weight and keep it off.’ Ballyhackamore group meets every Tuesday at 5.30pm & 7.30pm in Bloomfield Collegiate School. Avoniel Leisure Centre celebrated the reopening of its swimming pool after 10 months. During this time Belfast City Coun-cil carried out extra refurbishment work to provide improved facilities. Councillor Gareth McKee, Chairman of the Parks and Leisure Committee said; ‘The pool was 35 years old and had to be taken out of opera-tion following a serious leak. While it was closed we took the opportunity to completely modernise the pool and changing areas, so that it is bright, welcoming and up to date.’

On Thursday 8th August East Belfast Com-munity Development Agency (EBCDA) hosted the launch of their “Message of Hope” suicide awareness booklet at East Belfast Network Centre on Templemore Avenue. The booklet contains information on how to support someone who you are concerned about and lists several organisations who can help. Funding for the development of the booklet and its distribution was provided by BT, whose employees donated via their Payroll Giving Scheme. Lynda Bryans was a special guest at the launch and spoke pas-sionately about the need for more openness and less stigma around the issues of mental health and suicide. Also present were the organisations who offer services to people at risk of suicide across the city. The booklet has already been delivered to 20,000 homes in inner East Belfast, Tullycarnett, Ballybeen, Knocknagoney, Clarawood, Ardcarn and Bloomfield. EBCDA are hopeful that they will be able to source funding to print and distribute another 20,000 booklets to the rest of East Belfast later in the year. Local girl Lisa McBriar, a Volunteer for the Cedar Foundation is hosting a Charity Man Auction in aid of this great charity in the Park Avenue Hotel on Saturday 12th October at 7pm. But Lisa is not auc-tioning off dates, she has approached some of the best local male business talent who are auctioning off their time and expertise in areas such as personal training, hairdressing, Swedish massage, teeth whiten-ing, makeup lessons and much more. All proceeds from the auction will go straight to The Cedar Foun-dation which is a local charity for children and adults living with disabilities and brain injury in Northern Ireland. This is a cause close to Lisa’s heart as her son who suffers from cerebral palsy has availed of Cedar’s services. Tickets are £25 and for ladies only who will be treated to a buffet meal before the auc-tion and the party will continue with entertainment by the Diva Dolls. The evening will be compered by Keith Law, Producer/Prankster from Just for Laughs and there will also be a professional auctioneer and prizes will be up for grabs on the night including an overnight stay for two in the Park Avenue Hotel. North Down Craft Collective is the idea of 3 crafters who want to showcase local crafts in a central location in North Down on a regular basis. Over the past two years, Jenny (Cameo by Jennifer Brennan), Debbie McCann (Wee Yarn Designs) and William Clendinning (The Local) have been taking their craft to local fayres and are constantly being asked ‘where are you based? What fayre will you be at next?” They decided to look for a base and invite other local craftspeople to get involved... and this was the beginning of North Down Craft Collective! The group will meet on the second Saturday of each month at Holywood Old School on Church Road, Holywood from 10am-4pm. Along with Jenny, Debbie and William there will be another 6 ‘resident’ crafters. Each month 5 ‘guest’ crafters will attend and there will also be a vintage tea room serving tea, coffee and delicious homemade desserts. ‘I have

been involved in organising craft fayres for a while now and I am always amazed at the array of talented craftspeople that we have here in Northern Ireland.’ says Jenny, a Textile Design graduate from the University of Ulster. ‘We hope that by showcasing some of this talent, people will have the opportunity to appreciate the new and traditional crafts that have re-emerged in the last few years and that are here on their doorstep!’ The collective is also planning to support local charities by inviting representatives to come along each month and set up a stall. My name is Rosie and I love charity shops. There are a few reasons for this particular obsession. Firstly, you never know what preloved treasure you’ll find when you walk in the door. Secondly, charity shops are an ethical, thrifty way to indulge a shopaholic whim, and you’re supporting a local cause while you shop.

East Belfast is a buoyant charity shop destination. From the Cregagh Road to Ballyhackamore and everywhere in between, there’s a great mix of clothing, home-ware, up-cycled furniture and books on offer. Charities such as Marie Curie, NI Hospice, Cancer Research and Re:Store have taken bright, airy retail units throughout the East and filled them with preloved and unwanted items, safe in the knowledge that one person’s trash is indeed another’s treasure.

