Oh, my friends, you have seen it, smelt it, tasted it and worn it. Yes, I am talking about Saint Patrick’s Day, the day of everything Irish. Celebrated on the 17th of March each year to honor this patron saint and national apostle of Ireland, we embrace this national holiday with much excitement and planning. Whether you are of Irish decent or not, Saint Patrick’s Day is enjoyed by thousands, if not millions, of people each year partaking in celebrations, parades and parties. But there is something larger in scale to think about.
Saint Patrick brought Christianity to Ireland and was described by others as a humble servant. In his teachings, he used the shamrock to illustrate the meaning of the Holy Trinity to those who would listen and abolished any pagan rituals from the land. More importantly, he spoke of spiritual renewal, a rebirth of Christian doctrine, in which a community of missionaries worldwide offered prayers and worship.
So as we plan our celebrations, dress in green, eat corned beef and cabbage, drink Irish ale and toast to another prosperous year, please recite a prayer for the worldwide missionaries and servants as they share the gospel. And find a humble rebirth of our own spirituality. Be kind to one another, bring joy to those you meet and show love all the days of your life!
In closing, I offer an Irish Proverb…

Jeannie brings much joy and laughter to her job at Majestic Rim and feels that everyone living here is family to her. “I love my job. My passion is to be with my extended family every day,” she proclaimed. When she is not at Majestic Rim she spends quality time with her husband and grandkids. Whether it’s hunting, hiking, camping, rock collecting or driving quads on the trails on the Rim, Jeannie shares her exuberant joy and overflowing love to others around her. We are blessed to have Jeannie at MR!
How exciting it was for all of us to see Gretchen Schlossar take off on the motorcycle for an afternoon ride. When her daughter suggested they go for a ride and enjoy lunch out, Gretchen was up for the days outing. She said, “If I can get on, then I’m going.”
So when eight trike-motorcycles arrived at the front door we all took notice. What a sight to see and a perfect day for a ride as well. Gretchen climbed onto the seat, and said, “Let’s ride!”

Irish Recipe Two Cheese and Rosemary Mashed
Potato Casserole
Prep: 20 Min~Total Time: 1 Hr 15 Min~12 Servings
Ingredients: 10 potatoes, peeled & cut into 1” pieces ¾ cup milk ½ cup sour cream ½ tbs. butter, softened ½ tsp. dried rosemary ½ tsp. salt 1 cup shredded Havarti cheese ½ cup shredded Sharp Cheddar cheese 1 tbs. chopped fresh parsley

Directions: Heat oven to 350 F. Grease 1½ quart
casserole. Boil potatoes in large pot for 10 minutes then reduce heat. Simmer for 10 minutes until tender; drain until dry.
In large bowl, mash potatoes. Add milk in small amounts until fluffy.
Beat in the next four ingredients.
Fold in Havarti cheese.
Spoon potato mixture into casserole.
Sprinkle with Sharp Cheddar cheese.
Bake uncovered for 30-35 minutes.
Sprinkle with parsley before serving.