I’m a vintage girl at heart - I love nothing more than finding clothes and jewellery from a bygone era and giving them a whole new lease of life. Charity shops are great locations to fulfill this passion. But they are also a cost-effective way to boost your work wardrobe; to find unique items to furnish your home; to entertain children with new jigsaws and board-games; and to stumble upon a little nostalgia from your childhood.

Over the next few months, I hope to motivate you to visit your local East Belfast charity shops with lots of pictures of great finds and ideas for your home and wardrobe. Not everyone has the same patience for a rummage that I do, but hopefully you’ll cross the threshold of a charity shop for the first time and find something you love. And so a passion for preloved will begin. Trust me, I know!

Based in Castlereagh, it will provide training for people of all ages and abilities in a range of physical arts disciplines including

Rhythmic Gymnastics, Aerial Dance/Movement, Acrobatic Tumbling, Ballet, Jazz and Urban/Street Dance and Pilates.

Demands on professional artists today are to be creators as well as performers

- vision and artistic discovery is fundamental in training opportunities. For this reason APPA -NI instruction and motivation is based on a multidisciplinary and integrated approach to the physical arts” Says APPA-NI co-founder, Sarah Durrant. With a background in professional performing arts education that spans over thirty years, Sarah has a Masters degree in Performing Arts Professional Education, a Certificate in Education as well as Royal Academy of Dance and Imperial Society of Teachers of Dance qualifications. Sarah has run her own business in dance tuition and

has also held the positions of teacher, Head of Dance and Deputy Principal in a leading (government funded) vocational training establishment. Throughout much of her career Sarah has also worked as an examiner for the Royal Academy of Dance, while more recently she was delighted to accept the honour of becoming a Patron for The London Ballet Company. Originally from Bangor, APPA-NI co-founder Elaine Bailie is a Great Britain National Rhythmic Gymnastics judge and is a British Gymnastics Coach for Rhythmic Gymnastics. She also sits on the British Gymnastics National Coach Education Panel, and is currently on the Gymnastics Northern Ireland Management Committee with responsibility for Finance. Having also managed and directed the Phoenix Rhythmic Gymnastics Club in Bangor for 10 years, Elaine felt there was a real opportunity to offer a more diverse style of training in Northern Ireland.

Elaine says, “Physical Arts have the ability to reach people from varied backgrounds, abilities, ages and cultures in ways few other disciplines can. They essentially enhance opportunities and have the power to influence lives for the better. It is our intention that APPA – NI will have a positive influence on our students whilst broadening the diversity of their skills.” Motivated by the APPA – NI vision, specialist facilities constructed at Prince Regent Road in Castlereagh have been carefully designed to allow students and teachers to learn in the most professional, safe and comfortable environment where creativity will thrive. The Dance Studio contains a harlequin sprung dance floor with high ceiling, mirrors, barres, a music centre and piano. The centre also houses a Continental high performance rhythmic floor and an aerial training space consisting of six suspended training units which will include three silks, one rope, a four people trapeze and one hoop or lyra. Approximately 31 primary and secondary schools fall within a two mile radius of the Academy. “As well as offering first class facilities, we wanted to position the Academy close to as many schools as possible, as training and educating children and young people are at the very core of what we want to achieve” says Elaine.

As personal coach for the 2009/10 Junior Rhythmic Disability champion and the 2011/13 Senior Level 2 Rhythmic Disability Champion, Elaine has been involved in coaching the Great Britain National Disability Squad. Therefore improving access to physical arts for the disabled is something she is very passionate about and an area in which APPA-NI hopes to take the lead. Furthermore, once a registered charity, the Academy aims to initiate outreach programmes with youth and community groups in areas that otherwise have limited opportunities in physical arts training. APPA-NI’s activity and learning structures are carefully designed appropriate to the age, maturity and proficiency of each student, allowing for progression as and when each individual is ready. Its timetable structure means students welcome to enrol for classes in one discipline or in a number of disciplines simultaneously.

Dance specialist physiotherapy APPA-NI will also offer full-time, on-site physiotherapy services. Katy Chambers is a dance specialist physiotherapist, advanced level Pilates instructor and Royal Academy of Dance trained teacher. Having undertaken a great deal of training in the field of therapy and injury management for dancers since graduating from the University of Ulster in 2009, Katy is now completing a Masters Degree in Dance Science at Trinity Laban, London and is teaching at The Urdang Academy, London. Katy has been teaching classical ballet, modern jazz and Pilates since 2005 and this year will be teaching the body conditioning module for full time vocational students at the Urdang Academy in London. Alongside this, her private physiotherapy practice will now extend to working with Move Physi-otherapy in West London, offering therapy treatments, Pilates and on call services to Rambert Dance Company. Katy will be returning to work at APPA-NI on completion of her Masters Degree in July 2014.

JosephCampbell

Joseph Campbell was born on the Castlereagh road in July 1879. His mother came from Donegal and she encouraged his literary interests particularly in all things Irish. By & ©Emma Dunn. - EBHS.

As a young man Joseph went out into the fields of Antrim to collect and record some of the traditional Irish songs which were being sung and to give some of them English words (this was similar to what John Lomax would later do to record the songs of the deep south of America.) His most well known song being My Lagan Love which mixes the traditional music of Donegal with words about the river run-ning through his home city and the barges which travelled it:

Her father sails a running-barge‘Twixt Leamh-beag and The Druim;And on the lonely river-margeShe clears his hearth for him.When she was only fairy-highHer gentle mother died;But dew-Love keeps her memoryGreen on the Lagan side.

His father was a building contractor and a young Joseph worked in his father’s building firm before moving to London to become an English teacher in 1906. Here he became secretary of the Irish literary society and in 1911 he moved to Dublin where he kept company with another fa-mous poet WB Yeats. He later took part in the Easter rising as an intelligence officer and he was interned as a republican in 1922. During the eighteen months he was interned he recaptured his love of Irish literature and poetry by translating a col-lection of poems by Padraig Pearce. After his release from internment he separated from his wife and moved to America where

he settled in New York and founded the New York School of Irish Studies. He lec-tured in Irish literature and Irish culture at Fordham University from 1927 until 1938 and it was at Fordham he established the Irish Foundation, the first ever Irish studies department at any US college. In 1939 he returned to Ireland where he settled in Wicklow and apart from some broadcasts for Radio Eireann he lived alone in an isolated cottage at Glencree still writing his poetry. In the time when Joseph Campbell would have been growing up Castlereagh would have been no more than a village with the Loop Mill at its centre and the area around the Castlereagh road would have been fields and farming land. I wonder if it was this he thought of when he wrote the poem At Harvest which was published in 1916. In it he talks of:

The swaying corn - haulms In the heavy places of the fieldCry to be gathered.

Joseph Campbell died at his farmstead in Wicklow in 1944 and has largely been forgotten. There is a blue plaque for him on the site of the QE1 on the Castlereagh road.

‘I started cooking in 2001,‘ says Michael. ‘Im happy when I cook!‘ Michael takes immense pride in each and very dish. Nothing comes from a jar or tin here, everything is made fresh from scratch each and every day. ‘All our meat and chicken is all sourced from local suppliers and is incredibly fresh. This is very important to us. I only accept the freshest meat, if it’s not fresh enough, I simply wont accept it. I may make less profit, but I just wont buy cheap ingredient’s, only the best. Even down to the chips. Most restaurants use frozen oven chips, but we cut our own chips and make them all fresh. The longer you wait, the more fresh the food is. If you order food somewhere and they say its going to be ready in 5 minutes, its not going to be fresh. We might take slightly longer, but it’s worth the wait! If you want, for example, chicken and black bean sauce, some restaurants will use some tinned items. But we chop all our chilli, garlic and ingredients fresh every day. We have our own home made recipes so they’re all unique to Lotus Blossom.’ The most popular dish is Peking sauce with some people coming from as far away as Ban-gor and Holywood to get it. Michael also runs a number of fantastic deals from the menu too. If you’re coming along to sit in, you can get two courses for £9.50 or three for £11 and Michael will also provide a fresh fruit salad dessert on the house. Plus you can bring your own wine so it’s excellent value all round.

There’s also the Special Family Bargain Box for take away/deliveries which includes Salted Chilli Chicken, Chicken or Beef curry, chips, Chicken Fried rice or Chicken Chow Mein plus a can of drink - all for £8.50. The reputation of the restaurant is spreading and some of Michael’s peers in the industry are also huge fans, as he explains. ‘Our plum sauce is 100% fresh, we don’t use tinned concentrate and one of the top chefs from a restaurant in town comes here every week on his way home to get our food, he’s a huge fan of the plum sauce. There’s also a big family food busi-ness that are making a sweet and sour sauce product and they came to me to ask to use my recipe. Their executive chef came to see me after his son recommended it. In here we are small, 16 seats, but our food is everything to us. If you want a treat in terms of quality food, why not try something local? You come here and you’re guaranteed good food.’

‘I have often joked that I bring the Vogue,’ says Rachael, ‘whilst it is my stylish mother and antique dealing grandmother who bring the Vintage.’ At Vintage in Vogue, Rachael focusses on luxury interior design pieces, beautifully restored furniture and world famous paints and fabrics. She has always had a passion for all things “home”, beginning at the early age of two when her mum Kathryn decorated her first wooden Wendy house with fully functioning festoon curtains, a Persian carpet and Irish art! ‘I grew up in a home that was constantly being rearranged. My mother used to go to car boot sales and various auctions so our house was full of unique and one off pieces of furniture and artefacts. I loved to look at a room and then rework it in order to make the best use of the space.’ After graduating from university with a BSc Hons, Rachael moved in to her own home. She found that the items available on the high street were uninspiring and begin hand painting and refurbishing some of the vintage pieces that she had grown up with. ‘I realised that there was a niche in the market and began to source old neglected furniture and transform them in to stunning and unique pieces. I converted the garage at my family home into a studio and chose soft French and Swedish inspired colours to paint with, and then depending on the piece of furniture I’m working with, would then distress the finish to create an aged look before completing the pieces with a wax.’

Vintage in Vogue was created by Rachael Ross, a university graduate who has turned her creative ability and flair in to a thriving business.

Rachael offers accessories alongside sourced from suppliers in Sweden, France and Indonesia and offers a selection of vintage china, French and Scandinavian influenced accessories, mirrors and lighting to suit both classic and contemporary styles. In 2012 she had the opportunity to take commercial space on Randalstown’s Main Street. ‘This was the first time I had a shop window to display my work and I now offer an interior design service, working with clients to help them bring out the very best in their homes.’ In 2013 Rachael added the full range of Annie Sloan Chalk Paints® and “The how to paint” workshops which are proving to be a great success. ‘Chalk Paint® is a unique decorative paint developed by Annie Sloan and made specifically for painting furniture, floors, and for giving walls a matt, velvety finish. Pinchos Morunos with Mojo PicónMOORISH SKEWERS

Serves 4Preparation time:10 minutes, plus marinatingCooking time: 5 minutes

500g pork fillet (or chicken, beef , lamb*)1 teaspoon hot or sweet pimentón1 teaspoon ground cumin1 teaspoon dried oregano1 tablespoon freshthyme leaves1 garlic clove,finely choppeddrizzle of olive oilsalt and pepperFor the mojo picón1 slice white bread4–5 tablespoons Spanisholive oil, plus extra2 garlic cloves5 dried cayenne chillies1 teaspoon cumin seeds1 teaspoon sweet pimentón2 teaspoons sherry vinegarSalt1 Trim the pork fillet of any excess fat and cut into 2cm cubes. Place the meat in a large mixing bowl and add the pimentón, cumin, black pepper, oregano, thyme and garlic. Mix well, drizzle over the olive oil, leave to marinate for at least an hour, but

anything up to 2 days is fine. 2 Meanwhile, make the mojo picón. Start by frying the bread in a little olive oil, drain on kitchen paper and tear into pieces. Using a pestle and mortar, mash together the garlic, cayenne chillies, cumin seeds, pimentón, fried bread, vinegar and salt until you have a smooth paste. You could also use a food processor forthis bit. Start adding the olive oil in a thin drizzle while you are still mixing.3 When you are ready to cook the pinchos, thread the meat on to skewers (if you are using wooden skewers it’s a good idea to soak them in water for 30 minutes to stop them burning). Pinchos morunos can be cooked over charcoal (the best way, in my opinion), under a hot grillor in a griddle pan over a very high heat. Cook for about 2 minutes on each side – you want them to be cooked through but still juicy on

the inside. Season with salt and pepper and serve with the mojo picón. *For chicken, usethe thigh; beef use the skirtor flank; lamb use the leg.

Serves 2Preparation time: 20 minutesCooking time: 30 minutes

200 g fideos (thin, shortangel hair pasta) brokeninto 2-cm lengths1 fresh squid (about 350 g),cleaned and chopped into 1-cm pieces10 peeled prawns,2 garlic cloves finely chopped1/4 onion nfinely chopped1 tomato, finely choppedpinch of saffron1/2 teaspoon sweet pi-mentón1/2 teaspoon fish stockpowder or cube1 teaspoon salt

1 Heat about one-third of the olive oil in a wide frying pan over a medium heat. Add thedried pasta and fry for about 5 minutes until it turns golden. Remove from pan, set aside.2 Add the rest of the olive oil to the pan, increase the heat and add the chopped squid and salt. Squid can be very temperamental as it releases a lot of water when you start cooking it so it tends to ex-plode in the pan. It’s fair to say this bit is a tiny bit dangerous. I recommend you hold a pan lid over the pan, so that the steam can still escape, and stand back. Give it a quick stir, half cover with the lid and leave to cook for a couplemore minutes. Don’t scrape the bottom of the pan, the sticky layer on the bottom isessential to make a rich stock.3 When the squid has browned, add the peeledprawns, garlic and onion and cook for another 5 minutes until everything is dark golden (this will happen fairly quickly because of the highheat). Add the chopped toma-to, saffron and pimentón and stir constantly to dissolve thesticky bits on the bottom. N o longer than 2 minutes.4 Add the fish stock powder or cube and 1 litre of water. Bring to the boil and simmer for around 10 minutes before adding the fried pasta.You need just enough water left in the pan for the pasta to cook and absorb all the remaining liquid. A good thin fideo pasta should cook in about 3 minutes. Stir in the pasta, cover the pan and cook until the liquid has been absorbed.5 Remove from heat, leave for 1 more minute, uncovered, to create a toasted layer of pasta on the bottom of the pan – it will taste like heaven.

1 Bring the water to the boil. Meanwhile place the flour and salt in a large pan and place over a very low heat. Stir lightly for 3–4 minutes so that the flour dries out and becomes fluffy.2 As soon as the water has boiled, pour it over the flour and mix it with a wooden

spoon for about 1 minute un-til a dough starts to form.Don’t over-mix and don’t wor-ry if there are some lumps, you can always finish it by hand once it has cooled down slightly. Halfway through mix-ing add the olive oil.3 When the dough is still warm, knead for 1 minute. Place in a piping bag (not plastic) with a 8-point star-shaped nozzle and spread outa sheet of baking parchment. Start squeezing the batter on to the parchment. At this point you could freeze the churros to cook later straight from the freezer). 4 Heat the vegetable oil in a large deep pan – ideally you want it to be 230–240°C to get that delicious crispy outside and soft interior. To testwhether the oil is hot enough, drop a small piece of the dough into the oil – if it im-mediately floats to the surface and starts fizzing awaythen the oil is hot enough. If it sinks, wait a little longer.5 Once the oil is hot enough carefully slide your churros, a few at a time, into the pan. Cook them for 40 seconds on one side and 30 seconds on the other. Remove and drain on kitchen paper and repeat. They should be very crispy on the outside and moist on the inside. Dust liberally with sugar mixed with a little ground cinnamon (optional) while they are still warm. For the chocolate, bring the milk to the boil in a pot and just before boiling point add the chocolate powder while whisking. Stir constantly for 10 minutes so the chocolate doesn’t burn. Stir in the dark chocolate at the end to give nice body and intensify the flavour. Serve the chocolate in a cup and dip your churros in it.

500g pork fillet (or chicken, beef , lamb*)1 teaspoon hot or sweet pimentón1 teaspoon ground cumin1 teaspoon dried oregano1 tablespoon freshthyme leaves1 garlic clove,finely choppeddrizzle of olive oilsalt and pepperFor the mojo picón1 slice white bread4–5 tablespoons Spanisholive oil, plus extra2 garlic cloves5 dried cayenne chillies1 teaspoon cumin seeds1 teaspoon sweet pimentón2 teaspoons sherry vinegarSalt1 Trim the pork fillet of any excess fat and cut into 2cm cubes. Place the meat in a large mixing bowl and add the pimentón, cumin, black pepper, oregano, thyme and garlic. Mix well, drizzle over the olive oil, leave to marinate for at least an hour, but

anything up to 2 days is fine. 2 Meanwhile, make the mojo picón. Start by frying the bread in a little olive oil, drain on kitchen paper and tear into pieces. Using a pestle and mortar, mash together the garlic, cayenne chillies, cumin seeds, pimentón, fried bread, vinegar and salt until you have a smooth paste. You could also use a food processor forthis bit. Start adding the olive oil in a thin drizzle while you are still mixing.3 When you are ready to cook the pinchos, thread the meat on to skewers (if you are using wooden skewers it’s a good idea to soak them in water for 30 minutes to stop them burning). Pinchos morunos can be cooked over charcoal (the best way, in my opinion), under a hot grillor in a griddle pan over a very high heat. Cook for about 2 minutes on each side – you want them to be cooked through but still juicy on

the inside. Season with salt and pepper and serve with the mojo picón. *For chicken, usethe thigh; beef use the skirtor flank; lamb use the leg.

200 g fideos (thin, shortangel hair pasta) brokeninto 2-cm lengths1 fresh squid (about 350 g),cleaned and chopped into 1-cm pieces10 peeled prawns,2 garlic cloves finely chopped1/4 onion nfinely chopped1 tomato, finely choppedpinch of saffron1/2 teaspoon sweet pi-mentón1/2 teaspoon fish stockpowder or cube1 teaspoon salt

1 Heat about one-third of the olive oil in a wide frying pan over a medium heat. Add thedried pasta and fry for about 5 minutes until it turns golden. Remove from pan, set aside.2 Add the rest of the olive oil to the pan, increase the heat and add the chopped squid and salt. Squid can be very temperamental as it releases a lot of water when you start cooking it so it tends to ex-plode in the pan. It’s fair to say this bit is a tiny bit dangerous. I recommend you hold a pan lid over the pan, so that the steam can still escape, and stand back. Give it a quick stir, half cover with the lid and leave to cook for a couplemore minutes. Don’t scrape the bottom of the pan, the sticky layer on the bottom isessential to make a rich stock.3 When the squid has browned, add the peeledprawns, garlic and onion and cook for another 5 minutes until everything is dark golden (this will happen fairly quickly because of the highheat). Add the chopped toma-to, saffron and pimentón and stir constantly to dissolve thesticky bits on the bottom. N o longer than 2 minutes.4 Add the fish stock powder or cube and 1 litre of water. Bring to the boil and simmer for around 10 minutes before adding the fried pasta.You need just enough water left in the pan for the pasta to cook and absorb all the remaining liquid. A good thin fideo pasta should cook in about 3 minutes. Stir in the pasta, cover the pan and cook until the liquid has been absorbed.5 Remove from heat, leave for 1 more minute, uncovered, to create a toasted layer of pasta on the bottom of the pan – it will taste like heaven.

400 ml water400 g strong white flourpinch of salt1 tablespoon olive oil750 ml vegetable oilfor deep-fryingcaster sugar and groundcinnamon (optional)for dustingFor the chocolate1 small bag of Spanishchocolate powder forhot dipping chocolate1 pint milk50 g dark chocolate,roughly chopped

1 Bring the water to the boil. Meanwhile place the flour and salt in a large pan and place over a very low heat. Stir lightly for 3–4 minutes so that the flour dries out and becomes fluffy.2 As soon as the water has boiled, pour it over the flour and mix it with a wooden

spoon for about 1 minute un-til a dough starts to form.Don’t over-mix and don’t wor-ry if there are some lumps, you can always finish it by hand once it has cooled down slightly. Halfway through mix-ing add the olive oil.3 When the dough is still warm, knead for 1 minute. Place in a piping bag (not plastic) with a 8-point star-shaped nozzle and spread outa sheet of baking parchment. Start squeezing the batter on to the parchment. At this point you could freeze the churros to cook later straight from the freezer). 4 Heat the vegetable oil in a large deep pan – ideally you want it to be 230–240°C to get that delicious crispy outside and soft interior. To testwhether the oil is hot enough, drop a small piece of the dough into the oil – if it im-mediately floats to the surface and starts fizzing awaythen the oil is hot enough. If it sinks, wait a little longer.5 Once the oil is hot enough carefully slide your churros, a few at a time, into the pan. Cook them for 40 seconds on one side and 30 seconds on the other. Remove and drain on kitchen paper and repeat. They should be very crispy on the outside and moist on the inside. Dust liberally with sugar mixed with a little ground cinnamon (optional) while they are still warm. For the chocolate, bring the milk to the boil in a pot and just before boiling point add the chocolate powder while whisking. Stir constantly for 10 minutes so the chocolate doesn’t burn. Stir in the dark chocolate at the end to give nice body and intensify the flavour. Serve the chocolate in a cup and dip your churros in it.
